Malgr\u00e9 les analyses tr\u00e8s justes des m\u00e9decins et nutritionnistes qui conseillent les d\u00e9cideurs politiques, les habitudes alimentaires ont subi une transformation spectaculaire et d\u00e9l\u00e9t\u00e8re depuis le d\u00e9but des ann\u00e9es 1980. \u00c0 l\u2019\u00e9poque, je commen\u00e7ais tout juste \u00e0 \u00e9valuer l\u2019impact des diff\u00e9rents aliments sur l\u2019\u00e9quilibre \u00e9nerg\u00e9tique et sur le contr\u00f4le de l\u2019app\u00e9tit quand le gouvernement britannique m\u2019a sollicit\u00e9 pour am\u00e9liorer l\u2019efficacit\u00e9 et la gestion \u00e9conomique du secteur agro-alimentaire. J\u2019ai rapidement d\u00e9couvert que ce secteur avan\u00e7ait \u00e0 t\u00e2tons, utilisant de simples panels de go\u00fbteurs pour rendre les produits plus attractifs, tout en m\u00e9connaissant les donn\u00e9es scientifiques qui permettent d\u2019augmenter les ventes.<\/p>\n<p>Aujourd\u2019hui, gr\u00e2ce aux analyses brillantes des m\u00e9canismes psychologiques qui orientent le choix des aliments, le secteur agro-alimentaire a \u00e9labor\u00e9 un syst\u00e8me pour la vente de produits transform\u00e9s et de boissons \u00e0 toute heure du jour et de la nuit, dans un contexte o\u00f9 les consommateurs mangent et boivent en tous lieux, quel que soit le moment de la journ\u00e9e. Plus sophistiqu\u00e9, le marketing int\u00e8gre d\u00e9sormais des techniques biologiques fondamentales qui consistent \u00e0 ajouter des saveurs, qui stimulent de mani\u00e8re sp\u00e9cifique les centres du plaisir du cerveau, court-circuitant ainsi les choix alimentaires rationnels et r\u00e9fl\u00e9chis. C\u2019est pourquoi, dans son analyse pr\u00e9visionnelle concernant le probl\u00e8me de l\u2019ob\u00e9sit\u00e9, le Conseiller scientifique en chef du Royaume-Uni explique que la prise de poids est une r\u00e9ponse biologique normale face \u00e0 notre environnement alimentaire actuel.<\/p>\n<p>Dans ces conditions, il n\u2019est pas \u00e9tonnant que les derni\u00e8res analyses de la charge mondiale de la morbidit\u00e9 en 2015 confirment les donn\u00e9es des ann\u00e9es pr\u00e9c\u00e9dentes : l\u2019alimentation d\u00e9s\u00e9quilibr\u00e9e est la plus grande cause de handicap dans le monde.
