Les l\u00e9gumes crucif\u00e8res, dont font partie les brocolis, choux-fleurs, choux, le chou chinois, le chou fris\u00e9, le cresson, le navet et la roquette, se d\u00e9marquent particuli\u00e8rement.<\/p>\n<p>Dans ce nouveau num\u00e9ro, trois articles r\u00e9capitulent des \u00e9tudes d\u2019observation \u00e9pid\u00e9miologiques d\u00e9montrant une relation inversement significative entre la consommation de crucif\u00e8res, la mortalit\u00e9 toutes causes (Mori et coll.), le risque de cancer du poumon (Takata et coll.) et l\u2019ath\u00e9roscl\u00e9rose (Blekkenhorst et coll.).<\/p>\n<p>Il est int\u00e9ressant de noter que ces observations ont \u00e9t\u00e9 r\u00e9alis\u00e9es dans diff\u00e9rentes r\u00e9gions dont les populations ne consomment pas les m\u00eames vari\u00e9t\u00e9s de crucif\u00e8res (par exemple, en Asie, les choux chinois pr\u00e9dominent, tandis qu\u2019aux \u00c9tats-Unis, en Australie et en Europe, le brocoli et le chou-fleur sont plus pris\u00e9s). Cette diff\u00e9rence sugg\u00e8re que, malgr\u00e9 les structures tr\u00e8s diverses des glucosinolates (compos\u00e9s soufr\u00e9s propres aux crucif\u00e8res), tous partagent le m\u00eame m\u00e9canisme de pr\u00e9vention des maladies.
