Cette r\u00e9action se d\u00e9roule in vitro, durant les processus technologiques appliqu\u00e9s aux aliments, mais \u00e9galement in vivo, au sein de l&rsquo;organisme vivant, \u00e0 la temp\u00e9rature corporelle et \u00e0 des pH physiologiques. Les cons\u00e9quences multiples de ces m\u00e9canismes chimiques, tant sur les plans nutritionnel et biochimique, que physiologique et pathologique, sont discut\u00e9es.
