Les nutritionnistes recommandent de manger au moins cinq portions de fruits et l\u00e9gumes par jour afin de se prot\u00e9ger au maximum contre l&rsquo;apparition de diverses pathologies chroniques (maladies cardiovasculaires, cancer\u2026) dans lesquelles un stress oxydant est potentiellement impliqu\u00e9. Il convient toutefois de mieux d\u00e9finir \u00e0 quoi correspondent ces cinq portions de fruits et l\u00e9gumes en termes de quantit\u00e9, de choix, de couleur et de variabilit\u00e9 de ces aliments. Par ailleurs, peu d&rsquo;informations existent sur l&rsquo;impact r\u00e9el de ce type d&rsquo;alimentation sur le statut de stress oxydant d&rsquo;un individu, que ce soit au niveau des taux plasmatiques en antioxydants que des marqueurs de dommages oxydatifs. Le but du pr\u00e9sent papier est de faire une synth\u00e8se des \u00e9tudes les plus significatives sur le sujet.<br \/>\nAbstract<br \/>\nFruits and vegetables contain high quantity of essential vitamins, antioxidants (vitamin C, carotenoids, flavonoids), minerals, fibers and water. Health professionals recommend to eat at least 5 servings of fruits and vegetables per day since people who eat more generous amounts as part of a healthful diet are likely to have reduced risk of chronic diseases in which an increased oxidative stress is potentially implicated (cardiovascular diseases, cancers\u2026). However, more precisions should be given in order to clarify what does it really mean 5 servings with respect to the quantity, the choice, the colour and the variability of these aliments. Moreover, only a few data are available about the impact of such a diet on the oxidative stress status of an individual (plasma concentrations in antioxidants and markers of oxidative stress).
