Elle <strong>fut d\u00e9couverte au XVe si\u00e8cle par Christophe Colomb<\/strong> et arriva en France un si\u00e8cle plus tard (<a href=\"https:\/\/www.lesfruitsetlegumesfrais.com\/fruits-legumes\/legumes-fruits\/tomate\" target=\"_blank\" rel=\"noopener\">Interfel, 2020<\/a>).<\/li>\n<li>Contrairement aux id\u00e9es re\u00e7ues, la tomate est un <strong>fruit<\/strong>, m\u00eame si elle <strong>se consomme comme un l\u00e9gume<\/strong>. Elle est disponible toute l\u2019ann\u00e9e, mais la pleine saison se d\u00e9roule de mai \u00e0 septembre (<a href=\"https:\/\/www.lesfruitsetlegumesfrais.com\/fruits-legumes\/legumes-fruits\/tomate\" target=\"_blank\" rel=\"noopener\">Interfel, 2020<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>La tomate grappe est de taille moyenne, tr\u00e8s pulpeuse et tr\u00e8s parfum\u00e9e. Sa chair ferme lui conf\u00e8re la possibilit\u00e9 d\u2019\u00eatre consomm\u00e9e aussi bien en soupe qu\u2019en salade ou encore dans un plat cuisin\u00e9 (<a href=\"https:\/\/www.tomates-de-france.com\/les-tomates\/la-grande-famille-des-tomates\/\" target=\"_blank\" rel=\"noopener\">Tomates et concombres de nos r\u00e9gions, 2020<\/a>).<\/li>\n<li>Lors de son d\u00e9veloppement, les <strong>pigments<\/strong> responsables de sa couleur sont majoritairement les <strong>chlorophylles a et b<\/strong>. \u00c0 <strong>maturit\u00e9<\/strong>, les niveaux de chlorophylles diminuent fortement tandis que la <strong>proportion relative de violaxanthine, lut\u00e9ine, \u03b2-carot\u00e8ne, lycop\u00e8ne, anth\u00e9raxanthine et z\u00e9axanthine est jusqu\u2019\u00e0 9 fois plus \u00e9lev\u00e9e<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17071647\/\" target=\"_blank\" rel=\"noopener\">Carrari, 2006a<\/a>).<\/li>\n<li>Les principaux contributeurs \u00e0 la <strong>saveur<\/strong> de tomate m\u00fbre sont des <strong>compos\u00e9s volatils de la famille des alcools et des terp\u00e8nes<\/strong> dont : le cis-3-hexanal, le cis-3-hexanol, l\u2019hexanal, le 3-m\u00e9thylbutanal, le sulcatone, le 1-pentan-3-one, le trans-2-hexanal, le salicylate de m\u00e9thyle, le 2-isobutylthiazole et le \u03b2-ionone (<a href=\"https:\/\/academic.oup.com\/jxb\/article\/57\/9\/1883\/620099\" target=\"_blank\" rel=\"noopener\">Carrari, 2006b<\/a>).<\/li>\n<li>Cependant leur abondance peut varier de plusieurs ordres de grandeur en fonction de l\u2019anciennet\u00e9 de la vari\u00e9t\u00e9 de tomate (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\" target=\"_blank\" rel=\"noopener\">Tieman, 2017<\/a>). En effet il a \u00e9t\u00e9 mis en \u00e9vidence, chez les <strong>vari\u00e9t\u00e9s plus modernes<\/strong>, que les concentrations en en <strong>\u03b2-ionone \u00e9taient plus faibles<\/strong>, de l\u2019ordre du ng\/g de fruit frais (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\" target=\"_blank\" rel=\"noopener\">Tieman, 2017<\/a>). De plus, les concentrations en <strong>hexanal<\/strong> se sont r\u00e9v\u00e9l\u00e9es<strong> plus importantes chez les vari\u00e9t\u00e9s plus anciennes<\/strong>, de l\u2019ordre du \u03bcg\/g de fruit frais (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28126817\/\" target=\"_blank\" rel=\"noopener\">Tieman, 2017<\/a>).<\/li>\n<li>Mais il est important de signaler que les conditions environnementales ainsi que le degr\u00e9 de maturit\u00e9 ont des r\u00f4les d\u00e9terminants pour affirmer ou non les qualit\u00e9s organoleptiques du fruit (<a href=\"https:\/\/www.tib.eu\/en\/search\/id\/elsevier%3Adoi~10.1016%252Fj.foodres.2011.09.007\/Factors-influencing-levels-of-phytochemicals-in\/\" target=\"_blank\" rel=\"noopener\">Tiwari, 2013<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">De nombreux chercheurs se sont int\u00e9ress\u00e9s aux <strong>effets b\u00e9n\u00e9fiques<\/strong> de la tomate dans le <strong>cancer<\/strong> gr\u00e2ce \u00e0 certains de ses <strong>compos\u00e9s bioactifs<\/strong>. Ces constituants bioactifs comprennent des <strong>compos\u00e9s phytochimiques<\/strong> tels que les <strong>carot\u00e9no\u00efdes<\/strong> et les <strong>polyph\u00e9nols<\/strong>, dont le <strong>lycop\u00e8ne<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16569051\/\" target=\"_blank\" rel=\"noopener\">Lenucci, 2006<\/a>).<\/li>\n<li style=\"text-align: left;\">Une \u00e9tude de cohorte de suivi sur 6 ans a permis de montrer que la consommation de tomate \u00e9tait associ\u00e9e \u00e0 un <strong>risque moindre de cancer de la prostate<\/strong> gr\u00e2ce \u00e0 une pr\u00e9sence importante de <strong>lycop\u00e8ne<\/strong> entre 7,8 et 18,1 mg pour 100 g (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/7754995\/\" target=\"_blank\" rel=\"noopener\">Willett, 1995<\/a>). Une m\u00e9ta-analyse a confirm\u00e9 qu\u2019une consommation plus \u00e9lev\u00e9e de <strong>carot\u00e9no\u00efdes<\/strong>, dont le \u03b2-carot\u00e8ne, l\u2019\u03b1-carot\u00e8ne, le lycop\u00e8ne, la \u03b2-cryptoxanthine, la lut\u00e9ine et la z\u00e9axanthine, <strong>r\u00e9duisait le risque de cancer de l\u2019\u0153sophage<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23679292\/\" target=\"_blank\" rel=\"noopener\">Ge, 2013<\/a>).<\/li>\n<li style=\"text-align: left;\">Parmi 72 \u00e9tudes identifi\u00e9es, 57 ont rapport\u00e9 des <strong>associations inverses entre la consommation de tomates<\/strong> ou le <strong>taux de lycop\u00e8ne sanguin<\/strong> et le<strong> risque de cancer<\/strong>, dont 35 de ces associations inverses \u00e9taient statistiquement <strong>significatives<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/10050865\/\" target=\"_blank\" rel=\"noopener\">Giovannucci, 1999<\/a>).
