Il existe <strong>six formes<\/strong> <strong>comestibles<\/strong> de laitue qui sont la batavia, la romaine, la beurre, la <strong>feuille<\/strong>, la latin et la tige (<a href=\"https:\/\/www.cabi.org\/bookshop\/book\/9780851992853\/\" target=\"_blank\" rel=\"noopener\">Ryder, 1999<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>L\u2019ensemble des types de laitue, except\u00e9 la batavia de type \u00ab crisp \u00bb, peut se pr\u00e9senter sous forme de feuilles rouges et vertes (<a href=\"https:\/\/hort.purdue.edu\/newcrop\/ncnu02\/pdf\/ryder.pdf\" target=\"_blank\" rel=\"noopener\">Ryder, 2002<\/a>).<\/li>\n<li>Une \u00e9tude a indiqu\u00e9 que les g\u00e8nes CHS, F3H et DFR, pr\u00e9sents dans les laitues, co\u00efncidaient avec une augmentation de l\u2019accumulation d\u2019anthocyanes lors de la coloration rouge des feuilles. (<a href=\"https:\/\/www.researchgate.net\/publication\/6711541_Genes_up-regulated_during_red_coloration_in_UV-B_irradiated_lettuce_leaves\" target=\"_blank\" rel=\"noopener\">Park, 2006<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">La laitue est l\u2019un des l\u00e9gumes les plus consomm\u00e9s dans le monde. C\u2019est une bonne <strong>source de compos\u00e9s bioactifs<\/strong>, qui sont <strong>b\u00e9n\u00e9fiques pour la sant\u00e9<\/strong>, tels que le <strong>folate<\/strong>, le<strong> \u03b2-carot\u00e8ne<\/strong>, la <strong>lut\u00e9ine<\/strong> et les <strong>ph\u00e9nols<\/strong>. <em>In vitro<\/em> et <em>in vivo<\/em>, des \u00e9tudes ont montr\u00e9 des activit\u00e9s <strong>anti-inflammatoires, hypocholest\u00e9rol\u00e9miantes et antidiab\u00e9tiques<\/strong> attribu\u00e9es \u00e0 ces compos\u00e9s. N\u00e9anmoins, ils varient selon les types de laitue (<a href=\"https:\/\/www.infona.pl\/resource\/bwmeta1.element.elsevier-3c8f7d91-0fc8-324c-b09f-3e3606fbdab5\" target=\"_blank\" rel=\"noopener\">Kim, 2016<\/a>).<\/li>\n<li style=\"text-align: left;\">La laitue aurait aussi des effets protecteurs sur la <strong>sant\u00e9 cardiovasculaire<\/strong> en raison de ses nombreuses vari\u00e9t\u00e9s de composants bioactifs. Ces derniers emp\u00eacheraient l\u2019oxydation des tissus et participeraient \u00e0 la <strong>baisse de la pression art\u00e9rielle et l\u2019att\u00e9nuation des dommages myocardiques<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28796173\/\" target=\"_blank\" rel=\"noopener\">Tang, 2017<\/a>).<\/li>\n<li style=\"text-align: left;\">Au total,<strong> 115 compos\u00e9s ph\u00e9noliques<\/strong> ont \u00e9t\u00e9 identifi\u00e9s dans la salade \u00e0 feuille de ch\u00eane verte ou rouge. Les vari\u00e9t\u00e9s rouge et verte ont pr\u00e9sent\u00e9 une composition ph\u00e9nolique similaire, \u00e0 l\u2019exception de :\n<ul>\n<li>l\u2019apig\u00e9nine glucuronide (flavono\u00efde) et l\u2019acide dihydroxybenzo\u00efque (acide ph\u00e9nolique), d\u00e9tect\u00e9s uniquement dans le cultivar vert ;<\/li>\n<li>la lut\u00e9oline-hydroxymalonylhexoside (flavono\u00efde) et la cyanidin-3-O-glucoside (anthocyane) que l\u2019on trouve uniquement dans le cultivar rouge (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28833875\/\" target=\"_blank\" rel=\"noopener\">Viacava, 2017<\/a>).<\/li>\n<\/ul>\n<\/li>\n<li style=\"text-align: left;\">Ainsi, la laitue feuille de ch\u00eane repr\u00e9sente une <strong>source significative d\u2019antioxydants<\/strong> gr\u00e2ce \u00e0 sa richesse en compos\u00e9s ph\u00e9noliques (<a href=\"https:\/\/www.nature.com\/articles\/s41438-018-0050-1\" target=\"_blank\" rel=\"noopener\">Yang, 2018<\/a>).<\/li>\n<li style=\"text-align: left;\">De plus, l\u2019<strong>activit\u00e9 antioxydante<\/strong> appara\u00eet plus \u00e9lev\u00e9e chez les <strong>feuilles de laitue rouge<\/strong>.
