Il existe <strong>six formes comestibles de laitue<\/strong> qui sont la <strong>batavia<\/strong>, la <strong>romaine<\/strong>, la <strong>beurre<\/strong>, la <strong>feuille<\/strong>, la <strong>latin<\/strong> et la <strong>tige<\/strong> (<a href=\"https:\/\/www.cabi.org\/bookshop\/book\/9780851992853\/\" target=\"_blank\" rel=\"noopener\">Ryder, 1999<\/a>).<\/li>\n<li style=\"text-align: left;\">La batavia est subdivis\u00e9e en deux formes : la batavia type \u00ab europ\u00e9enne \u00bb, assez peu d\u00e9velopp\u00e9e \u00e0 l&rsquo;\u00e9tranger, et la batavia type \u00ab crisp \u00bb, aussi appel\u00e9e \u00ab iceberg \u00bb, tr\u00e8s utilis\u00e9e en restauration rapide (<a href=\"http:\/\/ephytia.inra.fr\/fr\/C\/6042\/Salades-Les-differents-types-de-laitues-cultivees\" target=\"_blank\" rel=\"noopener\">B Maisonneuve, 2013<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>L\u2019ensemble des types de laitue, except\u00e9 la batavia de type \u00ab crisp \u00bb, peut se pr\u00e9senter sous forme de feuilles rouges et vertes (<a href=\"https:\/\/hort.purdue.edu\/newcrop\/ncnu02\/pdf\/ryder.pdf\" target=\"_blank\" rel=\"noopener\">Ryder, 2002<\/a>).<\/li>\n<li>La laitue batavia est en forme de pomme, c\u2019est-\u00e0-dire que les jeunes feuilles sont imbriqu\u00e9es et plus ou moins referm\u00e9es \u00e0 leur sommet. La batavia de type \u00ab\u00a0crisp\u00a0\u00bb a la particularit\u00e9 d\u2019\u00eatre sous forme de pomme dure, comme un chou blanc, et de poss\u00e9der des feuilles tr\u00e8s craquantes (<a href=\"http:\/\/ephytia.inra.fr\/fr\/C\/6042\/Salades-Les-differents-types-de-laitues-cultivees\" target=\"_blank\" rel=\"noopener\">B Maisonneuve, 2013<\/a>).<\/li>\n<li>La laitue, une fois coup\u00e9e, <strong>brunit<\/strong> progressivement car la coupe favorise la <strong>biosynth\u00e8se de polyph\u00e9nols<\/strong> qui seront <strong>oxyd\u00e9s<\/strong> par la <strong>polyph\u00e9nol oxydase<\/strong> (<a href=\"https:\/\/www.tandfonline.com\/doi\/abs\/10.1271\/bbb.68.501\" target=\"_blank\" rel=\"noopener\">Murata, 2004<\/a>). Il a \u00e9t\u00e9 montr\u00e9 que la laitue batavia de type \u00ab crisp \u00bb coup\u00e9e et lav\u00e9e \u00e0 50 \u00b0C aurait une activit\u00e9 de la polyph\u00e9nol oxydase significativement plus faible que la laitue coup\u00e9e et lav\u00e9e \u00e0 4 \u00b0C et 25 \u00b0C, tout au long du stockage. Ces r\u00e9sultats sont coh\u00e9rents avec une analyse sensorielle dans laquelle les scores de brunissement les plus bas ont \u00e9t\u00e9 retrouv\u00e9s dans les \u00e9chantillons trait\u00e9s \u00e0 50 \u00b0C (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16195584\/\" target=\"_blank\" rel=\"noopener\">Martin-Diana, 2005<\/a>).<\/li>\n<li>Les exp\u00e9riences d\u00e9montrent que dans des <strong>conditions ana\u00e9robies<\/strong>, telle que l\u2019atmosph\u00e8re de conservation des laitues batavia de type \u00ab crisp \u00bb emball\u00e9es, des <strong>acides organiques<\/strong> sont produits par des bact\u00e9ries lactiques. Ces acides affectent la <strong>qualit\u00e9 sensorielle<\/strong> de la batavia de type \u00ab crisp \u00bb fra\u00eechement coup\u00e9e et sont notamment \u00e0 l\u2019origine d\u2019un <strong>brunissement<\/strong> rapide, d\u2019un <strong>jaunissement<\/strong>, d\u2019une <strong>saveur d\u00e9sagr\u00e9able<\/strong> et d\u2019une <strong>perte de texture<\/strong> (<a href=\"https:\/\/research.wur.nl\/en\/publications\/organic-acids-produced-by-lactic-acid-bacteria-leuconostoc-sp-con\" target=\"_blank\" rel=\"noopener\">Paillart, 2016<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">La laitue est l&rsquo;un des l\u00e9gumes les plus consomm\u00e9s dans le monde. C&rsquo;est une bonne source de compos\u00e9s bioactifs ayant un r\u00f4le b\u00e9n\u00e9fique sur la sant\u00e9, tels que le <strong>folate<\/strong>, le<strong> \u03b2-carot\u00e8ne<\/strong>, la <strong>lut\u00e9ine<\/strong> et les <strong>ph\u00e9nols<\/strong>. In vitro et in vivo, des \u00e9tudes ont montr\u00e9 des activit\u00e9s <strong>anti-inflammatoires<\/strong>, <strong>hypocholest\u00e9rol\u00e9miantes<\/strong> et <strong>antidiab\u00e9tiques<\/strong> attribu\u00e9es \u00e0 ces compos\u00e9s. N\u00e9anmoins, ils varient selon les formes de laitue : la batavia de type \u00ab crisp \u00bb, la plus populaire aux \u00c9tats-Unis, est relativement faible en compos\u00e9s bioactifs (<a href=\"https:\/\/www.infona.pl\/resource\/bwmeta1.element.elsevier-3c8f7d91-0fc8-324c-b09f-3e3606fbdab5\" target=\"_blank\" rel=\"noopener\">Kim, 2016<\/a>).<\/li>\n<li style=\"text-align: left;\">La laitue aurait aussi des <strong>effets protecteurs<\/strong> sur la sant\u00e9 cardiovasculaire en raison de ses nombreuses <strong>vari\u00e9t\u00e9s<\/strong> de <strong>composants bioactifs<\/strong>. Ces derniers <strong>emp\u00eacheraient l\u2019oxydation des tissus<\/strong> et <strong>participeraient \u00e0 la baisse de la pression art\u00e9rielle ainsi que l&rsquo;att\u00e9nuation des dommages myocardiques<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28796173\/\" target=\"_blank\" rel=\"noopener\">Tang, 2017<\/a>).<\/li>\n<li style=\"text-align: left;\">Le principal compos\u00e9 ph\u00e9nolique de six cultivars de laitue \u00e9tudi\u00e9s, comprenant deux laitues beurre, deux laitues batavia, une laitue fris\u00e9e et une vari\u00e9t\u00e9 de feuille de ch\u00eane pigment\u00e9e rouge, serait l&rsquo;<strong>acide dicaf\u00e9yl tartrique<\/strong>. Sachant que les compos\u00e9s ph\u00e9noliques totaux repr\u00e9sentaient plus de <strong>60 % de la capacit\u00e9 antioxydante totale<\/strong>, l\u2019acide dicaf\u00e9yl tartrique en repr\u00e9sentait quant \u00e0 lui <strong>55 %<\/strong> (<a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/jsfa.1916\" target=\"_blank\" rel=\"noopener\">Nicolle, 2004<\/a>).<\/li>\n<li style=\"text-align: left;\">La batavia et 24 autres vari\u00e9t\u00e9s de laitue ont \u00e9t\u00e9 cultiv\u00e9es sur deux p\u00e9riodes de r\u00e9colte. Il a \u00e9t\u00e9 montr\u00e9 que les laitues r\u00e9colt\u00e9es en juillet poss\u00e9deraient une teneur en polyph\u00e9nols totaux et une capacit\u00e9 antioxydante plus \u00e9lev\u00e9e que les laitues r\u00e9colt\u00e9es en septembre.
