Habituellement limit\u00e9 \u00e0 la peau de la pomme, les <strong>anthocyanes<\/strong> sont les principaux <strong>pigments<\/strong> qui donnent la <strong>couleur rouge<\/strong> aux pommes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23353125\/\" target=\"_blank\" rel=\"noopener\">Liu, 2013<\/a>). La cyanidin 3-galactoside (cy3-gal) compte pour plus de 80 % des anthocyanes totales. Cette mol\u00e9cule est essentiellement pr\u00e9sente dans les cultivars \u00e0 la peau rouge, et permet en partie aux consommateurs de diff\u00e9rencier les diff\u00e9rentes vari\u00e9t\u00e9s (<a href=\"https:\/\/ifst.onlinelibrary.wiley.com\/doi\/abs\/10.1111\/ijfs.12994\" target=\"_blank\" rel=\"noopener\">Guo, 2016<\/a>).<\/li>\n<li>La pomme Pink Lady est de <strong>couleur rouge ros\u00e9<\/strong> et contient jusqu\u2019\u00e0 98 mg\/100 g de cy3-gal, ainsi qu\u2019une faible quantit\u00e9 de cy3-arabinoside (2 mg\/100 g) et de cy3-glucoside (0,6 mg\/100 g) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22409403\/\" target=\"_blank\" rel=\"noopener\">Bureau, 2012<\/a>).<\/li>\n<li>Sa chair est <strong>ferme<\/strong>. Elle est cat\u00e9goris\u00e9e avec les <strong>fruits sucr\u00e9s<\/strong> \u00e0 forte intensit\u00e9 aromatique, caract\u00e9ris\u00e9s par les descripteurs fruits exotiques et bonbons. (<a href=\"https:\/\/www.revuevitiarbohorti.ch\/wp-content\/uploads\/2012_06_f_310.pdf\" target=\"_blank\" rel=\"noopener\">Mehinagic, 2012<\/a>).<\/li>\n<li>L\u2019ar\u00f4me de la pomme est un facteur cl\u00e9 dans la qualit\u00e9 du fruit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23256150\/\" target=\"_blank\" rel=\"noopener\">Nieuwenhuizen, 2013<\/a>). La pomme produit plus de <strong>300 compos\u00e9s organiques volatils<\/strong> responsables des ar\u00f4mes du fruit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23256150\/\" target=\"_blank\" rel=\"noopener\">Nieuwenhuizen, 2013<\/a>).<\/li>\n<li>Le fruit mature contient principalement des <strong>esters alkyl\u00e9s<\/strong>, qui repr\u00e9sentent de 80 \u00e0 98 % des compos\u00e9s volatils totaux et qui sont caract\u00e9ristiques de la note <strong>\u00ab fruit\u00e9 \u00bb<\/strong> (<a href=\"https:\/\/www.researchgate.net\/publication\/223370218_Changes_in_biosynthesis_of_aroma_volatile_compounds_during_on-tree_maturation_of_'Pink_Lady_R'_apples\" target=\"_blank\" rel=\"noopener\">Villatoro, 2008<\/a>), et des alcools, qui comptent pour 6 \u00e0 16 % des compos\u00e9s volatils totaux.
