Les anthocyanes, dont la cyanidin 3-galactoside qui compte pour plus de 80\u00a0% des anthocyanes totales, sont les principaux pigments qui donnent la couleur rouge aux pommes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23353125\/\" target=\"_blank\" rel=\"noopener\">Liu, 2013<\/a>).<\/li>\n<li>Elle contient une faible quantit\u00e9 de deux types d\u2019anthocyanes\u00a0: le cy3-galactoside (29,56\u00a0mg\/100\u00a0g maximum) et le cy3-arabinoside (moins de 1\u00a0mg\/100\u00a0g) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23353125\/\" target=\"_blank\" rel=\"noopener\">Liu, 2013<\/a>).<\/li>\n<li>La pomme Granny Smith a la <strong>chair ferme et friable<\/strong> (<a href=\"https:\/\/europepmc.org\/article\/med\/23057586\" target=\"_blank\" rel=\"noopener\">Ting, 2012<\/a>). Elle appartient \u00e0 la cat\u00e9gorie des <strong>pommes acides<\/strong> (7,7\u00a0g\/L d\u2019acidit\u00e9 totale) et <strong>peu sucr\u00e9es<\/strong>, avec des descripteurs aromatiques vert (intensit\u00e9 de la note \u00ab\u00a0vert herbac\u00e9 \u2013 herbe coup\u00e9e \u00bb) et citron (intensit\u00e9 de la note \u00ab\u00a0citron\u00a0\u00bb). La pomme produit plus de 300\u00a0compos\u00e9s organiques volatils responsables de ces ar\u00f4mes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23256150\/\" target=\"_blank\" rel=\"noopener\">Nieuwenhuizen, 2013<\/a>). Le fruit mature contient principalement des esters alkyl\u00e9s, qui repr\u00e9sentent de 80\u00a0\u00e0 98\u00a0% des compos\u00e9s volatils totaux et qui sont caract\u00e9ristiques de la note \u00ab\u00a0fruit\u00e9\u00a0\u00bb (Villatoro, 2008), et des alcools, qui comptent pour 6\u00a0\u00e0 16\u00a0% des compos\u00e9s volatils totaux.
