En effet, les anthocyanes, et notamment la cyanidin 3-galactoside, qui compte pour plus de 80\u00a0% des anthocyanes totales, sont les principaux<strong> pigments<\/strong> qui donnent la <strong>couleur rouge<\/strong> aux pommes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23353125\/\" target=\"_blank\" rel=\"noopener\">Liu, 2013<\/a>).<\/li>\n<li>La pomme Golden appartient \u00e0 la cat\u00e9gorie des <strong>fruits fondants et peu croquants<\/strong>, not\u00e9s peu rustique et citrus du point de vue aromatique (<a href=\"https:\/\/www.revuevitiarbohorti.ch\/wp-content\/uploads\/2012_06_f_310.pdf\" target=\"_blank\" rel=\"noopener\">Mehinagic, 2012<\/a>).<\/li>\n<li>L<strong>\u2019ar\u00f4me<\/strong> de la pomme est un facteur cl\u00e9 dans la qualit\u00e9 du fruit.
