Sa tige et ses branches sont de forme quadrangulaire. Les feuilles atteignent une longueur d\u2019environ 6\u00a0\u00e0 12\u00a0mm de long. Elles sont de forme ovale, \u00e9paisses, lisses, parsem\u00e9es de nombreuses <strong>glandes \u00e0 huile<\/strong>, plus p\u00e2les et pubescentes en dessous (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23998010\/\" target=\"_blank\" rel=\"noopener\">Hossain, 2013<\/a>).<\/li>\n<li>Le thym fleurit de juin \u00e0 juillet (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23998010\/\" target=\"_blank\" rel=\"noopener\">Hossain, 2013<\/a>).<\/li>\n<li>Une s\u00e9rie de <strong>compos\u00e9s volatils<\/strong> ont \u00e9t\u00e9 identifi\u00e9s\u00a0: thymol, \u03d2-terpin\u00e8ne, carvacrol, p-cymene, \u03b2-pinene, \u03b1-thujene, ocimene, gemacrene-D, \u03b1-cubebene, \u03b1-phellandrene, \u03b2-myrcene, O-cymene et \u03b2-caryophyllene (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30368030\/\" target=\"_blank\" rel=\"noopener\">Rabiei, 2018<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32121165\/\" target=\"_blank\" rel=\"noopener\">Mahdavi, 2020<\/a>). Le thymole et le carvacrol sont les principaux monoterp\u00e8nes. Le thymol serait responsable de l\u2019odeur plaisante du thym (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31163460\/\" target=\"_blank\" rel=\"noopener\">Stefanis, 2019<\/a>).<\/li>\n<li>Les formes a et b de la <strong>chlorophylle<\/strong> ont \u00e9t\u00e9 identifi\u00e9es dans la tige et les feuilles du thym, lui donnant sa couleur verte (Tzima, 2020).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00e9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li>Les feuilles de thym contiennent entre autres des<strong> flavono\u00efdes<\/strong>, des saponines et des st\u00e9ro\u00efdes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23998010\/\" target=\"_blank\" rel=\"noopener\">Hossain, 2013<\/a>).<\/li>\n<li>De plus, la pr\u00e9sence d\u2019alkalo\u00efdes et de coumarins a \u00e9t\u00e9 mise en \u00e9vidence (Zairi, 2018).<\/li>\n<li>25\u00a0compos\u00e9s ph\u00e9noliques ont \u00e9t\u00e9 identifi\u00e9s dans le thym, dont la plupart font partie des flavono\u00efdes, des d\u00e9riv\u00e9s de l\u2019acide hydroxycinnamique, des d\u00e9riv\u00e9s de l\u2019acide hydroxybenzo\u00efque et des diterp\u00e8nes ph\u00e9noliques. Les feuilles contiennent notamment de l\u2019acide caf\u00e9ique, de l\u2019acide rosmarinique, du carnosol, de la lut\u00e9oline, de l\u2019apig\u00e9nine et de l\u2019apig\u00e9nine-7-O\u00e8glucoside. La tige, quant \u00e0 elle, serait plus riche en acide caf\u00e9ique et en acide rosmarinique (Tzima, 2020). Les feuilles contiendraient, en plus de l\u2019acide gallique, de la rutine et de l\u2019\u00e9picat\u00e9chine (Zairi, 2018).<\/li>\n<li>Les <strong>compos\u00e9s ph\u00e9noliques<\/strong> contenus dans le thym lui conf\u00e8rent une <strong>activit\u00e9 antioxydante<\/strong> (Tzima, 2020).<\/li>\n<li>D\u2019apr\u00e8s une \u00e9tude r\u00e9alis\u00e9e sur 33\u00a0personnes, les compos\u00e9s ph\u00e9noliques contenus dans le thym auraient un effet b\u00e9n\u00e9fique sur le <strong>taux de cholest\u00e9rol<\/strong> et donc sur les<strong> maladies cardiovasculaires<\/strong>, en r\u00e9gulant l\u2019expression des principaux r\u00e9gulateurs du cholest\u00e9rol (capacit\u00e9 des HDL \u00e0 r\u00e9duire le cholest\u00e9rol) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31357534\/\" target=\"_blank\" rel=\"noopener\">Farr\u00e0s, 2019<\/a>).<\/li>\n<li>L\u2019acide quinique, un <strong>acide organique<\/strong>, a aussi \u00e9t\u00e9 quantifi\u00e9 dans le thym (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29556431\/\" target=\"_blank\" rel=\"noopener\">Heidari, 2018<\/a>\u00a0; Tzima, 2020). Les autres acides organiques report\u00e9s sont l\u2019acide malique, l\u2019acide succinique, l\u2019acide citrique et l\u2019acide lactique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30286404\/\" target=\"_blank\" rel=\"noopener\">Ashrafi, 2018<\/a>).<\/li>\n<li>Le thymol et le carvacrol conf\u00e8reraient au thym son <strong>activit\u00e9 antimicrobienne et antiseptique<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30511619\/\" target=\"_blank\" rel=\"noopener\">Nateqi, 2018<\/a>\u00a0; Wiese, 2018\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31163460\/\" target=\"_blank\" rel=\"noopener\">Stefanis, 2019<\/a>).<\/li>\n<li>Une \u00e9tude r\u00e9cente a mis en \u00e9vidence la pr\u00e9sence d\u2019un polysaccharide insoluble dans les feuilles de thym.
