Ces derniers jouent un r\u00f4le important dans la qualit\u00e9 du raisin notamment en raison de leur contribution au <strong>go\u00fbt<\/strong> et \u00e0 la <strong>couleur<\/strong>.\n<ul>\n<li>Les <strong>flavonols<\/strong> et les <strong>flavan-3-ols<\/strong> participent \u00e0 <strong>l&rsquo;astringence<\/strong> et \u00e0 <strong>l&rsquo;amertume<\/strong> des raisins (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/11101467\/\" target=\"_blank\" rel=\"noopener\">Drewnowski, 2000<\/a>).<\/li>\n<li>Les raisins noirs doivent leur <strong>couleur rouge<\/strong> plus ou moins fonc\u00e9e aux <strong>anthocyanes<\/strong>, et en particulier \u00e0 la <strong>malvidin-3-O-glucoside<\/strong>. Ce compos\u00e9 est majoritairement pr\u00e9sent dans la peau et ses teneurs augmentent fortement avec la maturit\u00e9 (<a href=\"https:\/\/bmcgenomics.biomedcentral.com\/articles\/10.1186\/s12864-016-2660-z\" target=\"_blank\" rel=\"noopener\">Wong, 2016<\/a> ; <a href=\"https:\/\/europepmc.org\/article\/med\/26471534\" target=\"_blank\" rel=\"noopener\">Ferreira, 2016<\/a>, <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30563177\/\" target=\"_blank\" rel=\"noopener\">Iglesias-Carres, 2018<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28946307\/\" target=\"_blank\" rel=\"noopener\">Aubert, 2018<\/a>).<\/li>\n<\/ul>\n<\/li>\n<li>Les raisins sont principalement appr\u00e9ci\u00e9s par les consommateurs pour leur <strong>douceur<\/strong>, leur <strong>jutosit\u00e9<\/strong> et leur <strong>ar\u00f4me<\/strong>. L&rsquo;ar\u00f4me est un des facteurs essentiels contribuant \u00e0 la qualit\u00e9 du raisin, et g\u00e9n\u00e9ralement l&rsquo;ar\u00f4me typique des vari\u00e9t\u00e9s dites <strong>Muscat<\/strong> est tr\u00e8s appr\u00e9ci\u00e9 par les consommateurs. En effet, contrairement aux vari\u00e9t\u00e9s neutres qui contiennent peu de compos\u00e9s volatils d&rsquo;ar\u00f4mes, les vari\u00e9t\u00e9s Muscat sont riches en <strong>monoterp\u00e9nols<\/strong> (linalol, g\u00e9raniol, n\u00e9rol, \u2026), compos\u00e9s responsables de leur<strong> ar\u00f4me floral<\/strong> si caract\u00e9ristique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/10905735\/\" target=\"_blank\" rel=\"noopener\">Mateo, 2000<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACTERISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">En raison de ses teneurs importantes en <strong>phytomicronutriments<\/strong> (carot\u00e9no\u00efdes, polyph\u00e9nols\u2026), de nombreuses \u00e9tudes ont montr\u00e9 qu\u2019une consommation r\u00e9guli\u00e8re de raisins \u00e9tait li\u00e9e \u00e0 un <strong>risque r\u00e9duit d\u2019apparition de maladies chroniques, y compris certains types de cancer et de maladies cardiovasculaires<\/strong> (<a href=\"https:\/\/journals.sagepub.com\/doi\/abs\/10.1177\/1934578X0900400502\" target=\"_blank\" rel=\"noopener\">Iriti, 2009<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24007424\/\" target=\"_blank\" rel=\"noopener\">Yang, 2013<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29042289\/\" target=\"_blank\" rel=\"noopener\">Costa, 2017<\/a>).<\/li>\n<li style=\"text-align: left;\">Composition en polyph\u00e9nols des raisins noirs :\n<ul>\n<li>Les <strong>polyph\u00e9nols<\/strong> majoritaires sont les <strong>anthocyanes<\/strong>, suivis des <strong>acides<\/strong> <strong>hydroxycinnamiques<\/strong> et des <strong>flavan-3-ols<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30563177\/\" target=\"_blank\" rel=\"noopener\">Iglesias-Carres, 2018<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28946307\/\" target=\"_blank\" rel=\"noopener\">Aubert, 2018<\/a>).<\/li>\n<li>Parmi les autres compos\u00e9s la <strong>cat\u00e9chine<\/strong>, <strong>l\u2019\u00e9picat\u00e9chine<\/strong> (flavan-3-ols) et l\u2019<strong>acide caftarique<\/strong> (acide hydroxycinnamique) sont les plus <strong>abondants<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30563177\/\" target=\"_blank\" rel=\"noopener\">Iglesias-Carres, 2018<\/a> ; <a href=\"https:\/\/europepmc.org\/article\/med\/26471534\" target=\"_blank\" rel=\"noopener\">Ferreira, 2016<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28946307\/\" target=\"_blank\" rel=\"noopener\">Aubert, 2018<\/a>).<\/li>\n<li>Si les compos\u00e9s polyph\u00e9noliques sont d\u2019une mani\u00e8re g\u00e9n\u00e9rale majoritairement pr\u00e9sents dans la peau des raisins, les <strong>acides hydroxycinnamiques<\/strong> sont principalement localis\u00e9s dans la <strong>pulpe<\/strong> et les <strong>flavan-3-ols<\/strong> dans les <strong>p\u00e9pins <\/strong>(<a href=\"https:\/\/europepmc.org\/article\/AGR\/ADL87031976\" target=\"_blank\" rel=\"noopener\">Cheynier, 1986<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26776043\/\" target=\"_blank\" rel=\"noopener\">Farhadi, 2016<\/a>).<\/li>\n<li>Les raisins noirs contiennent \u00e9galement des <strong>stilb\u00e8nes<\/strong>.
