En effet, les <strong>isothiocyanates<\/strong> sont des compos\u00e9s caract\u00e9ristiques du<strong> go\u00fbt piquant<\/strong> des l\u00e9gumes de la famille des Brassicaceae (<a href=\"https:\/\/bmcgenomics.biomedcentral.com\/articles\/10.1186\/1471-2164-14-836\" target=\"_blank\" rel=\"noopener\">Ramirez, 2020<\/a>).<\/li>\n<li style=\"text-align: justify;\">Plus le radis est jeune, moins il est piquant (<a href=\"https:\/\/www.fondation-louisbonduelle.org\/legume\/radis-noir\/\" target=\"_blank\" rel=\"noopener\">Fondation Louis Bonduelle, 2020<\/a>).<\/li>\n<li style=\"text-align: justify;\">Les radis sont <strong>fermes<\/strong> quand ils sont <strong>immatures<\/strong>, mais avec le temps, ils deviennent <strong>moins juteux, croquants<\/strong> et <strong>plus \u00e9lastiques<\/strong>. Ces changements de texture sont dus \u00e0 des modifications des parois cellulaires comme l\u2019augmentation de la teneur en xylane et en lignine, et l\u2019alt\u00e9ration de la structure de la pectine (<a href=\"https:\/\/pubs.acs.org\/doi\/abs\/10.1021\/acs.jafc.6b03693\" target=\"_blank\" rel=\"noopener\">Sch\u00e4fer, 2016<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">Les <strong>germes<\/strong> de radis contiennent des concentrations importantes de <strong>glucosinolates<\/strong>, d\u2019<strong>isothiocyanates<\/strong> et de <strong>compos\u00e9s ph\u00e9noliques<\/strong>, tout comme la racine de radis, mais dans des proportions plus importantes (Sharma, 2014).
