Cette couleur est due principalement \u00e0 la pr\u00e9sence d\u2019anthocyanes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24874351\/\" target=\"_blank\" rel=\"noopener\">Liu, 2014<\/a>).<\/li>\n<li>Il existe \u00e9galement des vari\u00e9t\u00e9s de couleur rouge (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23871046\/\" target=\"_blank\" rel=\"noopener\">Peksa, 2013<\/a>), blanche et jaune (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23411230\/\" target=\"_blank\" rel=\"noopener\">Lachman, 2013<\/a>).<\/li>\n<li>La texture de la pomme de terre varie en fonction de la teneur en amidon et de sa structure, et du taux d\u2019hydratation. Sa <strong>fermet\u00e9 <\/strong>diminue en fonction de l<strong>a cuisson<\/strong> : cuite au four &gt; bouillie &gt; frite (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30361005\/\" target=\"_blank\" rel=\"noopener\">Romano, 2018<\/a>).<\/li>\n<li>La cuisson a un impact majeur sur le go\u00fbt et la saveur des pommes de terre. La<strong> g\u00e9latinisation de l\u2019amidon<\/strong> appara\u00eet comme le ph\u00e9nom\u00e8ne majeur dans la lib\u00e9ration des ar\u00f4mes de la pomme de terre (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0144861713002683\" target=\"_blank\" rel=\"noopener\">Descours, 2013<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">La pomme de terre renferme des<strong> polyph\u00e9nols <\/strong>dans la peau et dans la chai<strong>r<\/strong>. Cependant, ils sont pr\u00e9sents en plus grande quantit\u00e9 dans la peau (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27240356\/\" target=\"_blank\" rel=\"noopener\">Akyol, 2016<\/a>).<\/li>\n<li style=\"text-align: left;\">La teneur en polyph\u00e9nol varie d\u2019une vari\u00e9t\u00e9 \u00e0 l\u2019autre.
