Bien qu\u2019ils soient deux fruits distincts, les deux noms sont en fait utilis\u00e9s pour le pomelo, le seul des deux que nous mangeons en France.<\/li>\n<li>Le pomelo serait issu d\u2019un croisement entre le <em>Citrus maxima<\/em> (pamplemoussier) et <em>Citrus sinensis <\/em>(oranger) (Cirad, 2018).<\/li>\n<\/ul>\n<h3 style=\"text-align: justify;\">CARACT\u00e9RISTIQUES PHYSIQUES et ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: justify;\">\n<li>La <strong>chair du pomelo peut \u00eatre blanche, rose ou rouge<\/strong>, la couleur \u00e9tant influenc\u00e9e par la composition en carot\u00e9no\u00efdes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27006221\/\" target=\"_blank\" rel=\"noopener\">Zhen, 2016<\/a>)\u00a0:\n<ul>\n<li>la <strong>couleur rouge du pamplemousse rose est due \u00e0 la pr\u00e9sence de lycop\u00e8ne<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21594623\/\" target=\"_blank\" rel=\"noopener\">Costa, 2012<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27006221\/\" target=\"_blank\" rel=\"noopener\">Zhen, 2016<\/a>)\u00a0;<\/li>\n<li>les <strong>pomelos \u00e0 la chair blanche contiennent plus de \u03b2-carot\u00e8ne<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27006221\/\" target=\"_blank\" rel=\"noopener\">Zheng, 2016<\/a>).<\/li>\n<\/ul>\n<\/li>\n<li>Un total de 170\u00a0compos\u00e9s aromatiques a \u00e9t\u00e9 retrouv\u00e9 dans la pulpe du pomelo. Parmi eux, 20\u00a0monoterp\u00e8nes (43\u00a0\u00e0 70\u00a0%), 48\u00a0sesquiterp\u00e8nes (11\u00a0\u00e0 45\u00a0%), 21\u00a0alcools et ald\u00e9hydes terp\u00e9niques, 18\u00a0alcools et ald\u00e9hydes aliphatiques, 9\u00a0c\u00e9tones, 21\u00a0esters, 21\u00a0alkanes et 12\u00a0d\u2019autres cat\u00e9gories. D\u2019apr\u00e8s cette analyse, les compos\u00e9s les plus repr\u00e9sent\u00e9s quantitativement sont le D-limon\u00e8ne (30,07-67,55\u00a0%), le caryophyll\u00e8ne (9,90-25,69\u00a0%), le b-pin\u00e8ne (2,29-48,09\u00a0%) et l\u2019a-humul\u00e8ne (0-3,73\u00a0%) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27006221\/\" target=\"_blank\" rel=\"noopener\">Zheng, 2016<\/a>).<\/li>\n<li><strong>L\u2019ar\u00f4me du pomelo r\u00e9sulterait d\u2019un m\u00e9lange de caryophyll\u00e8ne<\/strong> (un sesquiterp\u00e8ne), de <strong>citral<\/strong> (isom\u00e8re), de <strong>nootkatonne<\/strong> (sesquiterp\u00e8ne c\u00e9tone)<strong> et d\u2019ald\u00e9hydes vari\u00e9s<\/strong> tels que l\u2019octanal, le nonanal et le decanal (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30813331\/#:~:text=Pungent%20and%20grapefruit%20aroma%20were,liking)%20of%20the%20tested%20beverages.\" target=\"_blank\" rel=\"noopener\">Gous, 2019<\/a>). Le compos\u00e9 aromatique le plus important du pomelo serait le nooktkatone (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16272746\/\" target=\"_blank\" rel=\"noopener\">Furusawa, 2005<\/a>).<\/li>\n<li>Le pomelo est un fruit sucr\u00e9, mais sa teneur en sucre n\u2019est pas suspect\u00e9e \u00e0 cause de son amertume et son acidit\u00e9 (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29800164\/\" target=\"_blank\" rel=\"noopener\">JAMA, 2018<\/a>).<\/li>\n<li><strong>L\u2019amertume est principalement due \u00e0 la pr\u00e9sence de naringine et de limonine<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30813331\/#:~:text=Pungent%20and%20grapefruit%20aroma%20were,liking)%20of%20the%20tested%20beverages.\" target=\"_blank\" rel=\"noopener\">Gous, 2019<\/a>) <strong>et l\u2019acidit\u00e9 provient des acides organiques<\/strong> qu\u2019il contient (30\u00a0\u00e0 45\u00a0mg\/g FW) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27006221\/\" target=\"_blank\" rel=\"noopener\">Zheng, 2016<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29800164\/\" target=\"_blank\" rel=\"noopener\">JAMA, 2018<\/a>). L\u2019acide citrique repr\u00e9sente 40\u00a0\u00e0 60\u00a0% des acides organiques totaux et l\u2019acide quinique est le deuxi\u00e8me acide organique le plus important (15\u00a0\u00e0 30\u00a0% des acides organiques totaux) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27006221\/\" target=\"_blank\" rel=\"noopener\">Zheng, 2016<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: justify;\">CARACT\u00e9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li>Le pomelo contient des polyph\u00e9nols dont la narirutine, la naringine et la poncirine (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28572940\/\" target=\"_blank\" rel=\"noopener\">Chaudhary, 2012<\/a>). La naringine aurait de nombreuses propri\u00e9t\u00e9s telles que antioxydante, hypolipid\u00e9miante et anticancer (Mallick, 2016). Elle am\u00e9liorerait aussi l\u2019acidoc\u00e9tose, qui est la production de compos\u00e9s hautement acides dans le sang (une des cons\u00e9quences du diab\u00e8te) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27073901\/\" target=\"_blank\" rel=\"noopener\">Murunga, 2016<\/a>).<\/li>\n<li>Gr\u00e2ce aux compos\u00e9s phytochimiques qu\u2019il contient (tels que des polyph\u00e9nols, dont les flavono\u00efdes, et des carot\u00e9no\u00efdes), <strong>le pomelo poss\u00e8de une activit\u00e9 antioxydante<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30728563\/\" target=\"_blank\" rel=\"noopener\">Kumar, 2019<\/a>) <strong>et anti-inflammatoire<\/strong>, et aurait ainsi un effet b\u00e9n\u00e9fique sur l\u2019inflammation intestinale (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27166529\/\" target=\"_blank\" rel=\"noopener\">Khan, 2016<\/a>).<\/li>\n<li>Le stockage des pomelos \u00e0 basse temp\u00e9rature (5\u00a0ou 11\u00a0\u00b0C) n\u2019affecterait pas significativement leur composition en \u03b2-carot\u00e8ne et en polyph\u00e9nols (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28572940\/\" target=\"_blank\" rel=\"noopener\">Chaudhary PR, 2016<\/a>).<\/li>\n<li><strong>Les phyto-nutriments du pomelo<\/strong>, comme le limon\u00e8ne, <strong>r\u00e9duiraient la synth\u00e8se de cholest\u00e9rol et de triglyc\u00e9rides<\/strong>, et ainsi auraient des <strong>effets b\u00e9n\u00e9fiques contre l\u2019hyperlipid\u00e9mie et les risques cardio-vasculaires<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27134462\/\" target=\"_blank\" rel=\"noopener\">Mallick, 2016<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32236178\/\" target=\"_blank\" rel=\"noopener\">Lin, 2020<\/a>).
