En m\u00fbrissant, il devient jaune, puis orange, puis rouge<\/strong> (Nolte, 2012).<\/li>\n<li>Le poivron est le deuxi\u00e8me l\u00e9gume le plus consomm\u00e9 dans le monde (<a href=\"https:\/\/bmcplantbiol.biomedcentral.com\/articles\/10.1186\/1471-2229-14-138\" target=\"_blank\" rel=\"noopener\">Guo, 2014<\/a>).<\/li>\n<li>Il provient des r\u00e9gions tropicales et est tr\u00e8s sensible aux basses temp\u00e9ratures, qui affectent son d\u00e9veloppement v\u00e9g\u00e9tatif (<a href=\"https:\/\/bmcplantbiol.biomedcentral.com\/articles\/10.1186\/1471-2229-14-138\" target=\"_blank\" rel=\"noopener\">Guo, 2014<\/a>).<\/li>\n<\/ul>\n<h3><strong>CARACT\u00c9RISTIQUES PHYSIQUES ET <\/strong><strong>ORGANOLEPTIQUES<\/strong><\/h3>\n<ul>\n<li>Il existe diff\u00e9rents types de poivrons\u00a0: poivron doux, sucr\u00e9\u2026 (<a href=\"https:\/\/bmcplantbiol.biomedcentral.com\/articles\/10.1186\/1471-2229-14-138\" target=\"_blank\" rel=\"noopener\">Guo, 2014<\/a>), et 3 couleurs principales\u00a0: jaune, vert et rouge.<\/li>\n<li>Les principales <strong>mol\u00e9cules responsables de la coloration rouge du poivron sont les carot\u00e9no\u00efdes<\/strong> dont le \u03b2-carot\u00e8ne, l\u2019\u03b1-carot\u00e8ne, le cis-\u03b2-carot\u00e8ne (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22368104\/\" target=\"_blank\" rel=\"noopener\">Hallmann, 2012<\/a>).<\/li>\n<li>Les principales classes de carot\u00e9no\u00efdes retrouv\u00e9es dans le poivron rouge sont les xanthophylles (9\u00a0% \u2013 dont la capsanthine, capsorubine et curcubitaxanthin), les carot\u00e8nes (8\u00a0% \u2013 dont le \u03b2-carot\u00e8ne, l\u2019\u03b1-carot\u00e8ne, le cis-\u03b2-carot\u00e8ne), les monoesters de xanthophylles (29\u00a0%) et les diesters de xanthophylles (52\u00a0%) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27391392\/\" target=\"_blank\" rel=\"noopener\">Bonaccorsi, 2016<\/a>).<\/li>\n<li>Le poivron rouge contient des <strong>compos\u00e9s volatils sulfur\u00e9s responsables de son odeur une fois cuit<\/strong>, tels que les \u03b2-mercaptoheptanones et \u03b2-mercaptoheptanols (<a href=\"https:\/\/pubs.acs.org\/doi\/10.1021\/acs.jafc.7b04336\" target=\"_blank\" rel=\"noopener\">No\u0308renberg, 2017<\/a>).<\/li>\n<li>Le <strong>go\u00fbt du poivron rouge pr\u00e9sente des caract\u00e9ristiques sucr\u00e9es et acides<\/strong>, qui augmentent lorsque le poivron est cuit (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0963996916302514\" target=\"_blank\" rel=\"noopener\">Van Stokkom, 2016<\/a>).<\/li>\n<li>Le fructose et le (E)-2-hex\u00e8ne-1-ol sont fortement corr\u00e9l\u00e9s avec le go\u00fbt fruit\u00e9\/pomme et le caract\u00e8re doux du poivron. Les compos\u00e9s p-menth-1-en-9-al, (E)-\u03b2-ocim\u00e8ne, (Z)-2-pent\u00e8ne-1-ol et (E)-g\u00e9ranylac\u00e9tone seraient \u00e9galement li\u00e9s \u00e0 ce go\u00fbt (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26434294\/\" target=\"_blank\" rel=\"noopener\">Eggink, 2012<\/a>).<\/li>\n<li>Le poivron rouge est aussi pr\u00e9sent\u00e9 comme un l\u00e9gume au <strong>go\u00fbt amer<\/strong>. Cette amertume est due au flavono\u00efde quercetin-3-O-rhamnoside (<a href=\"https:\/\/www.jstage.jst.go.jp\/article\/fstr\/25\/1\/25_57\/_article\" target=\"_blank\" rel=\"noopener\">Fukao, 2019<\/a>).<\/li>\n<\/ul>\n<h3><strong>CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/strong><\/h3>\n<ul>\n<li>Le poivron rouge est reconnu pour sa richesse en <strong>carot\u00e9no\u00efdes<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23996968\/\" target=\"_blank\" rel=\"noopener\">Hernandez-Carrion, 2013\u00a0<\/a>; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31608259\/\" target=\"_blank\" rel=\"noopener\">Thuphairo 2019<\/a>).<\/li>\n<li>Il apporte \u00e9galement des <strong>polyph\u00e9nols<\/strong> dont l\u2019acide gallique, l\u2019acide chlorog\u00e9nique, ainsi que des flavono\u00efdes (querc\u00e9tine D-glucoside, querc\u00e9tine et kaempf\u00e9rol) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22368104\/\" target=\"_blank\" rel=\"noopener\">Hallmann, 2012<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31608259\/\" target=\"_blank\" rel=\"noopener\">Thuphairo 2019<\/a>).<\/li>\n<li>Gr\u00e2ce aux <strong>polyph\u00e9nols et carot\u00e9no\u00efdes<\/strong> qu\u2019il contient, le poivron rouge poss\u00e8de une <strong>activit\u00e9 antioxydante qui prot\u00e8ge les cellules des dommages induits par le stress oxydant<\/strong>, tels que les dommages \u00e0 l\u2019ADN.
