Une analyse a \u00e9t\u00e9 r\u00e9alis\u00e9e sur 31 cultivars de poireau afin de quantifier ces 2 compos\u00e9s. Il en ressort que la partie blanche du poireau renferme une quantit\u00e9 d\u2019isolline (15\u00a0\u00e0 53\u00a0mg\/g) et de m\u00e9thiine (3\u00a0\u00e0 16\u00a0mg\/g) plus importante que la partie verte (9\u00a0\u00e0 45\u00a0mg\/g d\u2019isolline et 1\u00a0\u00e0 10\u00a0mg\/g de m\u00e9thiine) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23020262\/\" target=\"_blank\" rel=\"noopener\">Bernaert, 2012<\/a>).<\/li>\n<li>La pr\u00e9sence de <strong>compos\u00e9s sulfur\u00e9s<\/strong>, plus pr\u00e9cis\u00e9ment de S-alkyl-cysteine sulfoxides, <strong>participe \u00e9galement au go\u00fbt du poireau<\/strong>. Ces derniers sont transform\u00e9s en compos\u00e9s sulfur\u00e9s volatils (ex\u00a0: thiosulfinates) pendant la cuisson (Ravindran, 2017). L\u2019amertume est apport\u00e9e par la pr\u00e9sence de saponines (Ravindran, 2017).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">Le poireau contient des d\u00e9riv\u00e9s du kaempf\u00e9rol et des d\u00e9riv\u00e9s de la querc\u00e9tine, dont les concentrations diff\u00e8rent d\u2019un cultivar \u00e0 un autre (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24408868\/\" target=\"_blank\" rel=\"noopener\">Soininen, 2014<\/a>).<\/li>\n<li style=\"text-align: left;\">Les compos\u00e9s ph\u00e9noliques sont pr\u00e9sents en plus grande quantit\u00e9 dans la partie verte des feuilles, en comparaison \u00e0 la partie blanche.
