Les feuilles dent\u00e9es, dont la forme varie par la profondeur des dents, sont arrang\u00e9es en rosette \u00e0 la base de la partie a\u00e9rienne. Toutes les parties sont <strong>comestibles<\/strong>\u00a0: les racines, les feuilles et les fleurs (<a href=\"https:\/\/www.aly-abbara.com\/museum\/photographie\/Pissenlit\/capitules-02.html\" target=\"_blank\" rel=\"noopener\">Abbara, 2016<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31177603\/\" target=\"_blank\" rel=\"noopener\">Grauso, 2019<\/a>).<\/li>\n<li>Ce que l\u2019on appelle la <strong>fleur<\/strong> est en fait un ensemble de<strong> fleurons ligul\u00e9s<\/strong> qui constituent un capitule jaune vif (<a href=\"https:\/\/www.aly-abbara.com\/museum\/photographie\/Pissenlit\/capitules-02.html\" target=\"_blank\" rel=\"noopener\">Abbara, 2016<\/a>).<\/li>\n<li>Le p\u00e9tiole de la vari\u00e9t\u00e9 \u00ab\u00a0Garnet Stem\u00bb est rouge, du fait de la pr\u00e9sence d\u2019<strong>anthocyanes<\/strong> (polyph\u00e9nols de la famille des flavono\u00efdes)\u00a0: Cyanidin-3-glucoside, Cyanidin-3-(\u201d-malonyl)-glucoside (I-1) et (I-2) et Peonidin-3-(6\u201d-malonyl)-glucoside (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29802721\/\" target=\"_blank\" rel=\"noopener\">Gomez, 2018<\/a>).<\/li>\n<li>Les feuilles contiennent une <strong>forte teneur en chlorophylle\u00a0a et\u00a0b<\/strong>, leur conf\u00e9rant leur couleur verte (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29802721\/\" target=\"_blank\" rel=\"noopener\">Gomez, 2018<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00e9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li>Une \u00e9tude a mis en \u00e9vidence la pr\u00e9sence de plusieurs <strong>polyph\u00e9nols<\/strong> dans les fleurs de pissenlit, dont l\u2019acide gallique (44,14\u00a0\u00b5g\/g de mati\u00e8re s\u00e8che), la rutine (18,66\u00a0\u00b5g\/g de mati\u00e8re s\u00e8che), le resv\u00e9ratrol (274,92\u00a0\u00b5g\/g de mati\u00e8re s\u00e8che), l\u2019acide vanillique (82,88\u00a0\u00b5g\/g de mati\u00e8re s\u00e8che) et l\u2019acide sinapique (593,04\u00a0\u00b5g\/g de mati\u00e8re s\u00e8che) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24177700\/\" target=\"_blank\" rel=\"noopener\">Lopez-Garcia, 2013<\/a>). On y retrouve \u00e9galement des<strong> flavones<\/strong>\u00a0: la lut\u00e9oline et du chryoeriol (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30875865\/\" target=\"_blank\" rel=\"noopener\">Milek, 2019<\/a>).<\/li>\n<li>Le taraxast\u00e9rol (triterp\u00e8ne) a \u00e9galement \u00e9t\u00e9 isol\u00e9 du pissenlit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23727181\/\" target=\"_blank\" rel=\"noopener\">Liu, 2013<\/a>). Celui-ci aurait des effets <strong>anti-inflammatoires<\/strong> et <strong>antioxydants<\/strong>, qui pourrait notamment lui permettre d\u2019\u00eatre b\u00e9n\u00e9fique dans certaines conditions telles que le foie endommag\u00e9 par l\u2019alcool, une alimentation riche en lipides (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30344887\/\" target=\"_blank\" rel=\"noopener\">Xu, 2018<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/33035580\/\" target=\"_blank\" rel=\"noopener\">Li, 2020<\/a>), le <strong>cancer de l\u2019estomac<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32701378\/\" target=\"_blank\" rel=\"noopener\">Chen, 2020<\/a>) et l\u2019<strong>inflammation du c\u00f4lon<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31410133\/\" target=\"_blank\" rel=\"noopener\">Che, 2019<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30927736\/\" target=\"_blank\" rel=\"noopener\">Chen, 2019<\/a>).<\/li>\n<li>Les feuilles de pissenlit contiennent des <strong>acides organiques<\/strong> dont, du plus au moins abondant, l\u2019acide malique, l\u2019acide malonique, l\u2019acide tartarique, l\u2019acide citrique, l\u2019acide quinique, l\u2019acide succinique, l\u2019acide ac\u00e9tique et l\u2019acide formique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31177603\/\" target=\"_blank\" rel=\"noopener\">Grauso, 2019<\/a>).<\/li>\n<li>Tout comme les fleurs, les feuilles renferment \u00e9galement des <strong>polyph\u00e9nols<\/strong> tels que des flavono\u00efdes (lu\u00e9toline et d\u00e9riv\u00e9s, d\u00e9riv\u00e9s de querc\u00e9tine) et des acides ph\u00e9noliques (acide caf\u00e9ique et d\u00e9riv\u00e9s caffeoyl, acide chicorique) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29548293\/\" target=\"_blank\" rel=\"noopener\">Flores-Oceloti, 2018<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31177603\/\" target=\"_blank\" rel=\"noopener\">Grauso, 2019<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30875865\/\" target=\"_blank\" rel=\"noopener\">Milek, 2019<\/a>).<\/li>\n<li>Les feuilles contiennent aussi des <strong>carot\u00e9no\u00efdes<\/strong>, comme le \u03b2-carot\u00e8ne, la lut\u00e9ine et la violaxanthine. En revanche, la teneur en chlorophylle et en carot\u00e9no\u00efde d\u00e9pend de la vari\u00e9t\u00e9 et de la localisation de la culture (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29802721\/\" target=\"_blank\" rel=\"noopener\">Gomez, 2018<\/a>).<\/li>\n<li>La pr\u00e9sence de polyph\u00e9nols et de carot\u00e9no\u00efdes conf\u00e8re au pissenlit une <strong>activit\u00e9 antioxydante<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29802721\/\" target=\"_blank\" rel=\"noopener\">Gomez, 2018<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31443195\/\" target=\"_blank\" rel=\"noopener\">Aremu, 2019<\/a>), qui est plus importante pour les feuilles que pour les fleurs (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30875865\/\" target=\"_blank\" rel=\"noopener\">Milek, 2019<\/a>)<\/li>\n<li>La lut\u00e9oline et les d\u00e9riv\u00e9s de l\u2019acide caf\u00e9ique et caf\u00e9oylquinique ont montr\u00e9 un <strong>effet antiviral<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29548293\/\" target=\"_blank\" rel=\"noopener\">Flores-Oceloti, 2018<\/a>).<\/li>\n<li>La lut\u00e9oline serait \u00e9galement un <strong>antidiab\u00e9tique<\/strong> en inhibant l\u2019\u03b1-glucosidase qui emp\u00eache la digestion des glucides (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29254644\/\" target=\"_blank\" rel=\"noopener\">Choi, 2018<\/a>).<\/li>\n<li>De plus, l\u2019acide chicorique, le taxast\u00e9rol, l\u2019acide chlorog\u00e9nique et les sesquiterp\u00e8nes lactones contenus dans le pissenlit permettent aussi de <strong>lutter contre le diab\u00e8te de type\u00a02<\/strong>. Les sesquiterp\u00e8nes lactones sont g\u00e9n\u00e9ralement extraits des racines, mais sont aussi contenus dans les feuilles du pissenlit, tels que l\u2019acide taraxinique et l\u2019acide \u03b2-D glucopyranoside (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28012278\/\" target=\"_blank\" rel=\"noopener\">Wirngo, 2016<\/a>).<\/li>\n<li>Les composants principaux identifi\u00e9s dans un extrait \u00e0 l\u2019hexane des feuilles de pissenlit sont le phytol, le lupeol, l\u2019ac\u00e9tate de taraxasteryl, le \u03b2-sitosterol, l\u2019\u03b1-amyrin, le \u03b2-amyrin et l\u2019ac\u00e9tate de cycloartenol (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28902635\/\" target=\"_blank\" rel=\"noopener\">Ivanov, 2108<\/a>).
