Cet arbre fruitier est originaire d\u2019Asie (<a href=\"https:\/\/www.wiley.com\/en-us\/Horticultural+Reviews%2C+Volume+34-p-9780470171530\" target=\"_blank\" rel=\"noopener\">Janick, 2010<\/a>).<\/li>\n<li>Il existe de nombreuses vari\u00e9t\u00e9s, comme la Spring Lady\u00ae Merspri, May Crest\u00ae Minastar cov, Conquise cov, qui sont principalement implant\u00e9es en Occitanie (DRAAF Occitanie, 2015).<\/li>\n<\/ul>\n<h3>CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul>\n<li>La p\u00eache a une <strong>chair juteuse<\/strong>, <strong>douce<\/strong> et <strong>savoureuse<\/strong> (<a href=\"https:\/\/www.researchgate.net\/publication\/316565093_Phenolic_sugar_and_acid_profiles_and_the_antioxidant_composition_in_the_peel_and_pulp_of_peach_fruits\" target=\"_blank\" rel=\"noopener\">Saidani, 2017<\/a>).<\/li>\n<li>Tant pour la p\u00eache jaune que la p\u00eache blanche, le principal <strong>pigment<\/strong> responsable de la coloration rouge de la peau est la <strong>cyanidine<\/strong> (polyph\u00e9nol ), et plus particuli\u00e8rement la cyanidin-3-glucoside. D\u2019ailleurs, c\u2019est un des pigments que nous retrouvons le plus souvent dans certains <strong>fruits rouges<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23617716\/\" target=\"_blank\" rel=\"noopener\">Ravaglia, 2013<\/a>).<\/li>\n<li>La peau de la p\u00eache jaune est moyennement \u00e9paisse et moyennement dure. Sa chair est jaune fonc\u00e9, rouge au creux, ferme, et sa texture est fine (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21361290\/\" target=\"_blank\" rel=\"noopener\">Cantin, 2011<\/a>).<\/li>\n<li>Sa croissance d\u00e9pend de son <strong>apport en eau<\/strong>. Celui-ci a un impact sur la qualit\u00e9 de la p\u00eache, et notamment sur le c\u00f4t\u00e9 charnu de la chair (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23227166\/\" target=\"_blank\" rel=\"noopener\">Eldem, 2012<\/a>).<\/li>\n<li>La <strong>saveur<\/strong> de la p\u00eache d\u00e9pend d\u2019un \u00e9quilibre d\u00e9licat de<strong> sucres<\/strong>, d\u2019<strong>acides<\/strong>, de <strong>compos\u00e9s ph\u00e9noliques<\/strong> et de compos\u00e9s d\u2019<strong>ar\u00f4mes<\/strong>, avec un certain nombre de facteurs suppl\u00e9mentaires, tels que la texture de la pulpe, qui influencent \u00e9galement la qualit\u00e9 per\u00e7ue (<a href=\"https:\/\/www.ishs.org\/ishs-article\/713_63\" target=\"_blank\" rel=\"noopener\">Predieri, 2006<\/a>).<\/li>\n<li>La distribution des<strong> lactones<\/strong> est diff\u00e9rente dans la peau et dans la pulpe de la p\u00eache : plus leur cha\u00eene de carbone est longue, moins on en trouve dans la peau (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308814606004237\" target=\"_blank\" rel=\"noopener\">Aubert, 2007<\/a>). Ces compos\u00e9s ont un r\u00f4le important en tant que <strong>pr\u00e9curseurs de saveur<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/14518956\/\" target=\"_blank\" rel=\"noopener\">Aubert, 2003<\/a>).<\/li>\n<\/ul>\n<h3>CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li>Une \u00e9tude sur des cultivars de p\u00eache contenant des quantit\u00e9s importantes d\u2019<strong>acides ph\u00e9noliques<\/strong> et de flavono\u00efdes a montr\u00e9 des <strong>activit\u00e9s antioxydantes<\/strong> relativement plus \u00e9lev\u00e9es que celles des nectarines (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/25775157\/\" target=\"_blank\" rel=\"noopener\">Zhao, 2015<\/a>).<\/li>\n<li>La concentration en compos\u00e9s ph\u00e9noliques est plus \u00e9lev\u00e9e dans la <strong>peau<\/strong> des p\u00eaches jaunes que dans leur <strong>pulpe<\/strong>. Les flavonols ont \u00e9t\u00e9 exclusivement trouv\u00e9s dans la peau de la p\u00eache (<a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/epdf\/10.1111\/j.1745-4557.2012.00452.x\" target=\"_blank\" rel=\"noopener\">Scordino, 2012<\/a> ; <a href=\"https:\/\/www.researchgate.net\/publication\/316565093_Phenolic_sugar_and_acid_profiles_and_the_antioxidant_composition_in_the_peel_and_pulp_of_peach_fruits\" target=\"_blank\" rel=\"noopener\">Saidani, 2017<\/a>). La peau de la p\u00eache jaune renferme une quantit\u00e9 importante de <strong>polyph\u00e9nols<\/strong> (jusqu\u2019\u00e0 276 mg\/kg pour la p\u00eache jaune Riesi de Silice) (<a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/epdf\/10.1111\/j.1745-4557.2012.00452.x\" target=\"_blank\" rel=\"noopener\">Scordino, 2012<\/a>).
