La patate douce peut \u00eatre de couleur orange, jaune, blanche, rouge ou violette. Les<strong> compos\u00e9s ph\u00e9noliques<\/strong> et les <strong>carot\u00e9no\u00efdes<\/strong> sont responsables des diff\u00e9rentes couleurs de chair et de peau (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31289641\/\" target=\"_blank\" rel=\"noopener\">Neela, 2019<\/a>).<\/li>\n<\/ul>\n<h3>CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul>\n<li>La coloration violette est notamment due \u00e0 la pr\u00e9sence de dix <strong>anthocyanes rouges<\/strong> et de leurs <strong>glucosides <\/strong>li\u00e9s (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24837917\/\" target=\"_blank\" rel=\"noopener\">Zhao, 2014<\/a>).<\/li>\n<li>Les <strong>carot\u00e9no\u00efdes<\/strong> et notamment le \u03b2-carot\u00e8ne sont les <strong>pigments<\/strong> responsables de la couleur orange de la chair et de la peau de la patate douce (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31289641\/\" target=\"_blank\" rel=\"noopener\">Neela, 2019<\/a>).<\/li>\n<li>Durant la cuisson, le saccharose, le glucose et le fructose pr\u00e9sents dans la patate douce sont transform\u00e9s en maltose, ce qui lui conf\u00e8re son <strong>go\u00fbt sucr\u00e9<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28298685\/\" target=\"_blank\" rel=\"noopener\">Lebot, 2017<\/a>).<\/li>\n<\/ul>\n<h3>CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li>Les principaux <strong>compos\u00e9s ph\u00e9noliques<\/strong> identifi\u00e9s dans la patate douce sont les anthocyanes dont les principaux sont de types cyanidine, et les acides ph\u00e9noliques, tels que l\u2019acide caf\u00e9ique, l\u2019acide monocaf\u00e9oylquinique (acide chlorog\u00e9nique), l\u2019acide dicaf\u00e9oylquinique et l\u2019acide tricaf\u00e9oylquinique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21948980\/\" target=\"_blank\" rel=\"noopener\">Karna, 2011<\/a>).<\/li>\n<li>La concentration des <strong>compos\u00e9s ph\u00e9noliques<\/strong> augmente avec le traitement thermique de la patate douce (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22101780\/\" target=\"_blank\" rel=\"noopener\">Dincer, 2011<\/a>).<\/li>\n<li>Une \u00e9quipe chinoise a caract\u00e9ris\u00e9 les profils ph\u00e9noliques et les <strong>propri\u00e9t\u00e9s anticanc\u00e9reuses<\/strong> de six vari\u00e9t\u00e9s de patates douces de diff\u00e9rentes couleurs. Des teneurs \u00e9lev\u00e9es d\u2019hyperoside, d&rsquo;acide f\u00e9rulique et d&rsquo;acide caf\u00e9ique ont \u00e9t\u00e9 observ\u00e9es dans toutes ces vari\u00e9t\u00e9s.
