Les variations de couleur de la chair sont caus\u00e9es par l<strong>&lsquo;accumulation de pigments carot\u00e9no\u00efdes<\/strong> tels que le lycop\u00e8ne (rouge), les xanthophylles et le \u03b2-carot\u00e8ne (jaune), et le prolycop\u00e8ne et le \u03b2-carot\u00e8ne (orange) (<a href=\"https:\/\/journals.plos.org\/plosone\/article?id=10.1371\/journal.pone.0223441\" target=\"_blank\" rel=\"noopener\">Subburaj, 2019<\/a>).<\/li>\n<li>Le lycop\u00e8ne est aussi un pr\u00e9curseur de certains <strong>compos\u00e9s volatils<\/strong> intervenants dans l\u2019<strong>ar\u00f4me de past\u00e8que<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31263475\/\" target=\"_blank\" rel=\"noopener\">Ilahy, 2019<\/a>).<\/li>\n<li>La concentration en lycop\u00e8ne varie significativement en fonction du cultivar (<a href=\"https:\/\/www.researchgate.net\/publication\/227708005_Lycopene_content_antioxidant_capacity_and_colour_attributes_of_selected_watermelon_Citrullus_lanatus_Thunb_Mansfeld_cultivars_grown_in_India\" target=\"_blank\" rel=\"noopener\">Nagal, 2012<\/a>).<\/li>\n<li>La couleur et les motifs de l\u2019\u00e9corce de la past\u00e8que sont de couleur verte, allant d\u2019une couleur p\u00e2le \u00e0 une couleur plus fonc\u00e9e (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16489140\/\" target=\"_blank\" rel=\"noopener\">Gusmini, 2006<\/a>). Elle d\u00e9pend de la maturit\u00e9 du fruit : lorsqu\u2019elle est <strong>immature<\/strong>, elle est de couleur <strong>blanche<\/strong> et ne contient que des<strong> traces de carot\u00e9no\u00efdes<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31263475\/\" target=\"_blank\" rel=\"noopener\">Ilahy, 2019<\/a>).<\/li>\n<li>Trente-deux compos\u00e9s volatils ont \u00e9t\u00e9 identifi\u00e9s comme \u00e9tant responsables de l\u2019<strong>odeur de la past\u00e8que<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31667212\/\" target=\"_blank\" rel=\"noopener\">Mendoza-Enano, 2019<\/a>), dont les principaux sont non cycliques, tels que : le g\u00e9ranial, le n\u00e9ral, le 6-m\u00e9thyl-5-hepten-2-one, le 2,6-dim\u00e9thylhept-5-1-al, le 2,3-epoxygeranial, le (E,E)-pseudoionone, le g\u00e9ranyl ac\u00e9tone et le farn\u00e9syl ac\u00e9tone, d\u00e9riv\u00e9s du lycop\u00e8ne et d\u2019autres t\u00e9traterp\u00e9no\u00efdes non cycliques (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/15826071\/\" target=\"_blank\" rel=\"noopener\">Lewinsohn, 2005<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">Le <strong>lycop\u00e8ne<\/strong>, qui constitue 84 \u00e0 97 % des carot\u00e9no\u00efdes totaux des past\u00e8ques \u00e0 chair rouge, serait impliqu\u00e9 dans la<strong> pr\u00e9vention des cancers et des maladies cardiovasculaires<\/strong> (<a href=\"https:\/\/journals.plos.org\/plosone\/article?id=10.1371\/journal.pone.0223441\" target=\"_blank\" rel=\"noopener\">Subburaj, 2019<\/a>).<\/li>\n<li style=\"text-align: left;\">Le lycop\u00e8ne a des<strong> effets anti-ath\u00e9roscl\u00e9rotiques, antioxydants, anti-inflammatoires, antihypertenseurs et antiplaquettaires<\/strong>.
