Le lycop\u00e8ne est le principal <strong>carot\u00e9no\u00efde<\/strong> de la pulpe de la <strong>papaye \u00e0 chair rouge<\/strong>, tandis que le \u03b2-carot\u00e8ne et la \u03b2-cryptoxanthine sont les principaux <strong>carot\u00e9no\u00efdes<\/strong> de la pulpe de <strong>papaye \u00e0 chair jaune<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30651061\/\" target=\"_blank\" rel=\"noopener\">Shen, 2019<\/a>).<\/li>\n<li>Pendant la maturation, la couleur de la peau de la papaye \u00e0 chair rouge passe du vert au jaune, et celle de sa chair du blanc au rouge, en raison de la <strong>d\u00e9gradation rapide<\/strong> de la <strong>chlorophylle<\/strong> et de l&rsquo;apparition de <strong>carot\u00e9no\u00efdes<\/strong> tels que la lut\u00e9ine et le \u03b2-carot\u00e8ne (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30651061\/\" target=\"_blank\" rel=\"noopener\">Shen, 2019<\/a>).<\/li>\n<li>Les principaux<strong> compos\u00e9s volatils<\/strong> de la papaye appartiennent \u00e0 la famille des <strong>esters<\/strong> et des<strong> terp\u00e8nes<\/strong> comme le linalol et l\u2019isothiocyanate de benzyle (<a href=\"https:\/\/1library.co\/document\/zkejgxez-tendencias-publicaciones-relacion-aroma-papaya.html\" target=\"_blank\" rel=\"noopener\">Pino, 2019<\/a>).<\/li>\n<li>Parmi les cent trente-sept composants aromatiques identifi\u00e9s dans le fruit de papaye Red Maradol, vingt-cinq sont consid\u00e9r\u00e9s comme les plus actifs et contribuent \u00e0 l<strong>\u2019ar\u00f4me typique<\/strong> de la papaye (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24176322\/\" target=\"_blank\" rel=\"noopener\">Pino, 2014<\/a>).
