Leur concentration diminue de la quatri\u00e8me \u00e0 la huiti\u00e8me semaine suivant floraison, puis augmente de la huiti\u00e8me \u00e0 la douzi\u00e8me semaine (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22144032\/\" target=\"_blank\" rel=\"noopener\">Su, 2012<\/a>).<\/li>\n<li>Selon une \u00e9tude men\u00e9e sur 2 cultivars de nectarines, les <strong>nectarines m\u00fbres<\/strong> qui ont la <strong>plus forte densit\u00e9<\/strong> ont des niveaux significativement plus \u00e9lev\u00e9s de sucres (jusqu\u2019\u00e0 40 %) et de lactones (jusqu\u2019\u00e0 3 fois) et sont donc jug\u00e9es <strong>plus douces et plus aromatiques<\/strong> que celles qui ont une densit\u00e9 moins importante. Leur teneur en vitamine C est plus importante \u00e9galement lorsqu\u2019elles sont m\u00fbres et de plus forte densit\u00e9 (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31253296\/\" target=\"_blank\" rel=\"noopener\">Aubert, 2019<\/a>).<\/li>\n<li>Une autre \u00e9tude a montr\u00e9 que le niveau de saccharose dans les nectarines jaunes augmente de mani\u00e8re significative avec la maturation, tandis que les niveaux d\u2019acidit\u00e9 titrables, dont l\u2019acide citrique, diminuent de mani\u00e8re significative (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/14518956\/\" target=\"_blank\" rel=\"noopener\">Aubert, 2003b<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">La nectarine est une source importante de <strong>polyph\u00e9nols aux propri\u00e9t\u00e9s antioxydantes<\/strong>.
