Son \u00e9piderme est recouvert d\u2019une surface hydrophobe \u00e0 l\u2019aspect mat, compos\u00e9e de la <strong>cuticule<\/strong> et d\u2019une <strong>cire \u00e9picuticulaire<\/strong>. Plus cette surface hydrophobe est \u00e9paisse, plus le fruit garde ses qualit\u00e9s physiques et nutritives au cours de la r\u00e9colte et du stockage (<a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1111\/j.1365-2621.1985.tb13421.x\" target=\"_blank\" rel=\"noopener\">Sapers, 1985<\/a>).<\/li>\n<li>La peau (\u00e9piderme + surface hydrophobe) est <strong>bleue<\/strong> et la <strong>chair blanc jaun\u00e2tre<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26266408\/\" target=\"_blank\" rel=\"noopener\">Michalska, 2015<\/a>).<\/li>\n<li>La couleur bleue de la peau est due \u00e0 la pr\u00e9sence <strong>d\u2019anthocyanes<\/strong>. Au moins 14 anthocyanes et 3 anthocyanes ac\u00e9tyl\u00e9es ont \u00e9t\u00e9 quantifi\u00e9es, la delphidine 3-galactoside, la petunidin 3-galactoside et la malvidin 3-galactoside \u00e9tant les plus repr\u00e9sent\u00e9es (<a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/jsfa.1885\" target=\"_blank\" rel=\"noopener\">Cho, 2004<\/a>). L\u2019<strong>acide chlorog\u00e9nique<\/strong>, lui aussi pr\u00e9sent, est un co-pigment qui intensifie la couleur des anthocyanes (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/0031942290854118\" target=\"_blank\" rel=\"noopener\">Mazza, 1990<\/a>).<\/li>\n<li>\u00c0 l\u2019inverse, \u00ab l\u2019absence de couleur \u00bb de la chair est caract\u00e9ris\u00e9e par la quasi-absence d\u2019anthocyanes (<a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1111\/j.1365-2621.2004.tb13651.x?casa_token=4T8OjcgY2w4AAAAA:b28kkg50xiNsxz43tjZcZ1agu6SA4za0r41MLMiGgRYtNpmMv3F4j0EVYk9sFOCfNYtkAL13LIx5yqI\" target=\"_blank\" rel=\"noopener\">Lee, 2006<\/a>).<\/li>\n<li>Pendant sa maturation, la myrtille devient <strong>de moins en moins acide<\/strong>, avec une acidit\u00e9 titrable qui diminue. L\u2019acide malique est l\u2019acide organique pr\u00e9dominent, responsables de l\u2019acidit\u00e9 du fruit (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308814608000587\" target=\"_blank\" rel=\"noopener\">Castrej\u00f3n, 2008<\/a>).<\/li>\n<li>La teneur en <strong>proanthocyanidines<\/strong>, responsable du go\u00fbt amer des fruits immatures, <strong>diminue<\/strong> aussi avec le m\u00fbrissement (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22086422\/\" target=\"_blank\" rel=\"noopener\">Zifkin, 2012<\/a>).<\/li>\n<li>La myrtille mature a finalement un <strong>go\u00fbt sucr\u00e9<\/strong>, dont l\u2019intensit\u00e9 varie en fonction des cultivars (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28598508\/\" target=\"_blank\" rel=\"noopener\">Mennella, 2017<\/a>). Ce go\u00fbt sucr\u00e9 est d\u00fb \u00e0 la pr\u00e9sence notamment de <strong>sucrose<\/strong>, mais aussi de <strong>fructose, galactose et glucose<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30708258\/\" target=\"_blank\" rel=\"noopener\">Montecchiarini, 2018<\/a>).<\/li>\n<li>Concernant <strong>l\u2019ar\u00f4me<\/strong> de la myrtille, plus de <strong>120 compos\u00e9s volatiles<\/strong> ont \u00e9t\u00e9 r\u00e9pertori\u00e9s (Sater, 2020). Parmi eux, le 1-penten-3-ol, l\u2019hexanal, le (E)-2-hexenal, le (E)-2-hexen-1-ol, et le linalool auraient des r\u00f4les significatifs. Pendant la maturation, la quantit\u00e9 moyenne de l\u2019ensemble des compos\u00e9s volatils augmente (<a href=\"https:\/\/journals.ashs.org\/hortsci\/view\/journals\/hortsci\/48\/7\/article-p835.xml\" target=\"_blank\" rel=\"noopener\">Gilbert, 2013<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li>La myrtille contient des <strong>polyph\u00e9nols<\/strong> : <strong>flavono\u00efdes<\/strong> (proanthocyanidines et flavonols), <strong>acides ph\u00e9noliques<\/strong> (acide gallique, syringique, vanillique et acides hydroxycinnamiques) et d\u00e9riv\u00e9s des <strong>stilb\u00e8nes<\/strong>. La teneur en polyph\u00e9nol peut aller jusqu\u2019\u00e0 304 mg\/100 g de fruit frais, en fonction du cultivar et de la maturit\u00e9. Ils sont majoritairement pr\u00e9sents au niveau des <strong>couches externes<\/strong> (la peau et juste sous l\u2019\u00e9piderme). Seulement une faible quantit\u00e9 est retrouv\u00e9e dans la chair (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26266408\/\" target=\"_blank\" rel=\"noopener\">Michalska, 2015<\/a>).<\/li>\n<li>Alors que la teneur en anthocyanes augmente avec la maturit\u00e9, les teneurs en proanthocyanidines, flavonols et acides hydroxycinnamiques, une famille d\u2019acide ph\u00e9nolique, diminuent (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0308814608000587\" target=\"_blank\" rel=\"noopener\">Castrej\u00f3n, 2008<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22086422\/\" target=\"_blank\" rel=\"noopener\">Zifkin, 2012<\/a>). Le fruit mature contient donc majoritairement des <strong>anthocyanes<\/strong> dont la teneur peut atteindre 495 mg\/100 g de fruit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26266408\/\" target=\"_blank\" rel=\"noopener\">Michalska, 2015<\/a>).<\/li>\n<li>Les <strong>polyph\u00e9nols<\/strong> pr\u00e9sents ont une activit\u00e9 antioxydante et protectrice, qui serait impliqu\u00e9e dans de nombreux effets b\u00e9n\u00e9fiques sur la sant\u00e9.
