Il repr\u00e9sente l&rsquo;esp\u00e8ce la plus importante dans les pays m\u00e9diterran\u00e9ens (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0304423807003597\" target=\"_blank\" rel=\"noopener\">Ercisli, 2008<\/a>).<\/li>\n<li style=\"text-align: left;\">Il y a<strong> trois esp\u00e8ces de m\u00fbrier principales<\/strong> : noir (<em>Morus nigra<\/em>), rouge (<em>Morus rubra<\/em>) et blanc (<em>Morus alba<\/em>) (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0304423807003597\" target=\"_blank\" rel=\"noopener\">Ercisli, 2008<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>Les fruits les plus color\u00e9s sont <strong>riches en compos\u00e9s ph\u00e9noliques<\/strong>, tels que les flavono\u00efdes, dont les anthocyanes, et les carot\u00e9no\u00efdes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21121077\/\" target=\"_blank\" rel=\"noopener\">Imran, 2010<\/a>).<\/li>\n<li>Les <strong>anthocyanes<\/strong>, principalement le cyanidine-3-glucoside et le cyanidine-3-rutoside, sont les pigments responsables de la couleur rouge-noir des m\u00fbres noires (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24425885\/\" target=\"_blank\" rel=\"noopener\">Fazaeli, 2013<\/a> ; <a href=\"https:\/\/www.cabdirect.org\/cabdirect\/abstract\/20183027455\" target=\"_blank\" rel=\"noopener\">Soeroso, 2017<\/a>).<\/li>\n<li>Le mannose, le rhamnose, l\u2019acide glucuronique, le galactose, l&rsquo;arabinose et l\u2019acide galacturonique seraient les <strong>sucres<\/strong> pr\u00e9sents dans les m\u00fbres noires.
