<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30565377\/\" target=\"_blank\" rel=\"noopener\">Cefali, 2019<\/a>).<\/li>\n<li>Le profil des <strong>substances volatiles<\/strong> \u00e9voluerait selon la maturation des m\u00fbres de ronce :\n<ul>\n<li><strong>\u00c0 l\u2019\u00e9tat immature<\/strong>, la m\u00fbre de ronce de couleur verte renferme le cis-3-hex\u00e8ne-1-ol, associ\u00e9 \u00e0 l&rsquo;ar\u00f4me herbac\u00e9 et d&rsquo;agrumes, et le 2-heptanone.<\/li>\n<li><strong>En d\u00e9but de maturation<\/strong>, la m\u00fbre de ronce, devenue de couleur rouge, contient de l&rsquo;ester hexylique d&rsquo;acide ac\u00e9tique et du 2-heptanol, associ\u00e9s \u00e0 un ar\u00f4me amer et fruit\u00e9.<\/li>\n<li><strong>En fin de maturation<\/strong>, elle est noire et le 2-heptanone et le 2-octanone (li\u00e9 \u00e0 l\u2019ar\u00f4me d\u2019huile v\u00e9g\u00e9tale) seraient responsables de l&rsquo;ar\u00f4me de fruits frais (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/33477940\/\" target=\"_blank\" rel=\"noopener\">Padilla-Jimenez, 2019<\/a>).<\/li>\n<\/ul>\n<\/li>\n<li>Selon la situation g\u00e9ographique, la composition aromatique varie l\u00e9g\u00e8rement (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/15853402\/\" target=\"_blank\" rel=\"noopener\">Wang, 2005<\/a>).<\/li>\n<li>Il y aurait une corr\u00e9lation positive entre la pr\u00e9sence des <strong>compos\u00e9s ph\u00e9noliques<\/strong> totaux des m\u00fbres de ronce et leur <strong>go\u00fbt acide et astringent<\/strong>. Les procyanidines, l\u2019acide f\u00e9rulique et l\u2019acide chlorog\u00e9nique seraient notamment responsables du go\u00fbt astringent (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29508396\/\" target=\"_blank\" rel=\"noopener\">Pinto, 2018<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">Le <strong>profil ph\u00e9nolique<\/strong> de deux cultivars de m\u00fbres de ronce, Loch Ness et Chester Thornless, a \u00e9t\u00e9 \u00e9tudi\u00e9. Trente compos\u00e9s ph\u00e9noliques abondants ont \u00e9t\u00e9 identifi\u00e9s. Les principaux \u00e9taient l\u2019acide chlorog\u00e9nique, l\u2019acide caf\u00e9ique, l\u2019acide cinnamique, l\u2019acide f\u00e9rulique et l\u2019acide ellagique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29508396\/\" target=\"_blank\" rel=\"noopener\">Pinto, 2018<\/a>).<\/li>\n<li style=\"text-align: left;\">L\u2019acide chlorog\u00e9nique pr\u00e9sente plusieurs propri\u00e9t\u00e9s b\u00e9n\u00e9fiques pour la sant\u00e9 dont des effets <a href=\"https:\/\/aprifel-pp.mentalworks.biz\/fr\/article-dossier\/les-antioxydants-dans-lorigine-alimentaire\/\">antioxydants<\/a>, antibact\u00e9riens, h\u00e9pato-protecteurs, cardio-protecteurs, anti-inflammatoires, neuro-protecteurs, anti-ob\u00e9sit\u00e9, antiviraux, antimicrobiens et anti-hypertension (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29080460\/\" target=\"_blank\" rel=\"noopener\">Naveed, 2018<\/a>).<\/li>\n<li style=\"text-align: left;\">De m\u00eame, l\u2019acide caf\u00e9ique, l\u2019acide f\u00e9rulique, l\u2019acide cinnamique et l\u2019acide ellagique pr\u00e9sentent des propri\u00e9t\u00e9s antioxydantes, anti-inflammatoires, mais aussi anti-canc\u00e9reuses (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28230764\/\" target=\"_blank\" rel=\"noopener\">Adisakwattana, 2017<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27903226\/\" target=\"_blank\" rel=\"noopener\">Habtemariam, 2017<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29847844\/\" target=\"_blank\" rel=\"noopener\">R\u00edos,\u00a02018<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30235459\/\" target=\"_blank\" rel=\"noopener\">Zdu\u0144ska,\u00a02018<\/a>).<\/li>\n<li style=\"text-align: left;\">Ces fruits contiennent \u00e9galement des <strong>flavono\u00efdes<\/strong>, dont des anthocyanes, qui leur conf\u00e8rent des <a href=\"https:\/\/aprifel-pp.mentalworks.biz\/fr\/article-dossier\/les-antioxydants-dans-lorigine-alimentaire\/\">propri\u00e9t\u00e9s antioxydantes<\/a>.
