La vari\u00e9t\u00e9 de melon Agretis, commun\u00e9ment appel\u00e9e melon sauvage, pr\u00e9sente un m\u00e9socarpe mince et de minuscules graines (<a href=\"https:\/\/www.phcogrev.com\/sites\/default\/files\/PharmacognRev-14-27-28.pdf\" target=\"_blank\" rel=\"noopener\">Kapoor, 2020<\/a>).<\/li>\n<li>Son diam\u00e8tre varie de 4 \u00e0 200 cm et son poids de 50 g \u00e0 15 kg. Il peut avoir une<strong> forme ronde, ovale, piriforme ou fusiforme<\/strong>. Son \u00e9corce est sinueuse, avec ou sans rayures, de couleur verte, jaune, blanche, orange, rouge ou grise. Sa pulpe peut \u00eatre de couleur <strong>orange, verte, cr\u00e8me ou blanche<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18322855\/\" target=\"_blank\" rel=\"noopener\">Nu\u00f1ez-Palenius, 2008<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22648880\/\" target=\"_blank\" rel=\"noopener\">Paris, 2012<\/a>).<\/li>\n<li style=\"text-align: justify;\">Les <strong>carot\u00e9no\u00efdes<\/strong> et la <strong>chlorophylle<\/strong> sont reconnus comme \u00e9tant les pigments majeurs de l\u2019\u00e9corce du melon (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/20815398\/\" target=\"_blank\" rel=\"noopener\">Tadmor, 2010<\/a>).<\/li>\n<li>Une \u00e9tude a permis d\u2019identifier plus d\u2019une <strong>cinquantaine de compos\u00e9s volatils<\/strong> et cinquante compos\u00e9s semi-volatils, dont quinze compos\u00e9s odorants actifs, majoritairement des esters (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23561221\/\" target=\"_blank\" rel=\"noopener\">Lignou, 2013<\/a>).<\/li>\n<li>Les cultivars Reticulatus et Cantaloup sont les plus <strong>parfum\u00e9s<\/strong> et <strong>aromatiques<\/strong>, alors que le cultivar Casabas est r\u00e9put\u00e9 pour \u00eatre inodore, mais tr\u00e8s doux (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22648880\/\" target=\"_blank\" rel=\"noopener\">Paris, 2012<\/a>).<\/li>\n<li>La <strong>chair du fruit<\/strong>, quel que soit le cultivar, est fade lorsque le fruit est immature et devient plus sucr\u00e9e au cours de la maturation (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22648880\/\" target=\"_blank\" rel=\"noopener\">Paris, 2012<\/a>). Le saccharose est le principal sucre qui s&rsquo;accumule pendant la maturation (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29018473\/\" target=\"_blank\" rel=\"noopener\">Argyris, 2017<\/a>).<\/li>\n<li>Les <strong>attributs sensoriels<\/strong> caract\u00e9ristiques du melon sont sa fermet\u00e9, son croquant et sa jutosit\u00e9.
