Les cultivars \u00ab\u00a0Arka Anmol\u00a0\u00bb \u00e0 peau jaune auraient des teneurs en carot\u00e9no\u00efdes apr\u00e8s maturation plus \u00e9lev\u00e9es, majoritairement en <strong>\u03b2-carot\u00e8ne<\/strong> et en <strong>violaxanthine<\/strong>, alors que les cultivars \u00e0 peau rouge \u00ab\u00a0Janardhan Pasand\u00a0\u00bb auraient des teneurs en <strong>anthocyanes<\/strong> plus \u00e9lev\u00e9es, principalement en cyanidin-3-O-monoglucosides et en p\u00e9onidine-3-O-glucosides (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28643121\/\" target=\"_blank\" rel=\"noopener\">Karanjalker, 2018<\/a>).<\/li>\n<li>Une \u00e9quipe indienne a caract\u00e9ris\u00e9 les profils en pigments de la peau des mangues lors de la maturation. Le \u03b2-carot\u00e8ne, la violaxanthine et le cis-\u03b2-carot\u00e8ne \u00e9taient les principaux pigments <strong>carot\u00e9no\u00efdes<\/strong> qui augmentaient de mani\u00e8re significative pendant la maturation, tandis que les pigments <strong>anthocyanes<\/strong> des groupes cyanidine, p\u00e9onidine, p\u00e9tunidine, delphinidine et p\u00e9largonidine ne montraient aucune diff\u00e9rence. De plus, une d\u00e9gradation de la <strong>chlorophylle<\/strong> a \u00e9t\u00e9 observ\u00e9e lors du m\u00fbrissement des fruits (Ranganath, 2018).<\/li>\n<li>La <strong>fermet\u00e9<\/strong> du fruit est \u00e9galement un indicateur de la maturit\u00e9 du fruit\u00a0: moins le fruit est ferme, plus il est proche de sa maturit\u00e9 (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22778629\/\" target=\"_blank\" rel=\"noopener\">Zakaria, 2012<\/a>).<\/li>\n<li>L\u2019<strong>ar\u00f4me de la mangue<\/strong> du cultivar \u00ab\u00a0Alphonso\u00bb est caract\u00e9ris\u00e9 par 26\u00a0mol\u00e9cules volatiles (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23122101\/\" target=\"_blank\" rel=\"noopener\">Chidley, 2013<\/a>), dont 2 appartenant \u00e0 la famille des furanones : le furan\u00e9ol et le m\u00e9sifurane (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23911730\/\" target=\"_blank\" rel=\"noopener\">Kulkarni, 2013a<\/a>). En effet, compar\u00e9 aux autres fruits, c\u2019est la mangue qui aurait la plus forte concentration en ces 2 composants (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23911730\/\" target=\"_blank\" rel=\"noopener\">Kulkarni, 2013a<\/a>).<\/li>\n<li>La <strong>saveur de la mangue<\/strong> serait attribu\u00e9e \u00e0 des compos\u00e9s volatils tels que les esters fruit\u00e9s, dont le 1-octanol, le (E, Z)-2,6-nonadi\u00e9nal et la \u03b3-octalactone. D\u2019autre part, la saveur \u00ab\u00a0verte\u00a0\u00bb, ressemblant \u00e0 la t\u00e9r\u00e9benthine, serait corr\u00e9l\u00e9e \u00e0 des teneurs \u00e9lev\u00e9es en terp\u00e8nes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30977646\/\" target=\"_blank\" rel=\"noopener\">Sung<\/a>, 2019) qui augmentent au cours de la maturation (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23122101\/\" target=\"_blank\" rel=\"noopener\">Chidley, 2013<\/a>).<\/li>\n<li>Le <strong>go\u00fbt de la mangue<\/strong> peut varier en fonction de la zone g\u00e9ographique et du climat dans lesquels le fruit est cultiv\u00e9 (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23911730\/\" target=\"_blank\" rel=\"noopener\">Kulkarni, 2013b<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACTERISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li>Une \u00e9quipe italienne a cherch\u00e9 \u00e0 caract\u00e9riser la teneur en <strong>polyph\u00e9nols<\/strong> et en <strong>carot\u00e9no\u00efdes<\/strong> de la pulpe de mangue. Les polyph\u00e9nols identifi\u00e9s \u00e9taient la mangif\u00e9rine, l&rsquo;acide gallique, les gallotannins, la querc\u00e9tine, l&rsquo;isoquerc\u00e9tine, l&rsquo;acide ellagique et la \u03b2-glucogalline. L&rsquo;acide gallique \u00e9tant le compos\u00e9 ph\u00e9nolique le plus repr\u00e9sent\u00e9 dans cette fraction (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28531110\/\" target=\"_blank\" rel=\"noopener\">Lauricella, 2017<\/a>).<\/li>\n<li>La pulpe des mangues pr\u00e9senterait d\u2019autres polyph\u00e9nols comme des <strong>acides ph\u00e9noliques<\/strong> dont l\u2019acide chlorog\u00e9nique, vanillique, et f\u00e9rulique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28786116\/\" target=\"_blank\" rel=\"noopener\">Vithana, 2018<\/a>).<\/li>\n<li>La pulpe de mangue est particuli\u00e8rement riche en <strong>carot\u00e9no\u00efdes<\/strong>. Jusqu&rsquo;\u00e0 25\u00a0carot\u00e9no\u00efdes ont \u00e9t\u00e9 identifi\u00e9s tels que la <strong>provitamine\u00a0A (ou \u03b2-carot\u00e8ne)<\/strong>, la <strong>lut\u00e9ine<\/strong> et l&rsquo;<strong>\u03b1-carot\u00e8ne<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28531110\/\" target=\"_blank\" rel=\"noopener\">Lauricella, 2017<\/a>\u00a0; <a href=\"https:\/\/link.springer.com\/article\/10.1007\/s13197-018-3392-7\" target=\"_blank\" rel=\"noopener\">Ranganath, 2018<\/a>).<\/li>\n<li>Les <strong>carot\u00e9no\u00efdes<\/strong> et les <strong>compos\u00e9s ph\u00e9noliques<\/strong> contenus dans la mangue auraient des effets <strong>antioxydants et anti-inflammatoires<\/strong>, et conf\u00e9reraient des propri\u00e9t\u00e9s b\u00e9n\u00e9fiques sur la sant\u00e9, en limitant le d\u00e9veloppement des maladies cardiovasculaires, du diab\u00e8te de type\u00a02, des syndromes m\u00e9taboliques et du cancer par exemple (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28531110\/\" target=\"_blank\" rel=\"noopener\">Lauricella, 2017<\/a>; <a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/9781119534167.ch6\" target=\"_blank\" rel=\"noopener\">Wall\u2010Medrano, 2019<\/a>).<\/li>\n<li>La teneur en <strong>antioxydants<\/strong> (acide ascorbique et ph\u00e9nols totaux) et les facteurs fonctionnels de la mangue varient en fonction des cultivars.
