Cette concentration varie selon les cultivars de litchi, les \u00e9tapes de d\u00e9veloppement et les stimuli environnementaux (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24466010\/\" target=\"_blank\" rel=\"noopener\">La\u00ef, 2014<\/a>).<\/li>\n<li><strong>L\u2019oxyde de rose<\/strong>, une substance aromatique appartenant aux monoterp\u00e8nes, conf\u00e8re au litchi son odeur (<a href=\"https:\/\/ifst.onlinelibrary.wiley.com\/doi\/abs\/10.1111\/jfpp.14003\" target=\"_blank\" rel=\"noopener\">Tang, 2019<\/a>).<\/li>\n<li><strong>31\u00a0composants<\/strong> participant activement \u00e0 l\u2019ar\u00f4me du litchi \u00ab\u00a0Sweetheart\u00a0\u00bb ont \u00e9t\u00e9 identifi\u00e9s. Le m\u00e9thional (pomme de terre cuite) et le g\u00e9raniol (sucr\u00e9, floral) sont les odorants les plus puissants, suivis par le furan\u00e9ol (sucr\u00e9, caramel), le len\u00e9rol (floral, sucr\u00e9), le trisulfure de dim\u00e9thyle (l\u00e9gume conserv\u00e9, sulfure), le linalol (floral), le (E, Z) -2,6 nonadienal (concombre) et le n\u00e9rolidol (m\u00e9tal, huile de s\u00e9same) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29567218\/\" target=\"_blank\" rel=\"noopener\">Feng, 2018<\/a>).<\/li>\n<li>De plus, le profil de saveur du litchi \u00ab\u00a0Sweetheart\u00a0\u00bb a \u00e9t\u00e9 d\u00e9crit par analyse sensorielle. Les <strong>notes florales, fruits tropicaux, p\u00eache\/abricot et miel<\/strong> ont obtenu des scores relativement \u00e9lev\u00e9s (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29567218\/\" target=\"_blank\" rel=\"noopener\">Feng, 2018<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACTERISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li>Ce fruit est une <strong>excellente source de nutriments<\/strong>, \u00e0 savoir la vitamine\u00a0C et les polyph\u00e9nols (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23547657\/\" target=\"_blank\" rel=\"noopener\">Pandey, 2017<\/a>).<\/li>\n<li>Le <strong>profil ph\u00e9nolique de la pulpe de litchi<\/strong> de 13\u00a0vari\u00e9t\u00e9s diff\u00e9rentes a fait l\u2019objet d\u2019une \u00e9tude. La pulpe de litchi contient 101,51\u00a0\u00e0 259,18\u00a0mg d\u2019\u00e9quivalent en acide gallique pour 100\u00a0g de fruit (polyph\u00e9nols totaux) et 39,43\u00a0\u00e0 129,86\u00a0mg d\u2019\u00e9quivalent en cat\u00e9chine pour 100\u00a0g de fruit (flavono\u00efdes totaux). Cependant, la concentration en ces compos\u00e9s varie en fonction de la vari\u00e9t\u00e9 de litchi (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23194511\/\" target=\"_blank\" rel=\"noopener\">Zhang, 2013<\/a>).<\/li>\n<li>Les <strong>principaux compos\u00e9s ph\u00e9noliques<\/strong> de la pulpe de litchi \u00ab\u00a0Chinensis\u00a0\u00bb sont la querc\u00e9tine 3-O-rutinoside-7-O-\u03b1-L-rhamnosidase (querc\u00e9tine 3-rut-7-rha), la rutine et l&rsquo;\u00e9picat\u00e9chine.
