<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27553517\/\" target=\"_blank\" rel=\"noopener\">Neto, 2017<\/a>).<\/li>\n<li>Les <strong>laitues rouges<\/strong> seraient \u00e9galement plut\u00f4t riches en <strong>lut\u00e9ine<\/strong>, <strong>violaxanthine<\/strong> et <strong>lactucaxanthine<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29433225\/\" target=\"_blank\" rel=\"noopener\">Kim, 2018<\/a>).<\/li>\n<li>Contrairement \u00e0 celles qui sont rouges ou rouges\/vertes, les laitues <strong>vertes<\/strong> ne contiennent <strong>pas<\/strong> <strong>de<\/strong> <strong>cyanidine<\/strong> (anthocyane) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29433225\/\" target=\"_blank\" rel=\"noopener\">Kim, 2018<\/a>).<\/li>\n<li>Lorsqu\u2019on coupe une laitue, il se produit au niveau des tissus de la coupure une r\u00e9action de <strong>brunissement<\/strong> li\u00e9es \u00e0 l\u2019apparition de<strong> pigments jaunes-bruns<\/strong>. Cette r\u00e9action est g\u00e9n\u00e9ralement attribu\u00e9e \u00e0 <strong>l\u2019oxydation<\/strong> des <strong>polyph\u00e9nols<\/strong> par l\u2019enzyme polyph\u00e9nol oxydase (PPO), mais il semblerait qu\u2019il y ait \u00e9galement des compos\u00e9s <strong>sesquiterp\u00e9niques<\/strong>, et plus particuli\u00e8rement des <strong>lettuc\u00e9nines<\/strong>, qui participeraient \u00e0 cette r\u00e9action (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24818869\/\" target=\"_blank\" rel=\"noopener\">Mai, 2014<\/a>).<\/li>\n<li>Le <strong>go\u00fbt<\/strong> l\u00e9g\u00e8rement <strong>amer<\/strong> de la laitue serait conf\u00e9r\u00e9 aux <strong>lactones<\/strong> <strong>sesquiterp\u00e8nes<\/strong>, dont majoritairement le 8-d\u00e9oxylactucine-15-sulfate, alors que le <strong>glucose<\/strong> serait le sucre le plus fortement corr\u00e9l\u00e9 \u00e0 la <strong>perception de douceur<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26616925\/\" target=\"_blank\" rel=\"noopener\">Chadwick, 2016<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACTERISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">Les <strong>pigments<\/strong> pr\u00e9sents dans les laitues ont des <strong>effets b\u00e9n\u00e9fiques<\/strong> pour la sant\u00e9 (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27553517\/\" target=\"_blank\" rel=\"noopener\">Neto, 2017<\/a>) :\n<ul>\n<li>Les <strong>anthocyanes<\/strong> en raison de leurs propri\u00e9t\u00e9s <strong>antioxydantes<\/strong> ont des effets sur <strong>l\u2019hypertension<\/strong>, les <strong>troubles de la vision<\/strong>, les <strong>infections<\/strong> <strong>microbiennes<\/strong> et la <strong>prolif\u00e9ration de cellules canc\u00e9reuses<\/strong> ;<\/li>\n<li>la <strong>chlorophylle<\/strong> pr\u00e9sente des effets <strong>anticarcinog\u00e8nes<\/strong> et <strong>d\u00e9toxifiants<\/strong> ;<\/li>\n<li>les <strong>carot\u00e9no\u00efdes<\/strong> ont des propri\u00e9t\u00e9s <strong>antioxydantes<\/strong> et ont des effets <strong>protecteurs sur le syst\u00e8me immunitaire<\/strong>. Ils prot\u00e8gent \u00e9galement les pigments chlorophylliens de la photo-oxydation sous lumi\u00e8re excessive.<\/li>\n<\/ul>\n<\/li>\n<li style=\"text-align: left;\">Riche en <strong>fibres<\/strong>, en <strong>fer<\/strong>, en <strong>folate<\/strong> (vitamine B9), en <strong>vitamine<\/strong> C et en <strong>compos\u00e9s bioactifs<\/strong>, la laitue pr\u00e9senterait des <strong>activit\u00e9s anti-inflammatoires<\/strong>, <strong>hypocholest\u00e9rol\u00e9miantes et antidiab\u00e9tiques.<\/strong> Parmi les compos\u00e9s bioactifs, les acides ph\u00e9noliques (acide caf\u00e9ique, acide chlorog\u00e9nique) et les flavono\u00efdes (querc\u00e9tine, kaempf\u00e9rol, anthocyanes et flavones lut\u00e9oline) ont \u00e9t\u00e9 identifi\u00e9s (<a href=\"https:\/\/www.infona.pl\/resource\/bwmeta1.element.elsevier-3c8f7d91-0fc8-324c-b09f-3e3606fbdab5\" target=\"_blank\" rel=\"noopener\">Kim, 2016<\/a>).<\/li>\n<li style=\"text-align: left;\">La teneur en compos\u00e9s bioactifs des laitues varie en fonction des cultivars (<a href=\"https:\/\/www.infona.pl\/resource\/bwmeta1.element.elsevier-3c8f7d91-0fc8-324c-b09f-3e3606fbdab5\" target=\"_blank\" rel=\"noopener\">Kim, 2016<\/a>).<\/li>\n<li style=\"text-align: left;\">Cependant des <strong>compos\u00e9s ph\u00e9noliques<\/strong> sont communs aux cultivars de laitue : les d\u00e9riv\u00e9s d&rsquo;acide caf\u00e9ique, dont les acides chicorique, chlorog\u00e9nique, caf\u00e9oyltartarique et caf\u00e9oylmalique ; et les glycosides de flavonol dont principalement la querc\u00e9tine 3-O-malonylglucoside, la querc\u00e9tine 3-O-glucoside et la querc\u00e9tine 3-O-glucuronide (<a href=\"https:\/\/www.nature.com\/articles\/s41598-019-39287-y\" target=\"_blank\" rel=\"noopener\">Gurdon, 2019<\/a>).<\/li>\n<\/ul>\n","references":"<ul>\n<li style=\"text-align: left;\">Agence nationale de s\u00e9curit\u00e9 sanitaire de l\u2019alimentation, de l\u2019environnement et du travail.
