Elle varie \u00e9galement en fonction du cultivar (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28315000\/\" target=\"_blank\" rel=\"noopener\">Zorenc, 2017<\/a>).<\/li>\n<li><strong>Une caract\u00e9ristique importante de la groseille est sa capacit\u00e9 \u00e0 rester longtemps sur les branches.<\/strong> <strong>M\u00eame apr\u00e8s la maturation, les baies ne tombent pas et, souvent, non seulement elles conservent leur saveur mais elles s&rsquo;am\u00e9liorent en raison de l&rsquo;accumulation de sucres<\/strong> (<a href=\"https:\/\/www.researchgate.net\/profile\/Alexander-Deryabin\/publication\/326104178_DEPENDENCE_OF_THE_COLD_RESISTANCE_OF_POTATO_PLANTS_FROM_THE_CHARACTERISTICS_OF_CARBOHYDRATE_METABOLISM\/links\/5b8e502b92851c6b7ebb70fa\/DEPENDENCE-OF-THE-COLD-RESISTANCE-OF-POTATO-PLANTS-FROM-THE-CHARACTERISTICS-OF-CARBOHYDRATE-METABOLISM.pdf#page=860\" target=\"_blank\" rel=\"noopener\">Verzhuk, 2018<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: left;\">\n<li>Il a \u00e9t\u00e9 d\u00e9montr\u00e9 que <strong>ces baies r\u00e9duisent l&rsquo;incidence de plusieurs maladies comme l&rsquo;hypertension, les maladies cardiovasculaires, l\u2019ost\u00e9oporose, le diab\u00e8te, le cancer et les maladies inflammatoires<\/strong> <a href=\"https:\/\/www.scipress.com\/IJPPE.6.30\" target=\"_blank\" rel=\"noopener\">(Frum, 2017)<\/a>.<\/li>\n<li>Les avantages les plus importants pour la sant\u00e9 de ces baies sont li\u00e9s aux compos\u00e9s ph\u00e9noliques (<a href=\"https:\/\/www.researchgate.net\/publication\/308097352_Phenolic_composition_of_fruits_from_different_cultivars_of_red_and_black_raspberries_grown_in_Poland\" target=\"_blank\" rel=\"noopener\">Kula, 2016<\/a>).<\/li>\n<li>La groseille contient majoritairement des compos\u00e9s ph\u00e9noliques (&gt;\u00a085\u00a0%). Les d\u00e9riv\u00e9s d\u2019acide hydroxycinammique en repr\u00e9sentent 1\u00a0\u00e0 6\u00a0% et a \u00e9galement \u00e9t\u00e9 d\u00e9tect\u00e9e dans la groseille (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21401099\/\" target=\"_blank\" rel=\"noopener\">Gavrilova, 2011<\/a>).<\/li>\n<li>Les extraits obtenus \u00e0 partir de deux types de baies\u00a0: groseille rouge et framboise, ont r\u00e9v\u00e9l\u00e9s la pr\u00e9sence de compos\u00e9s ph\u00e9noliques tels que l&rsquo;acide gallique, la cat\u00e9chine, l\u2019acide syringique, l\u2019acide cinnamique, l\u2019acide chlorog\u00e9nique, l\u2019acide f\u00e9rulique, la rutine et la querc\u00e9tine (<a href=\"https:\/\/www.scipress.com\/IJPPE.6.30\" target=\"_blank\" rel=\"noopener\">Frum, 2017<\/a>).<\/li>\n<li>Simultan\u00e9ment, au cours des trois derni\u00e8res semaines de maturation, la teneur en polyph\u00e9nols a l\u00e9g\u00e8rement diminu\u00e9 dans les cultivars rouges, roses et blancs, tandis que le rapport sucre\/acide a augment\u00e9.
