Le fruit pourpre est natif de l\u2019Am\u00e9rique Tropicale, alors que le jaune serait le r\u00e9sultat d\u2019une mutation de la vari\u00e9t\u00e9 pourpre (hybride entre le pourpre et une autre esp\u00e8ce de fruit de la passion) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23572775\/\" target=\"_blank\" rel=\"noopener\">Kishore, 2011<\/a>).<\/li>\n<li style=\"text-align: left;\">La culture du fruit de la passion se trouve principalement en Am\u00e9rique latine et en Inde, notamment dans les r\u00e9gions sud et nord-est (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23572775\/\" target=\"_blank\" rel=\"noopener\">Kishore, 2011<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES PHYSIQUES et ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>Les fruits de la passion <strong>violets<\/strong> ou pourpres contiennent une <strong>pigmentation<\/strong> en anthocyanes <strong>forte<\/strong> tandis que les fruits <strong>jaunes<\/strong> n\u2019ont <strong>pas de pigmentation<\/strong> anthocyanique (<a href=\"https:\/\/www.scielo.br\/j\/cta\/a\/nx4JCszkBK7yrcLcsd3L4SD\/?lang=en\" target=\"_blank\" rel=\"noopener\">Araujo, 2017<\/a>).<\/li>\n<li>La pulpe du fruit de la passion, comestible avec un go\u00fbt <strong>sucr\u00e9<\/strong>, contient jusqu\u2019\u00e0 25\u00a0% de petites graines, comestibles elles-aussi (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23535311\/\" target=\"_blank\" rel=\"noopener\">Lourith, 2013<\/a>).<\/li>\n<li>L\u2019ar\u00f4me unique du fruit de la passion est attribu\u00e9 \u00e0 quelques compos\u00e9s volatils qui se d\u00e9gradent avec l\u2019augmentation de la temp\u00e9rature (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23572775\/\" target=\"_blank\" rel=\"noopener\">Kishore, 2011<\/a>).<\/li>\n<li>Leur <strong>ar\u00f4me intense<\/strong> et <strong>exotique<\/strong>, et par cons\u00e9quent leur saveur forte, proviennent d\u2019une composition volatile complexe, comprenant principalement des esters, puis des alcools et des terp\u00e8nes (<a href=\"https:\/\/www.hindawi.com\/journals\/jchem\/2017\/3497216\/\" target=\"_blank\" rel=\"noopener\">Mamede, 2017<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18613689\/\" target=\"_blank\" rel=\"noopener\">Tapp, 2008<\/a>).<\/li>\n<li>Le butanoate d\u2019\u00e9thyle, l\u2019hexanoate d\u2019\u00e9thyle, l\u2019ac\u00e9tate de propyl\u00e9e, le 3-hexen-1-ol, le carbonate de di\u00e9thyle, l\u2019ac\u00e9tate de butyle et l\u2019alpha-terpin\u00e9ol ont montr\u00e9 une importance odorif\u00e9rante \u00e9lev\u00e9e dans le fruit de la passion \u00e0 maturation (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28740317\/\" target=\"_blank\" rel=\"noopener\">Janzantti, 2017<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li>Le fruit de la passion comprend des <strong>composants biologiquement actifs<\/strong> tels que les polyph\u00e9nols, les terp\u00e8nes, les peptides, les polysaccharides et les fibres alimentaires (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0924224416303533\" target=\"_blank\" rel=\"noopener\">Correa, 2016<\/a>).<\/li>\n<li>La <strong>graine<\/strong> du fruit de la passion est riche en <strong>acide linol\u00e9ique<\/strong> (65\u00a0%) et en <strong>fibres<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23535311\/\" target=\"_blank\" rel=\"noopener\">Lourith, 2013<\/a>), dont la pectine est l\u2019une des principales (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23088514\/\" target=\"_blank\" rel=\"noopener\">de Queiroz, 2012<\/a>).<\/li>\n<li>Les <strong>polyph\u00e9nols<\/strong> ont \u00e9t\u00e9 d\u00e9tect\u00e9s comme les <strong>antioxydants<\/strong> les plus abondants (33-286,60\u00a0mg d\u2019\u00e9quivalent d\u2019acide gallique\/100\u00a0g de poids frais) des fruits tropicaux, et la <strong>plus forte teneur<\/strong> a \u00e9t\u00e9 trouv\u00e9e chez les <strong>fruits de la passion<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27374527\/\" target=\"_blank\" rel=\"noopener\">Septembre-Malaterre, 2016<\/a>).<\/li>\n<li>Le piceatannol (famille des stilb\u00e8nes) serait un polyph\u00e9nol caract\u00e9ristique du fruit de la passion.
