Au cours de la maturation, le pH augmente alors que l\u2019acidit\u00e9 et la fermet\u00e9 du fruit diminuent (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23265501\/\" target=\"_blank\" rel=\"noopener\">Ornelas-Paz, 2013<\/a>).<\/li>\n<li>Son ar\u00f4me est constitu\u00e9 principalement d\u2019un m\u00e9lange complexe d\u2019esters, d\u2019ald\u00e9hydes, d\u2019alcools et de compos\u00e9s soufr\u00e9s (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24587754\/\" target=\"_blank\" rel=\"noopener\">Mishra, 2014<\/a>). A ce jour, plus de 350 compos\u00e9s volatils ont \u00e9t\u00e9 identifi\u00e9s dans la fraise, mais seule une douzaine contribuent significativement \u00e0 l\u2019ar\u00f4me de ce fruit, en particulier le furan\u00e9ol (4-hydroxy-2,5-dim\u00e9thyl-3-(2H)\u2013furanone) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26993618\/\" target=\"_blank\" rel=\"noopener\">Song, 2016<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29603275\/\" target=\"_blank\" rel=\"noopener\">Yan, 2018<\/a>).<\/li>\n<li>Les esters, tels les butanoates et les hexanoates de m\u00e9thyle et d\u2019\u00e9thyle, seraient \u00e9galement d\u2019importants contributeurs \u00e0 l\u2019ar\u00f4me de ce fruit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24587754\/\" target=\"_blank\" rel=\"noopener\">Mishra, 2014<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29070959\/\" target=\"_blank\" rel=\"noopener\">Cruz-Rus, 2017<\/a>).<\/li>\n<li>Le linalol (monoterp\u00e9nol) a \u00e9t\u00e9 associ\u00e9 \u00e0 un ar\u00f4me fleuri et sucr\u00e9 tandis que le furaneol et son d\u00e9riv\u00e9 m\u00e9thoxyl\u00e9 le m\u00e9sifurane (2,5-dim\u00e9thyl-4-m\u00e9thoxy-3 (2 H) -furanone) (furanones) seraient responsables des ar\u00f4mes fruit\u00e9s et caramel. D&rsquo;autres compos\u00e9s cl\u00e9s comme la \u03b3-d\u00e9calactone et la \u03b3-dod\u00e9calactone, contribuant \u00e0 l&rsquo;ar\u00f4me frais de p\u00eache, ont \u00e9t\u00e9 associ\u00e9s \u00e0 la perception de douceur accrue dans la fraise (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29070959\/\" target=\"_blank\" rel=\"noopener\">Cruz-Rus, 2017<\/a> ; <a href=\"https:\/\/ojs.openagrar.de\/index.php\/JABFQ\/article\/view\/6450\" target=\"_blank\" rel=\"noopener\">Ulrich, 2016<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29603275\/\" target=\"_blank\" rel=\"noopener\">Yan, 2018<\/a>).<\/li>\n<li>Cependant, il existe des diff\u00e9rences d\u2019ar\u00f4mes entre les multiples cultivars (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24587754\/\" target=\"_blank\" rel=\"noopener\">Mishra, 2014<\/a>).<\/li>\n<li>La maturation de la fraise entra\u00eene une accumulation de plusieurs sucres et d\u2019acides organiques en plus des compos\u00e9s volatils qui constituent son ar\u00f4me (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/14995129\/\" target=\"_blank\" rel=\"noopener\">M\u00e9nager, 2004<\/a>\u00a0; <a href=\"https:\/\/europepmc.org\/article\/agr\/ind43826680\" target=\"_blank\" rel=\"noopener\">Nunes., 2006<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/15030215\/\" target=\"_blank\" rel=\"noopener\">Kafkas,2007<\/a>\u00a0; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24523895\/\" target=\"_blank\" rel=\"noopener\">Schwieterman, 2014<\/a>).<\/li>\n<li>La petite note acidul\u00e9e est due \u00e0 la pr\u00e9sence plus ou moins importante d\u2018acides organiques, principalement les acides citrique et malique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22924969\/\" target=\"_blank\" rel=\"noopener\">Mikulic-Petkovsek, 2012<\/a>). Les principaux acides organiques ont tendance \u00e0 augmenter de fa\u00e7on irr\u00e9guli\u00e8re au cours de la maturation de la fraise (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23265501\/\" target=\"_blank\" rel=\"noopener\">Ornelas-Paz, 2013<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00e9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">Un d\u00e9nominateur commun dans la pathogen\u00e8se de la plupart des maladies inflammatoires chroniques est l&rsquo;implication du stress oxydatif, li\u00e9 \u00e0 la production de ROS (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28130090\/\" target=\"_blank\" rel=\"noopener\">Gasparrini, 2017<\/a>). <strong>Plusieurs \u00e9tudes <em>in vitro<\/em> et <em>in vivo<\/em> ont rapport\u00e9 les effets d\u2019extraits de fraise sur la suppression du stress oxydatif et du processus inflammatoire.<\/strong> Les polyph\u00e9nols contenus dans les fraises seraient responsables de ces propri\u00e9t\u00e9s b\u00e9n\u00e9fiques (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31980299\/\" target=\"_blank\" rel=\"noopener\">Battino, 2020<\/a>).<\/li>\n<li style=\"text-align: left;\">Des \u00e9tudes \u00e9pid\u00e9miologiques et cliniques d\u00e9montrent que sa consommation aigu\u00eb am\u00e9liorerait la r\u00e9ponse glyc\u00e9mique postprandiale. Dans le m\u00eame temps, <strong>un apport prolong\u00e9 am\u00e9liorerait le profil lipidique plasmatique, favorisant la sant\u00e9 cardiovasculaire<\/strong>, en particulier chez les personnes pr\u00e9sentant un risque accru de syndrome m\u00e9tabolique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26357900\/\" target=\"_blank\" rel=\"noopener\">Forbes-Hernandez, 2016<\/a>).<\/li>\n<li style=\"text-align: left;\">Pour expliquer leurs effets b\u00e9n\u00e9fiques, une grande attention a \u00e9t\u00e9 accord\u00e9e par le pass\u00e9 aux propri\u00e9t\u00e9s antioxydantes des polyph\u00e9nols de la fraise. Cependant, des recherches r\u00e9centes ont montr\u00e9 que leurs activit\u00e9s biologiques et fonctionnelles sont li\u00e9es non seulement \u00e0 la capacit\u00e9 antioxydante mais \u00e9galement \u00e0 la modulation de nombreuses voies cellulaires impliqu\u00e9es dans le m\u00e9tabolisme, la survie, la prolif\u00e9ration et les d\u00e9fenses antioxydantes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/26357900\/\" target=\"_blank\" rel=\"noopener\">Forbes-Hernandez, 2016<\/a>).<\/li>\n<li style=\"text-align: left;\">D\u2019une mani\u00e8re g\u00e9n\u00e9rale, les acides ph\u00e9noliques (acides hydroxycinnamiques et hydroxybenzo\u00efques) sont majoritaires dans la fraise, suivis des anthocyanes, des flavonols et des flavan-3-ols (<a href=\"https:\/\/europepmc.org\/article\/AGR\/IND43792118\" target=\"_blank\" rel=\"noopener\">Seeram, 2006<\/a> ; <a href=\"https:\/\/www.hevs.ch\/en\/rad-instituts\/institute-of-life-technologies\/projects\/phenolic-compounds-profile-of-strawberry-fruits-of-charlotte-cultivar-3307\" target=\"_blank\" rel=\"noopener\">Kosi\u0144ska, 2013<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30174053\/\" target=\"_blank\" rel=\"noopener\">Nowicka, 2019<\/a>).<\/li>\n<li style=\"text-align: left;\">Parmi les acides ph\u00e9noliques, l\u2019acide ellagique et les d\u00e9riv\u00e9s de l\u2019acide coumarique sont g\u00e9n\u00e9ralement pr\u00e9pond\u00e9rants. Si la pelargonidine-3-glucoside est l\u2019anthocyane majeur dans la fraise, la pr\u00e9sence de cyanidine-3-glucoside et de pelargonidine-3-acetylglucoside a \u00e9galement \u00e9t\u00e9 rapport\u00e9e (<a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/jsfa.2740640106\" target=\"_blank\" rel=\"noopener\">Bakker, 1994<\/a>\u00a0; <a href=\"https:\/\/link.springer.com\/article\/10.1007\/s00217-001-0434-5\" target=\"_blank\" rel=\"noopener\">Lopes-da-Silva, 2002<\/a>).<\/li>\n<li style=\"text-align: left;\">Parmi les autres compos\u00e9s, figurent g\u00e9n\u00e9ralement des d\u00e9riv\u00e9s de la querc\u00e9tine et du kampf\u00e9rol (flavonols), ainsi que de la cat\u00e9chine et des procyanidines (flavan-3-ols).
