apparition de la <strong>couleur<\/strong> et de la <strong>fermet\u00e9<\/strong>\u00a0;<\/li>\n<li><strong>phase\u00a03<\/strong>\u00a0: maturation et croissance des fruits, changement de couleur, ramollissement, et <strong>modification de la texture de la pulpe<\/strong> \u00e0 un \u00e9tat <strong>comestible<\/strong>.<\/li>\n<\/ul>\n<\/li>\n<li>Une \u00e9tude sur les cultivars de figues pr\u00e9sents dans le nord-est de la Turquie a mis en \u00e9vidence que la couleur du fruit varie de vert clair, pourpre clair, pourpre, pourpre fonc\u00e9 \u00e0 noir (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22618081\/\" target=\"_blank\" rel=\"noopener\">Ercisli, 2012<\/a>).<\/li>\n<li>Les <strong>anthocyanes<\/strong>, les <strong>carot\u00e9no\u00efdes<\/strong> et la <strong>chlorophylle<\/strong> sont les <strong>pigments<\/strong> d\u00e9finissant la <strong>couleur<\/strong> de sa peau. La formation d&rsquo;anthocyanes et la d\u00e9gradation de la chlorophylle dans la peau se produisent principalement au cours de la <strong>deuxi\u00e8me p\u00e9riode de croissance<\/strong> de la figue, lors de sa <strong>maturation<\/strong> et de l&rsquo;<strong>accumulation de sucres<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31122203\/\" target=\"_blank\" rel=\"noopener\">Wang, 2019<\/a>).<\/li>\n<li>Les principales <strong>anthocyanes<\/strong> dans la pulpe de la figue seraient les d\u00e9riv\u00e9s de cyanidine-3-rutinoside, de cyanidine-3-glucoside et de p\u00e9largonidine. La cyanidine-3,5-O-diglucoside et la cyanidine-O-malonyl-hexoside ont \u00e9galement \u00e9t\u00e9 identifi\u00e9es dans la peau (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31122203\/\" target=\"_blank\" rel=\"noopener\">Wang, 2019<\/a>).<\/li>\n<li>Les<strong> acides citrique et malique<\/strong> sont les acides organiques conf\u00e9rant un <strong>go\u00fbt acide<\/strong> \u00e0 la figue. Ils repr\u00e9sentent plus de 80\u00a0% des acides organiques totaux de ce fruit, tout au long de son d\u00e9veloppement et de sa maturation (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30740711\/\" target=\"_blank\" rel=\"noopener\">Lama, 2020<\/a>).<\/li>\n<li>Le <strong>degr\u00e9 de maturit\u00e9<\/strong> des figues (de cultivars diff\u00e9rents) semble avoir une<strong> influence<\/strong> significative sur leur <strong>composition chimique\u00a0<\/strong>et leur <strong>profil sensorie<\/strong>l. Les figues les <strong>moins m\u00fbres<\/strong> ont une peau plus \u00e9paisse et des notes de<strong> go\u00fbt \u00ab\u00a0vert\u00a0\u00bb <\/strong>ou<strong> \u00ab\u00a0latex\u00a0\u00bb<\/strong> plus \u00e9lev\u00e9es. Elles sont \u00e9galement plus fermes, plus granuleuses et <strong>plus am\u00e8res<\/strong>. \u00c0 l\u2019inverse, les figues <strong>plus m\u00fbres<\/strong> sont per\u00e7ues comme plus<strong> fruit\u00e9es<\/strong>, <strong>juteuses<\/strong> et plus <strong>sucr\u00e9es<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23170947\/\" target=\"_blank\" rel=\"noopener\">King, 2012<\/a>).<\/li>\n<li>La \u03b2-ionone, la 6-m\u00e9thyl-5-hept\u00e8ne-2-ol et l&rsquo;\u03b1-ionone sont des <strong>compos\u00e9s volatils<\/strong> de la famille des apocarot\u00e9no\u00efdes qui seraient responsables de l\u2019<strong>ar\u00f4me<\/strong> de la figue (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31779901\/\" target=\"_blank\" rel=\"noopener\">Nawade, 2020<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00e9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li>Les <strong>acides ph\u00e9noliques<\/strong> (en particulier l\u2019acide gallique et l\u2019acide chlorog\u00e9nique) et les <strong>flavono\u00efdes<\/strong> (en particulier la rutine, la querc\u00e9tine-3-O-rutinoside et l&rsquo;\u00e9picat\u00e9chine) sont les principaux types de compos\u00e9s phytochimiques trouv\u00e9s dans les figues fra\u00eeches. Leurs niveaux sont fortement <strong>influenc\u00e9s<\/strong> par divers facteurs tels que la <strong>couleur<\/strong>, la <strong>partie<\/strong> et la <strong>maturit\u00e9<\/strong> du fruit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30884655\/\" target=\"_blank\" rel=\"noopener\">Arvaniti, 2019<\/a>).<\/li>\n<li>Contenant des teneurs notables en<strong> m\u00e9tabolites bioactifs<\/strong> tels que les flavono\u00efdes, les acides ph\u00e9noliques, les tanins, les alcalo\u00efdes, les glycosides, les coumarines, les triterp\u00e9no\u00efdes et les st\u00e9rols, les esp\u00e8ces du genre <em>Ficus <\/em>pr\u00e9senteraient des<strong> propri\u00e9t\u00e9s antidiab\u00e9tiques<\/strong>. En effet ses compos\u00e9s bioactifs <strong>stimuleraient la s\u00e9cr\u00e9tion d&rsquo;insuline<\/strong> et, par la suite, <strong>r\u00e9duiraient la glyc\u00e9mie<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29305899\/\" target=\"_blank\" rel=\"noopener\">Deepa, 2018<\/a>).<\/li>\n<li>La<strong> capacit\u00e9 antioxydante<\/strong> des figues est fortement corr\u00e9l\u00e9e \u00e0 leur <strong>quantit\u00e9 de compos\u00e9s ph\u00e9noliques<\/strong>.
