Minor<\/em>) a \u00e9t\u00e9 \u00e9tudi\u00e9. Malgr\u00e9 leur <strong>faible teneur en lipides<\/strong>, des quantit\u00e9s notables de <strong>substances volatiles<\/strong> normalement associ\u00e9es aux acides gras insatur\u00e9s \u00e9taient pr\u00e9sentes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31000241\/\" target=\"_blank\" rel=\"noopener\">Akkad, 2019<\/a>).<\/li>\n<li>Il a \u00e9t\u00e9 d\u00e9montr\u00e9 que les<strong> compos\u00e9s volatils<\/strong> des f\u00e8ves sont des hydrocarbures aromatiques, des ald\u00e9hydes, des alcanes, des alc\u00e8nes, des alcools, des c\u00e9tones, des furannes et d\u2019autres compos\u00e9s (<a href=\"https:\/\/edepot.wur.nl\/543037\" target=\"_blank\" rel=\"noopener\">Roland, 2017<\/a>).<\/li>\n<li>Les saveurs d\u00e9sagr\u00e9ables signal\u00e9es pour les isolats de prot\u00e9ines de f\u00e8ves <strong>d\u00e9pendraient du pH.<\/strong> \u00c0 pH neutre, une saveur de pois s\u00e9ch\u00e9 a \u00e9t\u00e9 signal\u00e9e, tandis qu\u2019\u00e0 pH acide, une saveur fruit\u00e9e d\u00e9sagr\u00e9able a \u00e9t\u00e9 rapport\u00e9e (<a href=\"https:\/\/edepot.wur.nl\/543037\" target=\"_blank\" rel=\"noopener\">Roland, 2017<\/a>).<\/li>\n<li>Les f\u00e8ves ordinaires contiennent jusqu\u2019\u00e0 8-9\u00a0% de tanins, un sous-groupe de<strong> polyph\u00e9nols<\/strong> qui peut expliquer la perception de leur <strong>amertume<\/strong> (<a href=\"https:\/\/edepot.wur.nl\/543037\" target=\"_blank\" rel=\"noopener\">Roland, 2017<\/a>). La pr\u00e9sence de saponine serait aussi responsable du <strong>go\u00fbt amer<\/strong> de la f\u00e8ve (<a href=\"https:\/\/hal.archives-ouvertes.fr\/hal-01604091\" target=\"_blank\" rel=\"noopener\">Marais, 2016<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACTERISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li>Il a \u00e9t\u00e9 mis en \u00e9vidence la pr\u00e9sence de 155\u00a0m\u00e9tabolites primaires et secondaires dans la graine de f\u00e8ve, dont principalement des <strong>polyph\u00e9nols<\/strong>, des <strong>acides organiques<\/strong>, des <strong>alcalo\u00efdes<\/strong>, des <strong>terp\u00e9no\u00efdes<\/strong> et des <strong>jasmonates<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24658881\/\" target=\"_blank\" rel=\"noopener\">Abu-Reidah, 2014<\/a>).
