Leur teneur varie en fonction des cultivars, ce qui leur conf\u00e8re des couleurs allant <strong>du jaune au rouge fonc\u00e9<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27107393\/\" target=\"_blank\" rel=\"noopener\">Jin, 2016<\/a>).<\/li>\n<li>La \u00ab <strong>douceur<\/strong> \u00bb de la cerise serait due \u00e0 sa teneur en <strong>fructose <\/strong>et en<strong> glucose<\/strong>, suivi de l\u2019arabinose et du sorbitol. Quant \u00e0 son <strong>acidit\u00e9<\/strong>, elle s\u2019expliquerait par la pr\u00e9sence d\u2019<strong>acides organiques<\/strong>, principalement l\u2019acide malique, suivi de l\u2019acide ascorbique, tartrique et shikimique (<a href=\"http:\/\/www.foodnutritionresearch.com\/articles\/5\/11\/8\" target=\"_blank\" rel=\"noopener\">Legua, 2017<\/a>).<\/li>\n<li>Chez la cerise acide ou griotte, le fructose serait le sucre pr\u00e9dominant, suivi du glucose, du sorbitol et du saccharose (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/25867015\/\" target=\"_blank\" rel=\"noopener\">Alrgei, 2016<\/a>).<\/li>\n<li>La composition en polysaccharides de la paroi cellulaire de la cerise pourrait avoir une influence importante sur la fermet\u00e9 du fruit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23218373\/\" target=\"_blank\" rel=\"noopener\">Basanta, 2013<\/a>).<\/li>\n<li>Trente-et-un compos\u00e9s volatils ont \u00e9t\u00e9 isol\u00e9s dans 7 cultivars espagnols (Lory, Burlat, Brooks, Summit, Prime Giant, Van et 57), dont des acides, des alcools et des ald\u00e9hydes. Les six compos\u00e9s responsables de l\u2019ar\u00f4me de la cerise seraient le benzaldehyde (22,1 %), le benzyl alcohol (20,8 %), l\u2019eugenol (9,5 %), le nonanal (6,9 %), le trans-2-hexenal (6,8\u00a0%) et l\u2019isoamyl butyrate (5,3 %) (<a href=\"http:\/\/www.foodnutritionresearch.com\/articles\/5\/11\/8\" target=\"_blank\" rel=\"noopener\">Legua, 2017<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">Les cerises contiennent des carot\u00e9no\u00efdes, plus particuli\u00e8rement du \u03b2-carot\u00e8ne et de la lut\u00e9ine et, dans une moindre proportion, de la z\u00e9axanthine (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/20944519\/\" target=\"_blank\" rel=\"noopener\">Ferretti, 2010<\/a>).<\/li>\n<li>Les cerises (douces ou acides) contiennent une quantit\u00e9 int\u00e9ressante de polyph\u00e9nols (<a href=\"http:\/\/phenol-explorer.eu\/\" target=\"_blank\" rel=\"noopener\">Phenol Explorer<\/a>). Parmi eux, les anthocyanes ont de multiples propri\u00e9t\u00e9s :\n<ul>\n<li style=\"text-align: left;\">des propri\u00e9t\u00e9s antioxydantes et anti-inflammatoires qui favorisent la r\u00e9cup\u00e9ration apr\u00e8s l\u2019exercice et diminuent la pression art\u00e9rielle (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30160565\/\">Cook, 2019<\/a>) ;<\/li>\n<li style=\"text-align: left;\">ils pourraient \u00e9galement diminuer les concentrations sanguines de biomarqueurs li\u00e9s \u00e0 la d\u00e9gradation des muscles squelettiques et r\u00e9duire les risques de maladies cardio-m\u00e9taboliques (hypertension et dyslipid\u00e9mie) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32126807\/\" target=\"_blank\" rel=\"noopener\">Santos, 2020<\/a>) ;<\/li>\n<li style=\"text-align: left;\">ils pourraient, avec les autres compos\u00e9s ph\u00e9noliques, r\u00e9duire les risques de plusieurs maladies d\u00e9g\u00e9n\u00e9ratives, telles que les cancers et les maladies cardiaques.
