Le cassis serait <strong>une plante originaire d\u2019Europe et d\u2019Asie du Nord<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22673662\/\" target=\"_blank\" rel=\"noopener\">Gopalan, 2012<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>Les fruits sont de <strong>petites baies noires violac\u00e9es<\/strong>, avec un ar\u00f4me caract\u00e9ristique, <strong>tr\u00e8s riches en polyph\u00e9nols<\/strong>.<\/li>\n<li>Ce sont les <strong>anthocyanes<\/strong>, de la famille des flavono\u00efdes, qui donnent la <strong>couleur caract\u00e9ristique violette<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23653223\/\" target=\"_blank\" rel=\"noopener\">Chen, 2014<\/a>).<\/li>\n<li>Les cassis ont une <strong>saveur am\u00e8re et astringente<\/strong> caract\u00e9ristique (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31454085\/\" target=\"_blank\" rel=\"noopener\">Cortez, 2019<\/a>). Ce ph\u00e9nom\u00e8ne est <strong>d\u00fb \u00e0 la pr\u00e9sence de tanins<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29146325\/\" target=\"_blank\" rel=\"noopener\">Soares, 2018<\/a>).<\/li>\n<li>L&rsquo;intensit\u00e9 du go\u00fbt est d\u00e9termin\u00e9e par le degr\u00e9 moyen de polym\u00e9risation des compos\u00e9s de tanins, aussi appel\u00e9s proanthocyanidines (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31454085\/\" target=\"_blank\" rel=\"noopener\">Cortez, 2019<\/a>).<\/li>\n<li>L\u2019analyse des profils de <strong>compos\u00e9s volatils<\/strong> de six cultivars de cassis cultiv\u00e9s en Chine a montr\u00e9 la pr\u00e9sence de 166 volatils libres et 111 volatils li\u00e9s, les <strong>principaux \u00e9tant les esters et les terp\u00e9no\u00efdes<\/strong>. Les<strong> saveurs florales, fruit\u00e9es et sucr\u00e9es<\/strong> semblaient \u00eatre l&rsquo;ar\u00f4me caract\u00e9ristique de ces cultivars, r\u00e9sultant principalement de la pr\u00e9sence de 17 substances volatiles (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/29389620\/\" target=\"_blank\" rel=\"noopener\">Liu Y, 2018<\/a>).<\/li>\n<li><strong>L&rsquo;ac\u00e9tate et le 3-mercapto-1-hexanol<\/strong> sont importants dans l&rsquo;ar\u00f4me de cassis (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27265519\/\" target=\"_blank\" rel=\"noopener\">Zhu, 2016<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">Composition en <strong>polyph\u00e9nols du cassis<\/strong> :\n<ul>\n<li>Le cassis est riche en polyph\u00e9nols et notamment en <strong>anthocyanes<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23913385\/\" target=\"_blank\" rel=\"noopener\">Huo, 2013<\/a>). Les anthocyanes dominants sont la <strong>delphinidine-3-O-rutinoside et la cyanidine-3-O-rutinoside<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31134806\/\" target=\"_blank\" rel=\"noopener\">Rohrig, 2019<\/a>). Cependant, la <strong>quantit\u00e9 de ces mol\u00e9cules varie en fonction de l\u2019esp\u00e8ce et de la r\u00e9gion<\/strong> dans laquelle le cassis a \u00e9volu\u00e9 (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24011264\/\" target=\"_blank\" rel=\"noopener\">Vagiri, 2013<\/a>).<\/li>\n<li>Partant du constat que les anthocyanes <strong>peuvent inhiber la glyc\u00e9mie postprandiale<\/strong>, des chercheurs anglais ont souhait\u00e9 d\u00e9terminer les effets dose-d\u00e9pendants de l&rsquo;extrait de cassis sur la glyc\u00e9mie postprandiale. Une consommation d\u2019environ 100 g de cassis a r\u00e9duit la glyc\u00e9mie postprandiale, l&rsquo;insulin\u00e9mie et la s\u00e9cr\u00e9tion d&rsquo;incr\u00e9tine, ce qui sugg\u00e8re que la consommation de cassis<strong> peut apporter des bienfaits cardio-m\u00e9taboliques<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27764725\/\" target=\"_blank\" rel=\"noopener\">Castro-Acosta, 2016<\/a>).<\/li>\n<li>Outre les anthocyanes, <strong>sept flavonols<\/strong>, sous-groupe des flavono\u00efdes, ont \u00e9t\u00e9 identifi\u00e9s et quantifi\u00e9s dans le cassis : myricetin-3-O-rutinoside (145,5 mg), myricetin-3-O-hexoside (79,7 mg), myricetin-3-O-(6\u2033-malonyl)-glucoside (17,4 mg), kaempferol-3-O-glucoside (20,5 mg), quercetin-3-O-rutinoside (55,1 mg), quercetin-3-O-hexoside (25,8 mg) et myricetin (129,1 mg) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22761148\/\" target=\"_blank\" rel=\"noopener\">Mbeunkui, 2012<\/a>).<\/li>\n<\/ul>\n<\/li>\n<li style=\"text-align: left;\">Les cassis sont <strong>riches en acide ascorbique<\/strong> (50 \u00e0 280 mg\/100 g), ce qui, avec une teneur \u00e9lev\u00e9e en flavono\u00efdes, renforce la <strong>capacit\u00e9 antioxydante<\/strong> des baies et augmente leurs effets b\u00e9n\u00e9fiques sur la sant\u00e9 (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27764725\/\" target=\"_blank\" rel=\"noopener\">Castro\u2010Acosta, 2016<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27328984\/\" target=\"_blank\" rel=\"noopener\">Woznicki, 2017<\/a>).<\/li>\n<\/ul>\n","references":"<ul>\n<li>Agence nationale de s\u00e9curit\u00e9 sanitaire de l\u2019alimentation, de l\u2019environnement et du travail.
