Il semblerait que le bananier soit originaire des <strong>\u00eeles d\u2019Asie du Sud-Est<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24260405\/\" target=\"_blank\" rel=\"noopener\">Li, 2013<\/a>).<\/li>\n<li style=\"text-align: left;\">Les principales vari\u00e9t\u00e9s que l\u2019on retrouve pour la banane sont <strong>Enano, Morado, Valery et Macho<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24299760\/\" target=\"_blank\" rel=\"noopener\">Utrilla-Coello, 2014<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>Recouverte d\u2019une <strong>peau jaune devenant tigr\u00e9e \u00e0 maturit\u00e9<\/strong>, elle poss\u00e8de une <strong>chair tendre et sucr\u00e9e, tr\u00e8s onctueuse<\/strong> (<a href=\"https:\/\/www.banane.info\/la-banane\/varietes\/bananes-dessert\/\" target=\"_blank\" rel=\"noopener\">Association Interprofessionnelle de la Banane<\/a>).<\/li>\n<li>Des facteurs tels que l\u2019<strong>augmentation de l\u2019enzyme polyph\u00e9nol oxydase<\/strong> (PPO), <strong>le pH, la temp\u00e9rature et la disponibilit\u00e9 en oxyg\u00e8ne<\/strong> sont susceptibles de provoquer le <strong>brunissement de la banane<\/strong>. Le brunissement va affecter l&rsquo;apparence, les propri\u00e9t\u00e9s sensorielles (go\u00fbt, odeur et texture) et la valeur nutritionnelle du fruit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28265353\/\" target=\"_blank\" rel=\"noopener\">Bakare, 2016<\/a>).<\/li>\n<li>La banane est <strong>riche en amidon<\/strong>, un sucre complexe compos\u00e9 \u00e0 <strong>20 % d\u2019amylose et \u00e0 80 % d\u2019amylopectine<\/strong> (Cordenunsi-Lysenko, 2019). Au cours de la maturation, <strong>l\u2019amidon est converti en sucres simples<\/strong> (fructose, glucose et saccharose) qui <strong>conf\u00e8rent<\/strong> \u00e0 la banane <strong>son go\u00fbt sucr\u00e9<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31891784\/\">Bhuiyan, 2020<\/a>). Cette conversion permettrait de fournir de l&rsquo;\u00e9nergie aux processus responsables du changement de couleur, de la synth\u00e8se de compos\u00e9s volatils et du ramollissement de la pulpe (Cordenunsi-Lysenko, 2019).<\/li>\n<li>La<strong> teneur en amidon varie en fonction des vari\u00e9t\u00e9s<\/strong> de bananes, dont la diversit\u00e9 est tr\u00e8s grande (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31891784\/\">Bhuiyan, 2020<\/a>).<\/li>\n<li>Les <strong>compos\u00e9s aromatiques<\/strong> typiques de la banane sont <strong>produits<\/strong> pendant une courte p\u00e9riode <strong>lors de la maturation<\/strong>. Les composants volatils pr\u00e9dominants varient selon les cultivars de banane, ce qui leur donne une saveur unique. Par exemple, le 3-m\u00e9thylbutyl butanoate volatil est l&rsquo;ester pr\u00e9dominant dans le cultivar Cavendish (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30257494\/\" target=\"_blank\" rel=\"noopener\">Zhu, 2018<\/a>).<\/li>\n<li>G\u00e9n\u00e9ralement, <strong>les esters<\/strong>, tels que le butanoate d&rsquo;isoamyle, l&rsquo;ac\u00e9tate de 3-m\u00e9thylbutyle et l&rsquo;isoval\u00e9rate d&rsquo;isoamyle donnent un <strong>ar\u00f4me fruit\u00e9<\/strong> \u00e0 la banane (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30257494\/\" target=\"_blank\" rel=\"noopener\">Zhu, 2018<\/a>).<\/li>\n<li><strong>246 compos\u00e9s volatils<\/strong> ont \u00e9t\u00e9 identifi\u00e9s dans la banane, dont 112 esters, 57 alcools, 39 acides, 10 ald\u00e9hydes et 10 c\u00e9tones, mais seuls 12 compos\u00e9s contribueraient de mani\u00e8re significative \u00e0 <strong>son ar\u00f4me<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30257494\/\" target=\"_blank\" rel=\"noopener\">Zhu, 2018<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">Le polysaccharide, \u03b1-(1\u202f\u2192\u202f6)-d-glucan, est tr\u00e8s pr\u00e9sent dans la banane. Il am\u00e9liorerait le <strong>syst\u00e8me immunitaire<\/strong> en augmentant la prolif\u00e9ration ou en stimulant les cellules impliqu\u00e9es dans ce syst\u00e8me, \u00e0 savoir les lymphocytes T et les macrophages (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30502171\/\" target=\"_blank\" rel=\"noopener\">Yang, 2019<\/a>).<\/li>\n<li style=\"text-align: left;\">La peau et la pulpe de la banane pr\u00e9sentent des <strong>compos\u00e9s ph\u00e9noliques<\/strong> vari\u00e9s, tels que l\u2019acide gallique (un acide hydroxybenzo\u00efque), la cat\u00e9chine, l\u2019\u00e9picat\u00e9chine (des flavanols), les tanins et les anthocyanes. Par ailleurs, la <strong>teneur en ph\u00e9nols totaux augmente avec la maturation<\/strong> de la banane, elle est en moyenne de 7 mg\/100 g de poids frais.
