Le profil volatil montrait que les hydrocarbures sesquiterp\u00e9niques et les d\u00e9riv\u00e9s non terp\u00e9niques seraient les principaux compos\u00e9s volatils \u00e9mis par les bract\u00e9es des cultivars \u00ab violet d\u2019Hy\u00e8res \u00bb et \u00ab blanc d\u2019Oran \u00bb (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27449402\/\" target=\"_blank\" rel=\"noopener\">Dabbou, 2016<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">L&rsquo;artichaut pr\u00e9sente un grand nombre et une diversit\u00e9 de <strong>compos\u00e9s ph\u00e9noliques <\/strong>comme les monoph\u00e9nols (acides caf\u00e9ique et coumarique) et polyph\u00e9nols (5-O-caffeoylquinique, 1,5-di-O-caffeoylquinique, 3,4-di-O-caffeoylquinique et les acides 1,3-di-O-caffeoylquinique) (<a href=\"file:\/\/\/C:\/Users\/isabelleg\/Downloads\/Characterizationsixartichoke.pdf\" target=\"_blank\" rel=\"noopener\">Garc\u00eda-Mart\u00ednez, 2017<\/a>). Ces compos\u00e9s ph\u00e9noliques sont connus pour avoir une<strong> activit\u00e9 antioxydante importante<\/strong> (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6042477\/\" target=\"_blank\" rel=\"noopener\">Blanco, 2018<\/a>).<\/li>\n<li style=\"text-align: left;\">Le contenu en compos\u00e9s ph\u00e9noliques varie de fa\u00e7on importante selon la position des bract\u00e9es sur la t\u00eate d\u2019artichaut et les traitements thermiques (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24799219\/\" target=\"_blank\" rel=\"noopener\">Ruiz-Cano, 2014<\/a>).<\/li>\n<li style=\"text-align: left;\">L\u2019artichaut serait une <strong>source importante de flavono\u00efdes<\/strong>, compos\u00e9s appartenant \u00e0 la famille des polyph\u00e9nols. Les flavono\u00efdes prot\u00e9geraient contre les <strong>maladies cardiovasculaires, <\/strong>certains types de <strong>cancers,<\/strong> les <strong>troubles d\u00e9g\u00e9n\u00e9ratifs, <\/strong>l&rsquo;<strong>agr\u00e9gation plaquettaire <\/strong>et l&rsquo;<strong>ost\u00e9oporose<\/strong>. Le facteur de transcription CcMYB12 r\u00e9gulerait la biosynth\u00e8se de ces flavono\u00efdes, sp\u00e9cifiquement dans l&rsquo;inflorescence immature et les jeunes feuilles de l\u2019artichaut (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6042477\/\" target=\"_blank\" rel=\"noopener\">Blanco, 2018<\/a>).<\/li>\n<li style=\"text-align: left;\">L\u2019artichaut serait \u00e9galement une <strong>source naturelle de fibres et d&rsquo;inuline<\/strong>, un polysaccharide produit naturellement par de nombreuses plantes (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31049967\/\" target=\"_blank\" rel=\"noopener\">Rizzo, 2019<\/a>). Des chercheurs tunisiens se sont int\u00e9ress\u00e9s \u00e0 leur composition \u00e9lev\u00e9e en fibres alimentaires totales et leur faible teneur en lipides. Les fibres montraient une bonne capacit\u00e9 de r\u00e9tention d&rsquo;eau (8,17\u00a0g\/g) et une capacit\u00e9 de r\u00e9tention d&rsquo;huile \u00e9lev\u00e9e (16,17\u00a0g\/g) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27277817\/\" target=\"_blank\" rel=\"noopener\">Boubaker, 2016<\/a>).<\/li>\n<li style=\"text-align: left;\">Le profil en oligo-\u00e9l\u00e9ments et en min\u00e9raux de l\u2019artichaut est significativement influenc\u00e9 par le g\u00e9notype, la fraction de t\u00eate, la localisation et la saison (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/20954162\/\" target=\"_blank\" rel=\"noopener\">Pandino,
