une fois cueilli, il ne m\u00fbrit plus (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5066169\/\" target=\"_blank\" rel=\"noopener\">Redwan, 2016<\/a>).<\/li>\n<li>Sa\u00a0<strong>couleur jaune orang\u00e9e provient d\u2019un petit nombre de carot\u00e9no\u00efdes<\/strong>\u00a0: 66,90 \u00b5g pour 100 g de \u03b2-carot\u00e8ne, et \u00e9volue en fonction du degr\u00e9 de maturation du fruit (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/15453683\/\" target=\"_blank\" rel=\"noopener\">Brat, 2004<\/a>\u00a0;\u00a0<a href=\"https:\/\/preprod.aprifel.com\/fr\/fiche-nutritionnelle\/ananas\/?tab=composition_analyse_nutritionnelles#vitamines_cru\">\u00c9tude Aprifel \u2013 Anses 2017-2019<\/a>).<\/li>\n<li>D\u2019autres carot\u00e9no\u00efdes, tels que la violaxanthine, et divers esters de (9Z)-violaxanthine seraient responsables de la couleur de la chair de l\u2019ananas (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31882077\/\" target=\"_blank\" rel=\"noopener\">Steingass, 2020<\/a>).<\/li>\n<li>Le go\u00fbt et la qualit\u00e9 de l\u2019ananas d\u00e9pendent principalement de facteurs tels que les sucres, les acides organiques (essentiellement acides citriques et L-malique), les acides amin\u00e9s, les compos\u00e9s aromatiques ainsi que la fermet\u00e9. Cependant,\u00a0<strong>le go\u00fbt de l\u2019ananas est influenc\u00e9 principalement par la concentration totale en sucres et la nature de ceux-ci, \u00e0 savoir le saccharose, le fructose et le glucose<\/strong>\u00a0(<a href=\"https:\/\/www.researchgate.net\/publication\/230798675_Expression_Patterns_Activities_and_Carbohydrate-Metabolizing_Regulation_of_Sucrose_Phosphate_Synthase_Sucrose_Synthase_and_Neutral_Invertase_in_Pineapple_Fruit_during_Development_and_Ripening\" target=\"_blank\" rel=\"noopener\">Zhang, 2012<\/a>\u00a0;\u00a0<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31233691\/\" target=\"_blank\" rel=\"noopener\">Ivanova, 2019<\/a>).<\/li>\n<li>La teneur en sucres, qui varie tout au long du d\u00e9veloppement du fruit, peut \u00eatre affect\u00e9e par des facteurs environnementaux tels que la temp\u00e9rature, les pr\u00e9cipitations et la fertilisation (<a href=\"http:\/\/agritrop.cirad.fr\/578995\/\" target=\"_blank\" rel=\"noopener\">Dorey, 2016<\/a>).<\/li>\n<li>Comme pour les glucides, le taux des acides organiques varie sensiblement selon l\u2019\u00e9tat de maturit\u00e9 du fruit (<a href=\"https:\/\/bmcplantbiol.biomedcentral.com\/articles\/10.1186\/1471-2229-12-240\" target=\"_blank\" rel=\"noopener\">Koia, 2012<\/a>). Ce sont notamment des acides citriques.<\/li>\n<li>Parmi les 280 compos\u00e9s volatils identifi\u00e9s dans l\u2019ananas, seuls quelques-uns contribuent \u00e0 son ar\u00f4me, dont le 4-hydroxy-2,5-dimethyl-3(2H)-furanone, l\u2019\u00e9thyl 2-methylpropanoate, l\u2019\u00e9thyl 2-m\u00e9thylbutanoate, le m\u00e9thyl 2-m\u00e9thylbutanoate et le 1-(E,Z)-3,5-undecatriene (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/16041138\/\" target=\"_blank\" rel=\"noopener\">Tokitomo, 2005<\/a>).<\/li>\n<\/ul>\n<h3><b>CARACT\u00c9RISTIQUES DE COMPOSITION (<\/b>hors macronutriments, vitamines et min\u00e9raux<b>)<\/b><\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"font-weight: 400;\" aria-level=\"1\">Composition en polyph\u00e9nols :\n<ul>\n<li><strong>Contenant une quantit\u00e9 importante de polyph\u00e9nols<\/strong>\u00a0et notamment d\u2019acide gallique, l\u2019ananas poss\u00e8derait une<strong>\u00a0action b\u00e9n\u00e9fique contre le stress oxydatif li\u00e9 \u00e0 l\u2019ob\u00e9sit\u00e9<\/strong>, en prot\u00e9geant les globules rouges et les cellules pr\u00e9-adipeuses, et par cons\u00e9quent<strong>\u00a0am\u00e9liorerait les capacit\u00e9s antioxydantes de l\u2019organisme<\/strong>\u00a0(<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27374527\/\" target=\"_blank\" rel=\"noopener\">Septembre-Malaterre, 2016<\/a>).<\/li>\n<li>L\u2019ananas contient de la myric\u00e9tine, un compos\u00e9 de la famille des flavonols qui poss\u00e8de une forte activit\u00e9 antioxydante. Une consommation quotidienne de ce compos\u00e9 (120,5 \u00b1 95,7 mg) serait li\u00e9e \u00e0 une\u00a0<strong>diminution de la pr\u00e9valence du diab\u00e8te de type 2<\/strong>\u00a0(<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6769509\/\" target=\"_blank\" rel=\"noopener\">Yao, 2019<\/a>).<\/li>\n<li>Une \u00e9quipe chinoise a quantifi\u00e9 et compar\u00e9 les teneurs en acide ph\u00e9nolique, en \u03b2-carot\u00e8ne et en acide ascorbique (AA) de dix-sept vari\u00e9t\u00e9s d\u2019ananas, ainsi que leurs activit\u00e9s antioxydantes. La vari\u00e9t\u00e9 \u00ab MD-2 \u00bb, aussi appel\u00e9e \u00ab Rompine \u00bb, pr\u00e9sentait les teneurs les plus \u00e9lev\u00e9es en AA et en polyph\u00e9nols totaux, mais une teneur plus faible en \u03b2-carot\u00e8ne. Elle pr\u00e9sentait \u00e9galement la plus grande diversit\u00e9 de compos\u00e9s ph\u00e9noliques et les activit\u00e9s antioxydantes les plus \u00e9lev\u00e9es (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30263289\/\" target=\"_blank\" rel=\"noopener\">Du, 2016<\/a>).<\/li>\n<\/ul>\n<\/li>\n<li>Composition en brom\u00e9la\u00efne :\n<ul>\n<li>L<strong>a brom\u00e9la\u00efne, une prot\u00e9ase provenant de l\u2019ananas, r\u00e9duirait la thrombogen\u00e8se<\/strong>, et pr\u00e9senterait des\u00a0<strong>effets antihypertenseurs et antimicrobiens<\/strong>.
