Il est pr\u00e9sent sur les cinq continents (Bailey, 1975), mais est surtout cultiv\u00e9 dans la r\u00e9gion m\u00e9diterran\u00e9enne (<a href=\"http:\/\/www.fao.org\/faostat\/en\/#data\/QC\" target=\"_blank\" rel=\"noopener\">FAO, 2017<\/a>).<\/li>\n<li style=\"text-align: left;\">L\u2019abricotier se d\u00e9veloppe id\u00e9alement dans des climats arides \u00e0 temp\u00e9r\u00e9s (Bailey, 1975).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>Lorsqu\u2019il atteint son degr\u00e9 optimal de maturit\u00e9, l\u2019abricot se pr\u00e9sente comme un fruit d\u2019une belle <strong>couleur orang\u00e9e<\/strong>. Sa chair est pulpeuse, sucr\u00e9e et juteuse (<a href=\"https:\/\/www.lesfruitsetlegumesfrais.com\/fruits-legumes\/fruits-a-noyaux\/abricot\/carte-identite\" target=\"_blank\" rel=\"noopener\">Les fruits et l\u00e9gumes frais<\/a>).<\/li>\n<li>Il est <a href=\"https:\/\/aprifel-pp.mentalworks.biz\/fr\/article-dossier\/vitamines\/\"><strong>riche en \u03b2-carot\u00e8ne<\/strong><\/a>, un pigment de la famille des carot\u00e9no\u00efdes responsable de sa couleur orang\u00e9e (<a href=\"https:\/\/www.elsevier.com\/books\/nutritional-composition-of-fruit-cultivars\/simmonds\/978-0-12-408117-8\" target=\"_blank\" rel=\"noopener\">Simmonds, 2016<\/a>).<\/li>\n<li>Il existe des cultivars d\u2019abricots \u00e0 peau rougissante. Ce rougissement serait d\u00fb \u00e0 une accumulation \u00e9lev\u00e9e de trois anthocyanes dans la peau pendant la maturation des fruits : le cyanidine-3-O-glucoside, le cyanidine-3-O-rutinoside et le peonidine-3-O-rutinoside (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31262258\/\" target=\"_blank\" rel=\"noopener\">Xi, 2019<\/a>).<\/li>\n<li><strong>Le saccharose et le glucose <\/strong>conf\u00e8rent \u00e0 l\u2019abricot son <strong>go\u00fbt sucr\u00e9<\/strong>. Sa concentration en sucres augmenterait rapidement lors de son d\u00e9veloppement, avec une pr\u00e9dominance en glucose qui \u00e9voluerait vers une pr\u00e9dominance en saccharose lors de la maturation (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27347931\/\" target=\"_blank\" rel=\"noopener\">Xi, 2016<\/a>).<\/li>\n<li><strong>La l\u00e9g\u00e8re acidit\u00e9 <\/strong>de l\u2019abricot lui provient de l\u2019<strong>acide malique<\/strong>, un acide organique (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0304423817304259\" target=\"_blank\" rel=\"noopener\">Fan, 2017<\/a>).<\/li>\n<li>Dix-huit compos\u00e9s aromatiques ont \u00e9t\u00e9 identifi\u00e9s dans la fraction volatile du fruit, dont les terp\u00e8nes et les ald\u00e9hydes, qui diminueraient significativement lors du d\u00e9veloppement, mais \u00e9galement les apocarot\u00e9no\u00efdes et les lactones qui, eux, augmenteraient significativement pendant la maturation (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27347931\/\" target=\"_blank\" rel=\"noopener\">Xi, 2016<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACT\u00c9RISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul style=\"text-align: justify;\">\n<li style=\"text-align: left;\">Les acides organiques naturels, et essentiellement l\u2019acide malique et l\u2019acide citrique, sont pr\u00e9sents en quantit\u00e9 int\u00e9ressante dans l\u2019abricot (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17373818\/\" target=\"_blank\" rel=\"noopener\">Aubert, 2007<\/a> ; <a href=\"https:\/\/www.researchgate.net\/publication\/51091599_FT-NIR_Spectroscopy_for_the_Quality_Characterization_of_Apricots_Prunus_Armeniaca_L\" target=\"_blank\" rel=\"noopener\">Berardinelli, 2010<\/a>).<\/li>\n<li style=\"text-align: left;\">L\u2019abricot contient une quantit\u00e9 int\u00e9ressante de <a href=\"https:\/\/aprifel-pp.mentalworks.biz\/fr\/article-dossier\/les-antioxydants-dans-lorigine-alimentaire\/\"><strong>polyph\u00e9nols<\/strong><\/a>, en particulier les flavanols, les flavonols (des flavono\u00efdes) et les acides hydroxycinnamiques (des acides ph\u00e9noliques).
