Il est particuli\u00e8rement pr\u00e9sent en <strong>Inde<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24605318\/\" target=\"_blank\" rel=\"noopener\">Tomer, 2010<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACTERISTIQUES PHYSIQUES ET ORGANOLEPTIQUES<\/h3>\n<ul style=\"text-align: left;\">\n<li>Le citron est de forme <strong>oblongue ou ovo\u00efde<\/strong>,<strong> jaune vif<\/strong> avec une \u00e9corce \u00e9paisse (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24605318\/\" target=\"_blank\" rel=\"noopener\">Tomer, 2010<\/a>).<\/li>\n<li>Sa chair est <strong>acide<\/strong> et de couleur jaune p\u00e2le (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24605318\/\" target=\"_blank\" rel=\"noopener\">Tomer, 2010<\/a>).<\/li>\n<li>Dans les agrumes, les<strong> carot\u00e9no\u00efdes<\/strong> sont les pigments responsables de la <strong>coloration externe et interne<\/strong> du fruit. La composition et la concentration en carot\u00e9no\u00efdes sont influenc\u00e9es par les conditions de culture, les origines g\u00e9ographiques et la maturit\u00e9 du fruit.<\/li>\n<li>Le citron contient principalement de la <strong>\u03b2-cryptoxanthine<\/strong> (de la famille des carot\u00e9no\u00efdes) et de la <strong>chlorophylle<\/strong> responsables respectivement de la <strong>couleur jaune et verte<\/strong> du citron (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21994171\/\">Zhang, 2012<\/a> ; <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S030442381830582X\" target=\"_blank\" rel=\"noopener\">Conesa, 2019<\/a>).<\/li>\n<li>Tout au long de la <strong>maturation<\/strong> du fruit, une <strong>d\u00e9gradation des chlorophylles<\/strong> a \u00e9t\u00e9 observ\u00e9e, ainsi qu&rsquo;une <strong>augmentation de la \u03b2-cryptoxanthine<\/strong> (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S030442381830582X\" target=\"_blank\" rel=\"noopener\">Conesa, 2019<\/a>).<\/li>\n<li>Le<strong> go\u00fbt acide<\/strong> est d\u00fb \u00e0 la pr\u00e9sence d\u2019<strong>acide citrique<\/strong> (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24605318\/\" target=\"_blank\" rel=\"noopener\">Tomer, 2010<\/a>). En effet, le citron a une <strong>forte concentration en acides organiques<\/strong> (6,01 g pour 100 g) (<a href=\"https:\/\/ciqual.anses.fr\/\" target=\"_blank\" rel=\"noopener\">Table Ciqual, 2020<\/a>), dont 5,90 g d\u2019acide citrique.<\/li>\n<li>Les <strong>compos\u00e9s volatils<\/strong> majoritairement pr\u00e9sents dans le jus sont principalement des monoterp\u00e8nes, monoterp\u00e9no\u00efdes et esters. Des sesquiterp\u00e8nes ont \u00e9t\u00e9 identifi\u00e9s dans la pelure (<a href=\"https:\/\/www.hindawi.com\/journals\/jfq\/2018\/3475461\/\" target=\"_blank\" rel=\"noopener\">Cano-Lamadrid, 2018<\/a>). L\u2019\u03b1-pin\u00e8ne, le \u03b2-pin\u00e8ne, le linalool et le limon\u00e8ne sont des terp\u00e8nes caract\u00e9ristiques du zeste de citron (<a href=\"https:\/\/www.tandfonline.com\/doi\/abs\/10.1080\/10412905.2018.1435427\" target=\"_blank\" rel=\"noopener\">Guadayol, 2018<\/a>).<\/li>\n<\/ul>\n<h3 style=\"text-align: left;\">CARACTERISTIQUES DE COMPOSITION (hors macronutriments, vitamines et min\u00e9raux)<\/h3>\n<ul>\n<li style=\"text-align: left;\">Une \u00e9tude, men\u00e9e sur 2 cultivars du citron : Fino-49-5 et Fino-95, a mis en \u00e9vidence que les <strong>conditions m\u00e9t\u00e9orologiques<\/strong> avaient plus d\u2019influence sur la <strong>concentration en vitamine C et en flavono\u00efdes<\/strong> du fruit que le cultivar lui-m\u00eame (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/18254590\/\" target=\"_blank\" rel=\"noopener\">Gonzales-Molina, 2008<\/a>).<\/li>\n<li style=\"text-align: left;\">Le degr\u00e9 de maturit\u00e9 du fruit a une influence sur la teneur en compos\u00e9s ph\u00e9noliques (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0304423818305880\" target=\"_blank\" rel=\"noopener\">Dong, 2019<\/a>).<\/li>\n<li style=\"text-align: left;\">Les b\u00e9n\u00e9fices sur la sant\u00e9 du <em>C. limon<\/em>, r\u00e9cemment d\u00e9montr\u00e9es scientifiquement, comprennent les <strong>activit\u00e9s anti-inflammatoires, antimicrobiennes, anticanc\u00e9reuses et antiparasitaires<\/strong>. Ces effets seraient associ\u00e9s \u00e0 la teneur \u00e9lev\u00e9e en compos\u00e9s ph\u00e9noliques, principalement en flavono\u00efdes et en acides ph\u00e9noliques (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31963590\/\" target=\"_blank\" rel=\"noopener\">Klimek-Szczykutowic, 2020<\/a>).<\/li>\n<li style=\"text-align: left;\">L&rsquo;acide p-coumarique, l&rsquo;acide f\u00e9rulique, l&rsquo;\u00e9riocitrine et l&rsquo;hesp\u00e9ridine seraient les compos\u00e9s ph\u00e9noliques pr\u00e9dominants dans les fruits du <em>Citrus limon L.
