Ces dommages musculaires peuvent temporairement occasionner des courbatures (jusqu\u2019\u00e0 48 h) qui bien que sans gravit\u00e9, peuvent limiter la performance et l\u2019efficacit\u00e9 de l\u2019entrainement. Dans un article r\u00e9cent, Kimble et al. ont examin\u00e9 les donn\u00e9es relatives aux effets sur la r\u00e9cup\u00e9ration musculaire des anthocyanes \u2013 des polyph\u00e9nols responsables de la couleur rouge \u00e0 violette de certains fruits et l\u00e9gumes. D\u2019apr\u00e8s ce travail, les anthocyanes ont des b\u00e9n\u00e9fices aux plans biochimiques, fonctionnels et sur la perception de la douleur. Ainsi, recommander la consommation de fruits et l\u00e9gumes riches en anthocyanes permettrait d\u2019acc\u00e9l\u00e9rer la r\u00e9cup\u00e9ration musculaire.<\/strong><\/p>\n<p>Chez le sportif entrain\u00e9 ou occasionnel, des dommages musculaires peuvent survenir suite \u00e0 une pratique sportive plus longue ou plus intense qu\u2019\u00e0 l\u2019accoutum\u00e9e que ce soit sur le plan cardiorespiratoire, ou sur celui des forces produites. Regroup\u00e9s sous le terme \u00ab courbatures \u00bb, ces dommages englobent \u00e0 la fois <strong>une perception de douleurs, une diminution de la mobilit\u00e9 articulaire et de la capacit\u00e9 du muscle \u00e0 se contracter efficacement.<\/strong><\/p>\n<p>Au plan physiologique, <strong>ces dommages sont li\u00e9s \u00e0 une perte d\u2019int\u00e9grit\u00e9 des membranes cellulaires<\/strong> qui conduit<strong> au passage des prot\u00e9ines intra-cellulaires dans la circulation, <\/strong>et une<strong> alt\u00e9ration de la structure des cellules musculaires<\/strong> limitant leur capacit\u00e9 \u00e0 se contracter efficacement. Deux m\u00e9canismes sont \u00e0 l\u2019origine de ces courbatures. Elles sont, d\u2019une part, la <strong>cons\u00e9quence directe d\u2019un stress m\u00e9canique <\/strong>sur le muscle<strong>. <\/strong>D\u2019autre part, elles r\u00e9sultent de l\u2019<strong>augmentation du stress oxydant<\/strong> lors de l\u2019effort, puis de l\u2019<strong>inflammation<\/strong> \u00e0 son issue (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/7481277\/\" target=\"_blank\" rel=\"noopener\">MacIntyre, 1995<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/8665277\/\" target=\"_blank\" rel=\"noopener\">Pyne, 1994<\/a>).<\/p>\n<p>Bien que sans gravit\u00e9 en termes de sant\u00e9 et consid\u00e9r\u00e9es comme une \u00e9tape normale d\u2019adaptation musculaire \u00e0 l\u2019effort, <strong>ces manifestations peuvent compromettre la performance et la qualit\u00e9 de l\u2019entrainement chez les sportifs r\u00e9guliers et d\u00e9courager les pratiquant occasionnels.<\/strong><\/p>\n<h2>Les anthocyanes am\u00e9liorent la r\u00e9cup\u00e9ration musculaire sur les plans biochimiques, fonctionnels et perceptuels<\/h2>\n<p>Ainsi, depuis 1999, <strong>divers travaux de recherche ont cherch\u00e9 \u00e0 d\u00e9terminer si les polyph\u00e9nols, en particulier les anthocyanes, sont susceptibles d\u2019avoir des effets anti-oxydants et anti-inflammatoires<\/strong>, permettant de limiter les dommages musculaires et d\u2019am\u00e9liorer la r\u00e9cup\u00e9ration (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/31228241\/\" target=\"_blank\" rel=\"noopener\">Bloedon, 2019<\/a> ; <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/22564864\/\" target=\"_blank\" rel=\"noopener\">McLeay, 2012<\/a>).<br \/>\nUne r\u00e9cente revue de la litt\u00e9rature et m\u00e9ta-analyse (<a href=\"https:\/\/www.tandfonline.com\/doi\/full\/10.1080\/10408398.2021.1963208\" target=\"_blank\" rel=\"noopener\">Kimble, 2021<\/a>) a examin\u00e9 l\u2019ensemble des donn\u00e9es disponibles et conclue que :<\/p>\n<ul>\n<li>\u00a0Au niveau biochimique <strong>: la consommation d\u2019anthocyanes diminue<\/strong> de fa\u00e7on significative les <strong>marqueurs de dommages musculaires<\/strong> (cr\u00e9atine kinase), les marqueurs <strong>d\u2019inflammation<\/strong> (Prot\u00e9ine C-r\u00e9active). Au contraire, la <strong>capacit\u00e9 antioxydante totale est significativement augment\u00e9e<\/strong> imm\u00e9diatement apr\u00e8s l\u2019exercice.<\/li>\n<li>\u00a0Au plan fonctionnel, la <strong>consommation d\u2019aliments riches en anthocyanes<\/strong> se traduit par une <strong>moindre perte de force musculaire apr\u00e8s l\u2019effort<\/strong>. Qui plus est, cet effet observ\u00e9 <strong>d\u00e8s la fin de l\u2019effort<\/strong>, persiste au moins jusqu\u2019\u00e0 <strong>48 heures.<\/strong><\/li>\n<li>Sur le plan perceptuel, les <strong>douleurs musculaires<\/strong> li\u00e9es aux courbatures sont <strong>significativement r\u00e9duites 24 h apr\u00e8s l\u2019effort.<\/strong><\/li>\n<\/ul>\n<p>Selon les auteurs, ces effets seraient li\u00e9s au fait que l\u2019<strong>action des anthocyanes passe par des voies de signalisation multiples<\/strong>. Les anthocyanes auraient par exemple des effets <strong>anti-inflammatoires<\/strong> en<strong> inhiban<\/strong>t des enzymes telles que la cyclo-oxygenase, responsable de la <strong>production des prostaglandines<\/strong>. Les anthocyanes auraient \u00e9galement des <strong>effets anti-oxydant limitant les dommages<\/strong> occasionn\u00e9s <strong>aux membranes des cellules musculaires<\/strong>. Par ces biais, les anthocyanes permettraient ainsi des limiter les atteintes \u00e0 l\u2019int\u00e9grit\u00e9 du muscle et de pr\u00e9server sa fonction.<\/p>\n<h2>Consommer des fruits et l\u00e9gumes riches en anthocyanes pour acc\u00e9l\u00e9rer la r\u00e9cup\u00e9ration musculaire<\/h2>\n<p>Les auteurs pointent cependant des <strong>limites aux connaissances actuelles<\/strong> sur les anthocyanes. D\u2019une part, la <strong>majorit\u00e9 des \u00e9tudes r\u00e9alis\u00e9es portent sur la consommation de produits transform\u00e9s<\/strong> : jus, poudres ou concentr\u00e9s. Ainsi, d\u2019une \u00e9tude \u00e0 l\u2019autre, les apports en anthocyanes peuvent \u00eatre tr\u00e8s variables, sans qu\u2019il soit pour autant possible de conclure sur la relation entre dose d\u2019anthocyanes et importance des effets observ\u00e9s.
