Elles fournissent des <strong>messages fond\u00e9s sur des donn\u00e9es scientifiques<\/strong> visant \u00e0 promouvoir un r\u00e9gime alimentaire apportant les nutriments n\u00e9cessaires pour favoriser la sant\u00e9 et pr\u00e9venir les maladies chroniques (<\/em><a href=\"https:\/\/www.fao.org\/nutrition\/education\/food-dietary-guidelines\/home\/fr\/\"><em><span class='tooltipsall tooltip_post_id_79592 classtoolTips79592'>FAO<\/span>, 2018<\/em><\/a><em>). Des changements nutritionnels ont \u00e9t\u00e9 observ\u00e9s r\u00e9cemment \u00e0 l&rsquo;\u00e9chelle mondiale, les populations en voie d&rsquo;urbanisation \u00a0adoptant \u00a0des r\u00e9gimes alimentaires plus riches en produits d\u2019origine animale et plus pauvres en l\u00e9gumineuses, c\u00e9r\u00e9ales et l\u00e9gumes. <\/em>Cette \u00e9volution repr\u00e9sente une<em> double <strong>menace \u00e0 la fois pour la sant\u00e9 et pour l&rsquo;environnement <\/strong>(<\/em><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/25383533\/\"><em>Tilman, 2014<\/em><\/a> <em>; <\/em><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30700377\/\"><em>Swinburn, 2019<\/em><\/a><em>) d\u2019o\u00f9 la n\u00e9cessit\u00e9 d\u2019une <strong>\u00e9volution vers des r\u00e9gimes alimentaires sains et durables<\/strong>. Bien que de nombreux pays aient d\u00e9j\u00e0 \u00e9labor\u00e9 des recommandations alimentaires pour promouvoir un r\u00e9gime culturellement pertinent et nutritif \u00a0des travaux suppl\u00e9mentaires sont n\u00e9cessaires pour int\u00e9grer la durabilit\u00e9 environnementale comme les impacts alimentaires sur les \u00e9missions de gaz \u00e0 effet de serre (GES) (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30635107\/\">Rose, 2019<\/a><\/em>). <em>Des \u00e9tudes sugg\u00e8rent que l\u2019empreinte carbone li\u00e9e aux recommandations nutritionnelles varie selon les pays, celle des recommandations am\u00e9ricaines \u00e9tant plus \u00e9lev\u00e9e que celle des autres pays (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32669369\/\">Springmann, 2020<\/a>). Malheureusement, ces \u00e9tudes ne permettent pas de savoir si \u00a0cette diff\u00e9rence d&#8217;empreinte est due \u00a0aux recommandations elles-m\u00eames ou aux habitudes alimentaires des pays.\u00a0 <\/em><\/p>\n<p>Cette \u00e9tude vise donc \u00e0 \u00a0combler cette lacune en mod\u00e9lisant l&#8217;empreinte carbone des recommandations alimentaires de sept pays (voir ci-dessous l&rsquo;encadr\u00e9 \u00ab\u00a0M\u00e9thodologie\u00a0\u00bb).<\/p>\n<h2>Les apports quotidiens recommand\u00e9s pour les groupes d&rsquo;aliments varient consid\u00e9rablement<\/h2>\n<p>Les <strong>recommandations<\/strong> ont \u00e9t\u00e9 class\u00e9es en<strong> six grands groupes d&rsquo;aliments<\/strong> : aliments riches en prot\u00e9ines, produits laitiers, c\u00e9r\u00e9ales, fruits, l\u00e9gumes et huiles\/mati\u00e8re grasse. La <strong>quantit\u00e9 quotidienne recommand\u00e9e et la composition<\/strong> de chaque groupe <strong>varient consid\u00e9rablement d&rsquo;un pays \u00e0 l&rsquo;autre<\/strong> (tableau 1). Par exemple, la quantit\u00e9 recommand\u00e9e pour les produits laitiers est la plus \u00e9lev\u00e9e aux \u00c9tats-Unis : plus de trois fois celle du r\u00e9gime de r\u00e9f\u00e9rence EAT-Lancet, recommandation internationale qui int\u00e8gre des objectifs nutritionnels, de sant\u00e9 et de durabilit\u00e9 environnementale (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30660336\/\">Willett, 2019<\/a>).<\/p>\n<p>Tableau 1 : Quantit\u00e9s quotidiennes recommand\u00e9es pour chaque groupe d&rsquo;aliments par pays (pour un r\u00e9gime de 2000 kcal).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-78653 size-full\" src=\"https:\/\/aprifel-pp.mentalworks.biz\/wp-content\/uploads\/2021\/11\/EQN-Nov_Art-1_tableau-1.png\" alt=\"\" width=\"907\" height=\"301\" \/><\/p>\n<h2>\u00c9missions de gaz \u00e0 effet de serre associ\u00e9es aux recommandations<\/h2>\n<p>Les <strong>quantit\u00e9s quotidiennes recommand\u00e9es<\/strong> pour chaque groupe \u00a0influencent les <strong>\u00e9missions de GES du r\u00e9gime alimentaire<\/strong> conseill\u00e9 dans un pays. Cela concerne particuli\u00e8rement les <strong>aliments riches en prot\u00e9ines<\/strong> et les <strong>produits laitiers<\/strong>, les <strong>produits d&rsquo;origine animale<\/strong> ayant une <strong>empreinte carbone plus importante<\/strong> que ceux d&rsquo;origine v\u00e9g\u00e9tale.<\/p>\n<p>Dans l&rsquo;ensemble, les <strong>recommandations indiennes<\/strong> pr\u00e9sentent les <strong>\u00e9missions de GES les plus faibles<\/strong> (0,74 kg \u00e9q. CO<sub>2<\/sub>\/jour), principalement parce que leurs pr\u00e9conisations en mati\u00e8re de prot\u00e9ines ne comprennent que des <strong>prot\u00e9ines v\u00e9g\u00e9tales<\/strong>, alors que les autres pays incluent un m\u00e9lange de prot\u00e9ines animales et v\u00e9g\u00e9tales. Les <strong>\u00c9tats-Unis sont le pays dont les \u00e9missions totales de GES<\/strong> attribu\u00e9es au r\u00e9gime alimentaire recommand\u00e9 au niveau national sont <strong>les plus \u00e9lev\u00e9es<\/strong> (3,83 kg \u00e9q. CO<sub>2<\/sub>\/jour), soit 4,5 fois plus que celles du r\u00e9gime indien. Par ailleurs, le r\u00e9gime EAT-Lancet recommande une plus grande quantit\u00e9 d&rsquo;aliments riches en prot\u00e9ines que celui des \u00c9tats-Unis avec plus de la moiti\u00e9 d&rsquo;origine v\u00e9g\u00e9tale, d&rsquo;o\u00f9 le plus faible taux de GES \u00a0de ces aliments par rapport aux \u00c9tats-Unis (environ moiti\u00e9 moins) (figure 1).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-78651 \" src=\"https:\/\/aprifel-pp.mentalworks.biz\/wp-content\/uploads\/2021\/11\/EQN-NOV_Art-1_Figure.png\" alt=\"\" width=\"1038\" height=\"803\" \/><\/p>\n<p>Figure 1: \u00c9missions de GES (kg \u00e9q. CO2) des recommandations quotidiennes relatives aux groupes d&rsquo;aliments pour un r\u00e9gime \u00e0 2000 kcal, par pays.\u00a0 (*Les fruits et l\u00e9gumes forment un seul groupe en Uruguay, les GES des fruits correspondent donc aux \u00e9missions combin\u00e9es du groupe).<\/p>\n<p>Apr\u00e8s avoir <strong>contr\u00f4l\u00e9 les mod\u00e8les de consommation<\/strong> au niveau national en appliquant le mod\u00e8le de consommation am\u00e9ricain \u00e0 tous les pays, les empreintes carbone des <strong>recommandations am\u00e9ricaines restent toujours les plus \u00e9lev\u00e9es<\/strong> : soit 19% et 47% de plus respectivement par rapport \u00e0 celle des Pays-Bas et de l&rsquo;Allemagne.<\/p>\n<div class=\"block-bordered-full border-primary\">\n<h2><span style=\"color: #ffffff;\">Messages cl\u00e9s :<\/span><strong><br \/>\n<\/strong><\/h2>\n<ul>\n<li>Les <strong>recommandations<\/strong> nutritionnelles et leurs <strong>empreintes carbone<\/strong> associ\u00e9es <strong>varient selon les pays<\/strong>.<\/li>\n<li>Les recommandations de l\u2019<strong>Inde<\/strong> et des <strong>\u00c9tats-Unis<\/strong> sont <strong>respectivement<\/strong> associ\u00e9es aux \u00e9missions de GES les <strong>plus faibles et les plus \u00e9lev\u00e9es<\/strong> de l\u2019\u00e9tude.<\/li>\n<li>Les niveaux des \u00e9missions de GES sont principalement li\u00e9s aux quantit\u00e9s recommand\u00e9es de produits laitiers et d&rsquo;aliments riches en prot\u00e9ines.<\/li>\n<li>Les \u00e9missions de GES attribu\u00e9es aux recommandations d&rsquo;aliments riches en prot\u00e9ines varient de 0,03 kg \u00e9q. CO<sub>2<\/sub>\/j en Inde \u00e0 1,84 kg \u00e9q. CO<sub>2<\/sub>\/j aux \u00c9tats-Unis, pour des quantit\u00e9s recommand\u00e9es de 75 g\/j et 156 g\/j, respectivement.<\/li>\n<li>Apr\u00e8s avoir recalcul\u00e9 l\u2019empreinte carbone en appliquant le mod\u00e8le de consommation am\u00e9ricain \u00e0 tous les pays, il apparait que les recommandations am\u00e9ricaines affichent toujours le taux le plus \u00e9lev\u00e9.<\/li>\n<\/ul>\n<\/div>\n<div class=\"block-bordered border-primary\">\n<h2>M\u00e9thodologie :<\/h2>\n<ul>\n<li>Un \u00e9chantillonnage a \u00e9t\u00e9 utilis\u00e9 pour inclure les recommandations nutritionnelles provenant de sources nationales :\n<ul>\n<li>les \u00c9tats-Unis ;<\/li>\n<li>deux pays europ\u00e9ens (Allemagne et Pays-Bas) o\u00f9 des \u00e9tudes ant\u00e9rieures ont montr\u00e9 qu&rsquo;une modification du r\u00e9gime alimentaire en vue de tenir compte de leurs recommandations permettrait de r\u00e9duire les \u00e9missions de GES ;<\/li>\n<li>l&rsquo;Inde, pour obtenir un \u00e9cart maximal en termes d\u2019\u00e9missions de GES ;<\/li>\n<li>Oman, la Tha\u00eflande et l&rsquo;Uruguay pour une repr\u00e9sentation g\u00e9ographique diversifi\u00e9e.<\/li>\n<\/ul>\n<\/li>\n<li>Les recommandations ont \u00e9t\u00e9 class\u00e9es en six grands groupes d&rsquo;aliments : aliments riches en prot\u00e9ines, produits laitiers, c\u00e9r\u00e9ales, fruits, l\u00e9gumes et huiles\/mati\u00e8re grasse, l&rsquo;\u00e9chelle de r\u00e9f\u00e9rence \u00e9tant un r\u00e9gime de 2\u00a0000 kcal.<\/li>\n<li>Des donn\u00e9es sur l&rsquo;approvisionnement alimentaire de chaque pays (<em>bilans des disponibilit\u00e9s alimentaires &#8211; <span class='tooltipsall tooltip_post_id_79592 classtoolTips79592'>FAO<\/span><\/em>) ont \u00e9t\u00e9 utilis\u00e9s pour d\u00e9terminer les quantit\u00e9s sp\u00e9cifiques d&rsquo;aliments individuels au sein de ces groupes.<\/li>\n<li>Les donn\u00e9es relatives aux \u00e9missions de GES pour la production de diff\u00e9rents aliments proviennent de la base de donn\u00e9es <em>dataFIELD<\/em> (<em>database of Food Impacts on the Environment for Linking to Diets<\/em>), qui repose sur un examen exhaustif de la litt\u00e9rature sur l&rsquo;analyse du cycle de vie (<a href=\"https:\/\/iopscience.iop.org\/article\/10.1088\/1748-9326\/aab0ac\">Heller, 2018<\/a> ; <a href=\"https:\/\/academic.oup.com\/ajcn\/article\/109\/3\/526\/5303906\">Rose, 2019b<\/a>).<\/li>\n<\/ul>\n<\/div>\n<p>&nbsp;<\/p>\n","protected":false},"template":"","class_list":["post-78626","article_revue","type-article_revue","status-publish","hentry"],"acf":{"references":"<ul>\n<li>Organisation des Nations unies pour l\u2019alimentation et l\u2019agriculture (2018) Recommandation alimentaires. <a href=\"http:\/\/www.fao.org\/nutrition\/education\/food-dietary-guidelines\/home\/fr\/\">http:\/\/www.fao.org\/nutrition\/education\/food-dietary-guidelines\/home\/fr\/<\/a>.<\/li>\n<li>Tilman D, Clark M.
