Les \u00e9tudes ont \u00e9galement montr\u00e9 que ces compos\u00e9s inhibent la bio activation des pro carcinog\u00e8nes, tout en augmentant l\u2019excr\u00e9tion des carcinog\u00e8nes avant qu\u2019ils n\u2019endommagent l\u2019ADN, pouvant ainsi prot\u00e9ger contre les cancers <sup>3,4<\/sup>. En plus des isothiocyanates, les crucif\u00e8res contiennent plusieurs micronutriments (acide folique, vitamine C, tocoph\u00e9rols et carot\u00e9no\u00efdes) associ\u00e9s \u00e0 une baisse du risque de mortalit\u00e9 <sup>5<\/sup>.<\/p>\n<h2>Une vaste \u00e9tude aupr\u00e8s de 88 184 Japonais de 45 \u00e0 74 ans<\/h2>\n<p>Cette \u00e9tude est la premi\u00e8re \u00e0 examiner le lien entre la consommation de crucif\u00e8res et la mortalit\u00e9, toutes causes confondues, ainsi que les cinq<br \/>\npremi\u00e8res causes de mortalit\u00e9 (cancer, cardiopathies, maladies c\u00e9r\u00e9bro vasculaires, maladies respiratoires et blessures).<\/p>\n<p>Un questionnaire de fr\u00e9quence de consommation alimentaire a \u00e9t\u00e9 remis lors du suivi \u00e0 5 ans, afin de conna\u00eetre les habitudes de consommation de 138 aliments, dont 11 crucif\u00e8res (chou, radis blanc, komatsuna (ou moutarde \u00e9pinard), brocoli, chou chinois, chou de Chine, moutarde brune et blette) et 3 crucif\u00e8res marin\u00e9s (radis blanc, colza et moutarde brune, chou chinois). Pour la mortalit\u00e9 toutes causes confondues et la mortalit\u00e9 par cause, les hazard ratio (HR) ont \u00e9t\u00e9 estim\u00e9s selon le quintile (Q) de consommation de crucif\u00e8res, Q1 correspondant \u00e0 la consommation la moins \u00e9lev\u00e9e et Q5 \u00e0 la plus \u00e9lev\u00e9e.<\/p>\n<p>Profil des consommateurs de crucif\u00e8res<\/p>\n<p>Comparativement \u00e0 ceux qui consommaient le moins de crucif\u00e8res (Q1),<br \/>\nles sujets qui en consommaient le plus \u00e9taient :<\/p>\n<ul>\n<li><strong>significativement plus \u00e2g\u00e9s<\/strong> (Q5 : 58,4 ans \/ Q1 : 54,7 ans chez les hommes, et Q5 : 58,1 ans \/ Q1 : 55,6 ans chez les femmes)<\/li>\n<li><strong>moins susceptibles de fumer<\/strong> (Q5 : 43 % \/ Q1 : 51,8 % chez les hommes, et Q5 : 4,5 % \/Q1 : 7,8 % chez les femmes)<\/li>\n<li><strong>davantage susceptibles de manger plus de fruits<\/strong> (Q5 : 222 g\/jour \/ Q1 : 120 g\/jour chez les hommes, et Q5 : 279 g\/jour \/ Q1 : 184 g\/jour chez les femmes) et d\u2019autres l\u00e9gumes (Q5 : 180 g\/jour \/ Q1 : 67 g\/jour chez les hommes, et Q5 : 196 g\/jour \/ Q1 : 88 g\/jour chez les femmes).<\/li>\n<\/ul>\n<h2>Un risque de mortalit\u00e9 toutes causes confondues significativement inf\u00e9rieur<\/h2>\n<p>Comparativement aux sujets du quintile Q1, ceux qui consommaient plus de crucif\u00e8res pr\u00e9sentaient un risque de mortalit\u00e9 toutes causes confondues significativement inf\u00e9rieur (HR = 0,86 chez les hommes et 0,89 chez les femmes), m\u00eame lorsqu\u2019ils fumaient.<\/p>\n<p>Chez les hommes, cette baisse \u00e9tait principalement observ\u00e9e sur la mortalit\u00e9 due aux cancers (Figure 1). Le lien observ\u00e9 chez les fumeurs pourrait s\u2019expliquer par une moindre bio activation des pros carcinog\u00e8nes pr\u00e9sents dans la fum\u00e9e.<\/p>\n<p>Chez les femmes, la baisse de la mortalit\u00e9 concernait principalement les cardiopathies (HR = 0,73), les maladies c\u00e9r\u00e9brovasculaires (HR = 0,78) et la mortalit\u00e9 li\u00e9e aux blessures (HR = 0,60) (Figure 1).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1613\" height=\"815\" class=\"alignnone size-full wp-image-66620\" src=\"https:\/\/aprifel-pp.mentalworks.biz\/wp-content\/uploads\/2019\/06\/revue-equation-nutrition-195-figure1.jpg\" alt=\"\" \/><\/p>\n<p><strong>Ce r\u00e9sultat est peut \u00eatre li\u00e9 aux propri\u00e9t\u00e9s anti-inflammatoires des isothiocyanates pr\u00e9sents dans les crucif\u00e8res.
