On retrouve \u00e9galement de la thiamine dans les <strong>ol\u00e9agineux <\/strong>et dans <strong>certains fruits et l\u00e9gumes<\/strong> (<a href=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B1\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B1\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2021<\/a>).<\/p>\n\n\n\n<p>Chez l\u2019adulte, les <strong>fruits et l\u00e9gumes<\/strong> contribuent \u00e0 pr\u00e8s de <strong>10% <\/strong>des <strong>apports <\/strong>en <strong>vitamine B1<\/strong> (5% pour les fruits et 4,6% pour les l\u00e9gumes).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-une-deficience-associee-au-beriberi\">Une d\u00e9ficience associ\u00e9e au b\u00e9rib\u00e9ri<\/h2>\n\n\n\n<p>Une d\u00e9ficience en vitamine B1 peut conduire \u00e0 l\u2019apparition du <strong>b\u00e9rib\u00e9ri<\/strong>, une maladie qui provoque des <strong>sympt\u00f4mes neurologiques et cardiaques<\/strong> ainsi qu\u2019une <strong>perte de poids et une grande fatigue <\/strong>(<a href=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B1\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B1\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2021<\/a>).<\/p>\n\n\n\n<p>La <strong>carence <\/strong>en vitamine B1 est <strong>exceptionnelle <\/strong>dans les <strong>pays industrialis\u00e9s<\/strong>. Elle est <strong>fr\u00e9quente <\/strong>chez les <strong>personnes dont le r\u00e9gime alimentaire se compose principalement de riz blanc ou de glucides hautement transform\u00e9s<\/strong> ainsi que dans les <strong>pays o\u00f9 le taux d\u2019ins\u00e9curit\u00e9 alimentaire est \u00e9lev\u00e9<\/strong> (<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S1773035X19303284\" data-type=\"link\" data-id=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S1773035X19303284\" target=\"_blank\" rel=\"noreferrer noopener\">Ferrary, 2019<\/a>). La <strong>carence <\/strong>en vitamine B1 n\u2019est <strong>pas toujours due \u00e0 une insuffisance d\u2019apport alimentaire<\/strong>, mais peut \u00eatre <strong>associ\u00e9e <\/strong>\u00e0 la <strong>consommation d\u2019alcool<\/strong> ou \u00e0 une <strong>malabsorption intestinale<\/strong> (<a href=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B1\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B1\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2021<\/a>).<\/p>\n\n\n\n<p>La vitamine B1 pr\u00e9sente une <strong>faible toxicit\u00e9 \u00e0 forte dose <\/strong>(EFSA, 2006).
