{"id":99100,"date":"2024-09-04T09:16:10","date_gmt":"2024-09-04T07:16:10","guid":{"rendered":"https:\/\/aprifel-pp.mentalworks.biz\/?post_type=article_dossier&#038;p=99100"},"modified":"2024-10-23T10:45:52","modified_gmt":"2024-10-23T08:45:52","slug":"vitamine-b6","status":"publish","type":"article_dossier","link":"https:\/\/aprifel-pp.mentalworks.biz\/fr\/article-dossier\/vitamine-b6\/","title":{"rendered":"Vitamine B6"},"content":{"rendered":"\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"450\" src=\"https:\/\/aprifel-pp.mentalworks.biz\/wp-content\/uploads\/2024\/09\/Vitamine-B6.png\" alt=\"\" class=\"wp-image-99122\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-des-roles-multiples-pour-l-organisme\">Des r\u00f4les multiples pour l\u2019organisme<\/h2>\n\n\n\n<p>La <strong>vitamine B6<\/strong> est une <strong>vitamine hydrosoluble<\/strong> existant sous <strong>3 formes principales<\/strong>, convertibles entre elles :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>La <strong>pyridoxine<\/strong>, majoritairement retrouv\u00e9e dans les v\u00e9g\u00e9taux ;<\/li>\n\n\n\n<li>Le <strong>pyridoxal<\/strong>, pr\u00e9sent dans les aliments d\u2019origine animale<\/li>\n\n\n\n<li>La <strong>pyridoxamine<\/strong>, \u00e9galement pr\u00e9sente dans les aliments d\u2019origine animale.<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p>Les <strong>formes biologiquement actives<\/strong> sont des <strong>d\u00e9riv\u00e9s esters<\/strong> et comprennent notamment le <strong>phosphate de pyridoxal<\/strong> et le <strong>phosphate de pyridoxine<\/strong> (<a href=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2021<\/a>).<\/p>\n\n\n\n<p>La vitamine B6 intervient en tant que <strong>co-enzyme<\/strong> dans <strong>plus de 150 r\u00e9actions biochimiques<\/strong> et joue un <strong>r\u00f4le d\u00e9terminant<\/strong> dans le <strong>m\u00e9tabolisme des glucides, des lipides, des acides amin\u00e9s ainsi que la synth\u00e8se des neurotransmetteurs<\/strong> (<a href=\"https:\/\/www.mdpi.com\/2072-6643\/13\/9\/3229\" data-type=\"link\" data-id=\"https:\/\/www.mdpi.com\/2072-6643\/13\/9\/3229\" target=\"_blank\" rel=\"noreferrer noopener\">Stach, 2021<\/a>; <a href=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2021<\/a>). Les valeurs varient en fonction du <strong>sexe<\/strong>, de l\u2019<strong>\u00e2ge<\/strong> mais \u00e9galement de l\u2019<strong>activit\u00e9 physique<\/strong> et de l\u2019<strong>\u00e9tat physiologique <\/strong>(voir tableau 1 ci-dessous). La vitamine B6 est pr\u00e9sente dans les <strong>aliments d\u2019origine v\u00e9g\u00e9tale<\/strong> comme les <strong>c\u00e9r\u00e9ales<\/strong>, les <strong>fruits <\/strong>autres qu\u2019agrumes, les <strong>l\u00e9gumes <\/strong>ainsi que dans les <strong>aliments d\u2019origine animale<\/strong> comme le <strong>foie <\/strong>(porc, veau\u2026) ou encore le <strong>poisson <\/strong>(<a href=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B6\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B6\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2021<\/a>).<\/p>\n\n\n\n<p>Apr\u00e8s les viandes, le pain et les pommes de terre et autres tubercules, les <strong>fruits frais et secs ainsi que les l\u00e9gumes<\/strong> contribuent respectivement \u00e0<strong> 5.8% et 7.1%<\/strong> des <strong>apports en vitamine B6 chez les adultes<\/strong>. Chez les enfants, les fruits, les jus de fruits et de l\u00e9gumes, les pommes de terre ainsi que les c\u00e9r\u00e9ales pour petit d\u00e9jeuner et barres c\u00e9r\u00e9ali\u00e8res contribuent de mani\u00e8re \u00e9gale aux apports en vitamine B6.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"2557\" src=\"https:\/\/aprifel-pp.mentalworks.biz\/wp-content\/uploads\/2024\/09\/APRIFEL-illustration-VITAMINE-B6-4legumes.png\" alt=\"\" class=\"wp-image-99111\" style=\"width:567px;height:auto\"\/><figcaption class=\"wp-element-caption\"><em>Figure 2 : Principaux l\u00e9gumes contenant de la vitamine B6 (d&rsquo;apr\u00e8s Ciqual)<\/em><\/figcaption><\/figure><\/div>\n\n\n<div class=\"block__blockquote\">\n            <figure>\n                        <div>\n                <span>\n                    Une portion de pomelo ou de poivron rouge couvre 1\/5\u00e8me des besoins quotidiens en vitamine B6.\n                <\/span>\n            <\/div>\n            <figcaption><span><\/span><\/figcaption>\n        <\/figure>\n    <\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-des-besoins-couverts-par-une-alimentation-saine-et-variee\">Des besoins couverts par une alimentation saine et vari\u00e9e<\/h2>\n\n\n\n<p>Une <strong>alimentation vari\u00e9e et \u00e9quilibr\u00e9e<\/strong> permet de couvrir les besoins en vitamine B6.<\/p>\n\n\n\n<p>Une <strong>carence <\/strong>en vitamine B6 peut \u00eatre responsable par exemple de <strong>sympt\u00f4mes cutan\u00e9s <\/strong>tels que de l\u2019ecz\u00e9ma ou de la dermatite et des convulsions (<a href=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B6\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux#B6\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2021<\/a>). La carence en vitamine B6 est <strong>rare <\/strong>compte tenu des multiples sources alimentaires.<\/p>\n\n\n\n<p>Un <strong>exc\u00e8s <\/strong>de vitamine B6 (apports sup\u00e9rieurs \u00e0 25 mg par jour) peut entra\u00eener une <strong>neuropathie p\u00e9riph\u00e9rique<\/strong> qui est la pathologie la plus fr\u00e9quente en neurologie (<a href=\"https:\/\/efsa.onlinelibrary.wiley.com\/doi\/epdf\/10.2903\/j.efsa.2023.8006\" data-type=\"link\" data-id=\"https:\/\/efsa.onlinelibrary.wiley.com\/doi\/epdf\/10.2903\/j.efsa.2023.8006\" target=\"_blank\" rel=\"noreferrer noopener\">Efsa, 2016<\/a> ; <a href=\"https:\/\/www.has-sante.fr\/jcms\/c_596652\/fr\/prise-en-charge-diagnostique-des-neuropathies-peripheriques\" data-type=\"link\" data-id=\"https:\/\/www.has-sante.fr\/jcms\/c_596652\/fr\/prise-en-charge-diagnostique-des-neuropathies-peripheriques\" target=\"_blank\" rel=\"noreferrer noopener\">HAS, 2007<\/a>).
