Les fruits, ainsi que les l\u00e9gumes, notamment de couleur jaune \u00e0 verte sont les groupes d\u2019aliments contribuant le plus aux apports en vitamines A.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-vitamine-a-un-role-central-pour-de-nombreuses-fonctions-de-l-organisme\">Vitamine A, un r\u00f4le central pour de nombreuses fonctions de l\u2019organisme<\/h2>\n\n\n\n<p>Le terme vitamine A regroupe un <strong>ensemble des substances<\/strong> et leurs <strong>d\u00e9riv\u00e9s <\/strong>qui pr\u00e9sentent une <strong>structure chimique et des caract\u00e9ristiques biologiques similaires<\/strong> (<a href=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2012<\/a>). Parmi ces compos\u00e9s, on retrouve notamment :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le <strong>r\u00e9tinol<\/strong>, <strong>pr\u00e9curseur <\/strong>de la <strong>forme active<\/strong> de la vitamine A, il <strong>directement assimilable<\/strong> par l\u2019organisme ;<\/li>\n\n\n\n<li>Les <strong>carot\u00e9no\u00efdes <\/strong>ou provitamines A, principalement le <strong>b\u00eata-carot\u00e8ne<\/strong>, qui sont des <strong>pigments v\u00e9g\u00e9taux<\/strong> convertis en r\u00e9tinol au niveau de l\u2019intestin.<\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<p>La vitamine A joue un <strong>r\u00f4le primordial <\/strong>et <strong>reconnu <\/strong>dans le m\u00e9canisme de la <strong>vision<\/strong>, notamment dans le <strong>fonctionnement de la r\u00e9tine<\/strong>. Elle intervient \u00e9galement dans la <strong>r\u00e9gulation de l&rsquo;expression des g\u00e8nes<\/strong>, et est ainsi impliqu\u00e9e dans de <strong>nombreuses fonctions de l&rsquo;organisme<\/strong> comme le <strong>d\u00e9veloppement embryonnaire<\/strong>, la <strong>croissance cellulaire<\/strong>, le <strong>renouvellement des tissus<\/strong> ou encore le <strong>fonctionnement normal du syst\u00e8me immunitaire<\/strong> (<a href=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2019<\/a>).<\/p>\n\n\n\n<p>Les <strong>carot\u00e9no\u00efdes <\/strong>et plus particuli\u00e8rement le <strong>b\u00eata-carot\u00e8ne<\/strong> sont de <strong>puissants antioxydants <\/strong>et <strong>prot\u00e8gent <\/strong>ainsi les cellules du <strong>vieillissement pr\u00e9matur\u00e9<\/strong> (<a href=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2019<\/a>).<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"865\" height=\"864\" src=\"https:\/\/aprifel-pp.mentalworks.biz\/wp-content\/uploads\/2024\/05\/Image1.jpg\" alt=\"b\u00e9n\u00e9fices sant\u00e9 de la vitamine A fruits l\u00e9gumes - Aprifel\" class=\"wp-image-98597\" style=\"aspect-ratio:1;object-fit:cover;width:363px;height:auto\"\/><\/figure><\/div>\n\n\n<p class=\"has-text-align-center\"><em>Figure 1 : All\u00e9gations de sant\u00e9 li\u00e9es \u00e0 la vitamine A<\/em> <em>(d&rsquo;apr\u00e8s Anses, 2019)<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-vitamine-a-des-besoins-croissants-tout-au-long-de-la-vie\">Vitamine A, des besoins croissants tout au long de la vie<\/h2>\n\n\n\n<p>Dans l\u2019<strong>alimentation<\/strong>, la vitamine A est <strong>disponible <\/strong>sous forme de <strong>r\u00e9tinol <\/strong>et\/ou de <strong>provitamine A<\/strong> &#8211; comme le b\u00eata-carot\u00e8ne &#8211; que l\u2019organisme peut convertir en r\u00e9tinol. Ainsi, les r\u00e9f\u00e9rences nutritionnelles pour la vitamine A sont exprim\u00e9es en <strong>\u00e9quivalent r\u00e9tinol<\/strong> afin de <strong>tenir compte de l\u2019activit\u00e9 vitaminique li\u00e9e \u00e0 cette conversion<\/strong>. Par exemple : 1 \u03bcg de b\u00eata-carot\u00e8ne est \u00e9gal \u00e0 1\/12 \u03bcg \u00e9quivalent r\u00e9tinol.<\/p>\n\n\n\n<p>Chez l\u2019adulte, les r\u00e9f\u00e9rences nutritionnelles en vitamine A s\u2019\u00e9l\u00e8vent \u00e0 <strong>750 \u03bcg<\/strong> <strong>\u00e9quivalent r\u00e9tinol\/<\/strong>j pour les <strong>hommes <\/strong>et <strong>650 \u03bcg \u00e9quivalent r\u00e9tinol \/j<\/strong> pour les <strong>femmes <\/strong>(<a href=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/les-r%C3%A9f%C3%A9rences-nutritionnelles-en-vitamines-et-min%C3%A9raux\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2021<\/a>).<\/p>\n\n\n\n<p>Les <strong>valeurs les plus hautes<\/strong> sont observ\u00e9es pour les <strong>femmes allaitantes<\/strong> afin de compenser la perte de vitamine A par le lait maternel (voir tableau 1)<\/p>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-2 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:100%\">\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:100%\">\n<figure class=\"wp-block-table aligncenter\">\n<table class=\"has-fixed-layout\" style=\"width: 103.094%; On en trouve \u00e9galement dans le <strong>beurre<\/strong>, la <strong>cr\u00e8me fra\u00eeche<\/strong>, les <strong>fromages <\/strong>ainsi que le <strong>jaune d&rsquo;\u0153uf<\/strong>.<\/p>\n\n\n\n<p>Les<strong> provitamines A<\/strong> &#8211; b\u00eata-carot\u00e8ne principalement \u2013 sont <strong>pr\u00e9sentes <\/strong>dans les <strong>v\u00e9g\u00e9taux<\/strong>, en particulier de couleur orange \u00e0 verte (<a href=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2019<\/a>). Les <strong>l\u00e9gumes <\/strong>constituent les <strong>principaux aliments vecteurs des apports en b\u00eata-carot\u00e8ne <\/strong>: entre 42 et 48% selon l\u2019\u00e2ge. Cette situation peut aller jusqu\u2019\u00e0 la <strong>c\u00e9cit\u00e9 <\/strong>en cas de <strong>carence s\u00e9v\u00e8re<\/strong>. Bien qu\u2019elle soit <strong>rare <\/strong>dans les <strong>pays industrialis\u00e9s<\/strong>, la carence en vitamine A reste <strong>responsable <\/strong>de <strong>probl\u00e8mes de sant\u00e9 publique majeurs<\/strong> dans les <strong>pays en voie de d\u00e9veloppement<\/strong>. Chez les <strong>populations vuln\u00e9rables <\/strong>comme les enfants et les personnes \u00e2g\u00e9es, la carence en vitamine A peut-\u00eatre <strong>pr\u00e9occupante <\/strong>(<a href=\"http:\/\/www.who.int\/vmnis\/indicators\/retinol_fr.pdf\" data-type=\"link\" data-id=\"http:\/\/www.who.int\/vmnis\/indicators\/retinol_fr.pdf\" target=\"_blank\" rel=\"noreferrer noopener\"><span class='tooltipsall tooltip_post_id_79593 classtoolTips79593'>OMS<\/span>, 2011<\/a>).<\/p>\n\n\n\n<div class=\"block__blockquote\">\n            <figure>\n                        <div>\n                <span>\n                    La carence en vitamine A est la premi\u00e8re cause de c\u00e9cit\u00e9 de l\u2019enfant dans le monde.\n                <\/span>\n            <\/div>\n            <figcaption><span>(<span class='tooltipsall tooltip_post_id_79593 classtoolTips79593'>OMS<\/span>, 2011)<\/span><\/figcaption>\n        <\/figure>\n    <\/div>\n\n\n\n<p>A l\u2019inverse, l\u2019<strong>exc\u00e8s<\/strong> de vitamine A fait l\u2019objet de <strong>grande prudence<\/strong> en cas de <strong>grossesse <\/strong>ou de <strong>d\u00e9sir de grossesse<\/strong> puisqu\u2019il est <strong>associ\u00e9 <\/strong>\u00e0 des <strong>malformations cong\u00e9nitales<\/strong> (<a href=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" data-type=\"link\" data-id=\"https:\/\/www.anses.fr\/fr\/content\/vitamine-carot%C3%A9no%C3%AFdes-provitaminiques\" target=\"_blank\" rel=\"noreferrer noopener\">Anses, 2012<\/a>). Afin d\u2019\u00e9viter un exc\u00e8s d\u2019apport en vitamine A, la <strong>consommation de foie est d\u00e9conseill\u00e9 durant la grossesse <\/strong>en raison de sa <strong>forte concentration en r\u00e9tinol directement assimilable<\/strong>. En revanche, les <strong>apports de provitamines A<\/strong> issues des <strong>fruits et l\u00e9gumes<\/strong> ne pr\u00e9sentent <strong>pas de danger<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-pour-preserver-la-vitamine-a-attention-a-la-lumiere-et-a-la-chaleur\">Pour pr\u00e9server la vitamine A, attention \u00e0 la lumi\u00e8re et \u00e0 la chaleur<\/h2>\n\n\n\n<p>Sous forme de <strong>b\u00eata-carot\u00e8ne<\/strong>, la vitamine A peut <strong>perdre de son activit\u00e9 <\/strong>notamment lors du <strong>stockage <\/strong>et de la <strong>d\u00e9shydratation des aliments<\/strong>.
