Thus, it does not keep for long <\/span><a href=\"https:\/\/www.fondation-louisbonduelle.org\/legume\/radis-noir\/\"><span style=\"font-weight: 400;\">(Fondation Louis Bonduelle, 2020)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Its flesh is white and its shell is black.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">This <\/span><b>black colour <\/b><span style=\"font-weight: 400;\">is due to the <\/span><b>presence of anthocyanins, <\/b><span style=\"font-weight: 400;\">including <\/span><b>pelargonidin <\/b><span style=\"font-weight: 400;\">(acylated pelargonidin-3-sophoroside-5-glucoside) and <\/span><b>cyanidin <\/b><span style=\"font-weight: 400;\">(acylated cyaniding3-sophoroside-5-glucoside) (<\/span><a href=\"https:\/\/www.elsevier.com\/books\/handbook-on-natural-pigments-in-food-and-beverages\/carle\/978-0-08-100371-8\"><span style=\"font-weight: 400;\">Brauch, 2016<\/span><\/a><a href=\"https:\/\/www.researchgate.net\/publication\/321804285_Pigmented_radish_Raphanus_sativus_Genetic_variability_heritability_and_inter-relationships_of_total_phenolics_anthocyanins_and_antioxidant_activity\"><span style=\"font-weight: 400;\"> Singh, 2017<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The presence of <\/span><b>glucosinolates <\/b><span style=\"font-weight: 400;\">may be responsible for the <\/span><b>pungent taste <\/b><span style=\"font-weight: 400;\">of radishes. They are transformed into isothiocyanates, compounds characteristic of the pungent taste of vegetables of the Brassicaceae family (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23061907\/\"><span style=\"font-weight: 400;\">N&#8217;jai, 2012<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/28530612\/\"><span style=\"font-weight: 400;\">Lee, 2017<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32183429\/\"><span style=\"font-weight: 400;\">Ramirez, 2020<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Vegetables of the Brassicaceae family are known to be high in <\/span><b>glucosinolates<\/b><span style=\"font-weight: 400;\">. Black radish has the highest content of glucosinolates, <\/span><b>four times more than most other vegetables in the same family <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/23061907\/\"><span style=\"font-weight: 400;\">N&#8217;jai, 2012)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A total of <\/span><b>six glucosinolates <\/b><span style=\"font-weight: 400;\">were identified and quantified in black radish: glucoraphenin, which is the most abundant, glucoraphasatin, glucosisautricin, glucoputrajivin, glucosisymbrin and gluconasturtiin (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21640355\/\"><span style=\"font-weight: 400;\">Ediage, 2011<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Glucosinolates are <\/span><b>hydrolysed by the intestine <\/b><span style=\"font-weight: 400;\">into isothiocyanates, which have a <\/span><b>beneficial effect on health<\/b><span style=\"font-weight: 400;\">. Observational studies, supported by experimental cancer studies, have associated the <\/span><b>consumption of vegetables rich in glucosinolates <\/b><span style=\"font-weight: 400;\">with a <\/span><b>reduced risk of myocardial infarction and of lung, stomach, colorectal, breast, bladder and prostate cancer <\/b><span style=\"font-weight: 400;\">(<\/span><a href=\"https:\/\/www.researchgate.net\/publication\/309182068_Health_Benefits_of_Glucosinolates\"><span style=\"font-weight: 400;\">Traka, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Radish contains <\/span><b>flavonoids <\/b><span style=\"font-weight: 400;\">(flavonones, flavanols and anthocyanins) and <\/span><b>phenolic acids<\/b><span style=\"font-weight: 400;\">, giving it <\/span><b>antioxidant <\/b><span style=\"font-weight: 400;\">and <\/span><b>protective <\/b><span style=\"font-weight: 400;\">activity (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30067118\/\"><span style=\"font-weight: 400;\">Ahn, 2018<\/span><\/a><span style=\"font-weight: 400;\"> ; <\/span><a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6412475\/\"><span style=\"font-weight: 400;\">Manivannan, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\">The flavonoids, phenolic acids and glucosinolates and isothiocyanates found in radish together help <b>reduce the risk of cancer, heart disease and diabetes <\/b>(<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6412956\/\">Abellan A, 2019)<\/a>.<\/li>\n<\/ul>\n","informations":"","modes_cuisson":[{"titre_mode_cuisson":"Raw","composition_analyse_nutritionnelles":"<p><i><span style=\"font-weight: 400;\">The following values are approximate and depend on variety, season, ripeness, cultivation conditions, etc. <\/span><\/i><span style=\"font-weight: 400;\">Black radish <\/span><b>is low in energy*<\/b><span style=\"font-weight: 400;\">.
