These textural changes are due to changes in the cell walls such as increased xylan and lignin content, and altered pectin structure (<\/span><a href=\"https:\/\/pubs.acs.org\/doi\/abs\/10.1021\/acs.jafc.6b03693\"><span style=\"font-weight: 400;\">Sch\u00e4fer, 2016<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<\/ul>\n<h3><b>COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)<\/b><\/h3>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Radish <\/span><b>sprouts <\/b><span style=\"font-weight: 400;\">contain significant concentrations of <\/span><b>glucosinolates<\/b><span style=\"font-weight: 400;\">, <\/span><b>isothiocyanates <\/b><span style=\"font-weight: 400;\">and <\/span><b>phenolic compounds<\/b><span style=\"font-weight: 400;\">, as does radish root, but in higher proportions (Sharma, 2014). Among the glucosinolates present in radish, the 4 main ones are dehydroerucine (present in majority), glucoraphenin, glucobrassicin and glucoerucine (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/24176362\/\"><span style=\"font-weight: 400;\">Gao, 2014)<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Glucosinates <\/b><span style=\"font-weight: 400;\">and <\/span><b>isothiocyanates <\/b><span style=\"font-weight: 400;\">are believed to have an <\/span><b>anticarcinogenic <\/b><span style=\"font-weight: 400;\">effect (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30445746\/\"><span style=\"font-weight: 400;\">Soundararajan, 2018<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Radish contains <\/span><b>flavonoids <\/b><span style=\"font-weight: 400;\">(flavanones, flavanols, and anthocyanins) and <\/span><b>phenolic acids<\/b><span style=\"font-weight: 400;\">, giving it <\/span><b>antioxidant <\/b><span style=\"font-weight: 400;\">and <\/span><b>protective <\/b><span style=\"font-weight: 400;\">activity (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30067118\/\"><span style=\"font-weight: 400;\">Ahn, 2018<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/30067118\/\"><span style=\"font-weight: 400;\">Luo, 2018<\/span><\/a><span style=\"font-weight: 400;\">; <\/span><a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC6412475\/\"><span style=\"font-weight: 400;\">Manivannan, 2019<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The <\/span><b>polyphenols <\/b><span style=\"font-weight: 400;\">identified in radish are catechin, present mostly in its root (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21714734\/\"><span style=\"font-weight: 400;\">Beevi, 2012<\/span><\/a><span style=\"font-weight: 400;\">), (-)-epicatechin and ferulic acid (<\/span><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21548630\/\"><span style=\"font-weight: 400;\">Park, 2011<\/span><\/a><span style=\"font-weight: 400;\">).<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Sixteen anthocyanins <\/b>were also found, some of which were present in acetylated form with coumaroyl, malonoyl, feruoyl and caffeoyl fractions (<a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21548630\/\">Park, 2011<\/a>).<\/li>\n<\/ul>\n","informations":"","modes_cuisson":[{"titre_mode_cuisson":"Raw","composition_analyse_nutritionnelles":"<p><i><span style=\"font-weight: 400;\">The following values are approximate and depend on variety, season, ripeness, cultivation conditions, etc. <\/span><\/i><span style=\"font-weight: 400;\">The red radish is<\/span><b> low in energy*<\/b><span style=\"font-weight: 400;\">.
